Yield 6 servings (3/4 cup sauce).

Number Of Ingredients 17

3/4 cup mayonnaise
1 small garlic clove, minced
1-1/2 teaspoons lemon juice
1-1/2 teaspoons grated lemon zest
1/4 teaspoon dill weed
Pinch cayenne pepper
Dash salt
SALMON:
4 frozen salmon fillets (4 ounces each), thawed
1/2 teaspoon salt
1/4 teaspoon pepper
3 large eggs
1-1/2 cups panko bread crumbs
4 green onions, chopped
1 garlic clove, minced
1/2 teaspoon salt
2 tablespoons olive oil

Steps:

  • In a small bowl, mix the first seven ingredients. Refrigerate until serving., Preheat oven to 350°. Sprinkle salmon with salt and pepper. Bake until fish just begins to flake easily with a fork, 6-8 minutes. Cool slightly; remove skin if necessary. In a small bowl, combine eggs, bread crumbs, green onions, garlic and salt. Flake salmon; add to bread crumb mixture, mixing thoroughly. Shape into twelve 2-1/2-in. patties. Refrigerate, covered, 30 minutes., In a large skillet, heat oil over medium-high heat. Add patties in batches; cook until golden brown, 3-4 minutes on each side. Serve with dipping sauce.

1 (5 ounce) can salmon, drained and flaked
½ cup dried breadcrumbs
2 tablespoons minced onion
1 tablespoon Dijon mustard
1 egg, lightly beaten
1 teaspoon lemon juice
sea salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
¼ cup light sour cream
1 teaspoon dill weed
¼ teaspoon garlic powder
sea salt to taste

Steps:

  • Mix salmon, breadcrumbs, onion, Dijon mustard, egg, and lemon juice together in a bowl; form into 2 patties.
  • Heat olive oil in a skillet over medium-high heat. Cook patties in the hot oil until lightly browned and cooked through, 4 minutes per side; season with sea salt and black pepper.
  • Mix sour cream, dill, garlic powder, and sea salt together in a bowl; serve alongside salmon patties.

These tasty patties are as economical and easy to make as they are delicious. They're fork food hot with fresh lemon wedges to squeeze over them. They make great cold sandwiches on rolls with cocktail sauce or tartar sauce. My big family with teens gets a hot meal and a cold meal from this recipe but a smaller family can freeze them for later enjoyment. Note -- Cooking time depends on how many skillets you are using at once.

Number Of Ingredients 9

4 (14 3/4 ounce) cans salmon, drained
4 eggs
1 cup cracker crumbs or 1 cup dry breadcrumbs
1/2 cup oatmeal
2 teaspoons dill weed or 2 tablespoons minced fresh dill
4 tablespoons lemon juice
1/2 cup milk
salt and pepper
olive oil or butter, to grease pan

Steps:

  • Bust up the salmon into flakes with a fork. I leave the bones and skin in because they pack a powerful nutritional punch.
  • Add the remaining ingredients, except for the olive oil or butter, and mix well. Let rest 5 minutes.
  • Add additional crumbs or milk if necessary to make a moist patty that holds together well.
  • Heat a little olive oil or butter in a skillet over medium to medium-high heat and cook patties until the first side is nicely browned. Turn and cook other side to a nice brown. Make as many batches as necessary, using 2 skillets if you have room on the stove to speed up the process.
  • Tip -- do not turn too soon or the patty may fall apart. Plan to turn only once.
  • Serve hot with lemon wedges to squeeze over them.
  • Serve hot or cold as a sandwich on hard rolls with cocktail sauce or tartar sauce.
  • Serve mini-patties as party snacks.
  • For OAMC I suggest wrapping patties individually and reheating them in the microwave when wanted.
