5 lemons, halved
2 teaspoons honey
1 cup fresh dill, fronds chopped, stems reserved
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pound 16/20 shrimp, peeled, tails removed and deveined
1 pound fusilli
2 cups grape tomatoes, halved
2 cups diced English cucumber

Steps:

  • In a large bowl, whisk together the juice of 3 lemons, the honey and chopped dill. Slowly whisk in the olive oil until the dressing is emulsified. Season with salt and pepper. Reserve.
  • Bring a large stockpot of water to a boil. Add the juice of the remaining 2 lemons, the dill stems and 1/2 cup salt. Add the shrimp and cook until opaque and cooked through, 3 to 4 minutes. Remove the shrimp using a slotted spoon and add to the dressing. Toss to coat.
  • Bring the poaching liquid back up to a boil. Drop the pasta and cook until al dente, 9 to 10 minutes. Drain the pasta and run it under cold water until the pasta is cooled. Remove the dill stems.
  • Add the pasta, grape tomatoes and cucumbers to the bowl with the shrimp and toss to combine. Season with salt and pepper.

  • In a large bowl, whisk the first 6 ingredients until blended. Reserve 3 tablespoons marinade for basting. Add shrimp to remaining marinade; toss to coat. Refrigerate, covered, 15 minutes., Drain shrimp, discarding any remaining marinade. Thread shrimp onto 4 or 8 metal or soaked wooden skewers. Grill, covered, over medium heat or broil 4 in. from heat 2-4 minutes on each side, basting with reserved marinade during the last minute of cooking.

2 cups lemon juice
3 tablespoons finely chopped fresh dill
2 sticks unsalted butter, slightly softened
Salt
Fresh dill
1 teaspoon grated lemon zest
1/4 cup fresh lemon juice
1/2 cup olive oil
1 tablespoon finely chopped fresh dill
2 cloves garlic, finely chopped
Salt and freshly ground black pepper
1 pound orzo pasta, cooked al dente, drained
6 ounces feta cheese, crumbled
1 large yellow pepper, finely diced
1 large red pepper, finely diced
1/2 cup kalamata olives, pitted and quartered
2 scallions, finely sliced
1 tablespoon finely chopped fresh oregano
40 jumbo shrimp, peeled and deveined
Olive oil
Salt and freshly ground pepper

Steps:

  • Place lemon juice in a small non-reactive saucepan and reduce to 3 tablespoons. Place the butter in a medium bowl, add the lemon syrup and dill, then season with salt and pepper to taste. Mix well and scrape into a ramekin. Refrigerate for 1 hour.
  • Whisk together the zest, juice, oil, dill, and garlic, then season with salt and pepper, to taste. Mix the pasta, cheese, peppers, olives, and scallions together in a bowl. Pour the vinaigrette over and mix to combine. Add the oregano and season with salt and pepper, to taste.
  • Preheat grill to high. Toss the shrimp in some olive oil and season with salt and pepper to taste. Thread 5 shrimp on a skewer, bending the shrimp so that the skewer passes through it twice. Grill, turning once for 4 to 5 minutes. Remove the shrimp from the grill to a large platter and brush generously with Lemon-Dill Butter. Garnish with fresh dill.

1 lemon, zest of, plus additional lemon wedges for serving
2/3 cup dry white wine
2 cups low sodium chicken broth

Steps:

  • Preheat oven to 450 degrees.
  • Dry shrimp with paper towels and season with salt and pepper.
  • Add 1 tablespoon olive oil to a large, ovenproof skillet over high heat. Swirl to coat. When shimmering, add shrimp in an even layer. Cook, turning once, until lightly seared, about 1 ½ minutes per side. Add additional 1 tablespoon olive oil halfway through cooking if skillet is dry. Remove shrimp to a plate. 12 oz frozen peeled and deveined medium shrimp, thawed
1 lemon
8 oz dried penne pasta or fettuccine
2 Tbsp olive oil
3 clove garlic, thinly sliced
1 Tbsp dill, dried
1/2 tsp italian seasoning, crushed
1 small bunch of fresh asparagus, cut into 2 " pieces

Steps:

  • 1. Rinse shrimp; pat dry with paper towels. Finely shred 1 tsp. peel of the lemon; set aside. Juice the lemon over a bowl; set aside the juice. Cook pasta according to package directions.
  • 2. In a 12 in. skillet heat olive oil over medium heat. Cook garlic in the hot oil for 1 min. Add shrimp and asparagus; cook for 3 to 4 min, turning frequently until shrimp are opaque and asparagus is tender. Now add your drained pasta and turn heat down to low and simmer for just a minute or two.
  • 3. Pour into a large mixing bowl and stir in your Italian seasonings, dill, lemon juice & lemon peel. Season to taste with salt & pepper.

1/4 teaspoon fresh ground pepper
16 large shrimp, peeled and deveined (about 1 lb.)
1 cup orzo pasta
2 ounces feta cheese, crumbled
3/4 cup finely diced red bell pepper
1/3 cup pitted kalamata olive, quartered
2 tablespoons thinly sliced scallions, including tender green parts
1 1/2 tablespoons finely chopped fresh oregano
4 metal skewers (or bamboo skewers soaked in water for at least 30 minutes)

Steps:

  • Make the vinaigrette: in a bowl, whisk together the lemon zest, lemon juice, olive oil, dill, garlic, salt, and pepper.
  • Place the shrimp in a medium bowl; pour ¼ cup vinaigrette over the shrimp; toss to coat well.
  • Cover with plastic wrap and refrigerate for about 30 minutes.
  • Bring a medium saucepan ¾ full of salted water to a boil; add pasta and cook until al dente; drain then place in a bowl.
  • To the orzo, add the remaining vinaigrette and the feta cheese; toss well.
  • Add the bell pepper, olives, scallions, and oregano; toss well.
  • Thread 4 shrimp onto each skewer, bending each shrimp almost in half so that the skewer passes through it twice.
  • Place the shrimp directly over high heat and grill, turning once, until just opaque inside with lightly browned edges, 4-5 minutes total.
  • Serve shrimp immediately with the pasta.

2 lbs large shrimp, unpeeled
2 quarts ice water, with
2 tablespoons kosher salt, dissolved in it
1 1/2 cups mayonnaise
1/2 cup low-fat sour cream or 1/2 cup drained nonfat yogurt (I use my Yogurt Cheese, Yogurt Cheese - 'Labanee', in Arabic for a thicker consistency)
1/3 cup fresh lemon juice
1/4 cup sugar, less to taste (start with 1-2 Tbsp, and adjust to taste)
1/2 teaspoon salt, to taste
1/2 teaspoon fresh ground black pepper, plus additional to taste
1 large red onions or 1 large other sweet onion, thinly sliced
1/3 cup chopped fresh dill, more to taste (0.1 oz)

Steps:

  • Rinse shrimp well, soak in cold salted water for 30 minutes.
  • Transfer salted water to a large saucepan, and bring to a full rolling boil over high heat.
  • Add shrimp, and cook for only 4-5 minutes, just until pink and firm.
  • Drain immediately, and cool under cold running water.
  • Peel and devein when cool enough to handle, and refrigerate until needed.
  • In a medium bowl, whisk together all remaining ingredients until well combined.
  • Taste, and adjust seasonings.
  • Stir in shrimp until well coated, and season to taste with salt and pepper.
  • Refrigerate overnight, stirring several times, and serve chilled with toothpicks.

16 slices rye or pumpernickel cocktail bread
16 butter lettuce leaves
4 teaspoons red lumpfish caviar

  • Whisk mayonnaise, 2 tablespoons finely chopped fresh dill and 2 tablespoons lemon juice in small bowl to blend. (Mayonnaise mixture can be prepared 1 day ahead. Cover and refrigerate.) 1 lb jumbo shrimp, peeled and deveined
kosher salt & freshly ground black pepper
3 tablespoons olive oil, plus more as needed and for serving
1 large fennel bulb, halved, cored, and thinly sliced
4 garlic cloves, peeled and smashed
1/2 teaspoon crushed red pepper flakes
1/2 lb orzo pasta
1 (15 ounce) can chickpeas, drained and rinsed
1 pint cherry tomatoes
1 cup pitted kalamata olive, halved
1/3 cup coarsely chopped dill, plus additional for serving
1 lemon, zest of, plus additional lemon wedges for serving
2/3 cup dry white wine
2 cups low sodium chicken broth

Steps:

  • Preheat oven to 450 degrees.
  • Dry shrimp with paper towels and season with salt and pepper.
  • Add 1 tablespoon olive oil to a large, ovenproof skillet over high heat. Swirl to coat. When shimmering, add shrimp in an even layer. Cook, turning once, until lightly seared, about 1 ½ minutes per side. Add additional 1 tablespoon olive oil halfway through cooking if skillet is dry. Remove shrimp to a plate. In a large bowl, combine the remaining minced garlic and 2 tablespoons of dill with the olive oil. Add the shrimp and lemons, season with salt and pepper and toss to coat. Thread 4 shrimp and 2 lemon wedges onto each of 12 skewers.
