ONE-POT PASTA WITH BROCCOLI AND LEMON
Less is more in this quick and easy weeknight dinner. It calls for just five main ingredients (penne, broccoli, garlic, lemon, and Parmesan) and requires minimal cleanup.

Steps:
- Bring a large pot of salted water to a boil. Add penne and cook 5 minutes. Add broccoli and cook until pasta is just under al dente and broccoli is crisp-tender and bright green, 3 to 4 minutes more. Drain, then add pasta and broccoli back to pot.
- Toss with garlic, oil, lemon zest and juice, and cheese. Serve, topped with more cheese.
BROCCOLI PASTA WITH PARMESAN CROUTONS
This simple pasta dish featuring crunchy croutons, broccoli, and a light garlic sauce is ready in just 30 minutes.

- Preheat oven to 400 degrees. On a rimmed baking sheet, toss together bread, 1 tablespoon oil, and Parmesan. Season with salt and pepper. Bake until golden and toasted, 8 to 10 minutes.
- Meanwhile, in a large pot of boiling salted water, cook pasta 2 minutes less than package instructions; add broccoli and cook 2 minutes. Reserve 1/2 cup pasta water, then drain.
- Add remaining 3 tablespoons oil and garlic to pot and cook until garlic is fragrant and lightly golden, 1 to 2 minutes. Add pasta mixture; toss to combine, adding enough pasta water to create a light sauce that coats pasta. To serve, sprinkle with croutons, lemon zest, and additional Parmesan if desired.

FETTUCCINE WITH BROCCOLI
Steps:
- In a saute pan, heat oil and saute garlic. Add broccoli and toss together.
- Add pasta to garlic and broccoli. Add Mornay sauce, season, to taste, and heat throughout.
- Serve immediately garnished with cheese.
- Mix dry ingredients in a mixer. Slowly add water and eggs. Mix for 10 minutes; the dough should be crumbly. Extrude pasta as desired.
- Yield: 2 pounds (approximately 10 servings)
BROCCOLI PESTO & PANCETTA PASTA

- Bring a pan of lightly salted water to the boil. Add the broccoli and boil for 5 mins. Scoop out with a slotted spoon and set aside.
- Put the pasta in the same pan and cook following pack instructions. Meanwhile, tip the broccoli into a food processor with the pine nuts, basil, garlic, parmesan and oil, and blitz until smooth. Season with black pepper and a little salt (the pancetta is very salty).
- Set a frying pan over a medium heat and cook the pancetta for 2 mins. Add the tomatoes and cook for 3 mins, or until softened. Toss the pasta with the broccoli pesto, tomatoes and pancetta, and loosen with a splash of pasta water, if needed. Spoon into bowls and serve.
