2 cups uncooked farfalle (bow-tie) pasta (4 ounces)
1/4 cup crushed butter-flavor crackers
1 teaspoon grated lemon peel
1 pound boneless, skinless chicken breasts, cut into 1/4-inch strips
2 cloves garlic, finely chopped
2 cups frozen broccoli flowerets or broccoli cuts (from 1-pound bag), thawed and drained
1 cup chicken broth
1/2 cup fat-free (skim) milk
2 tablespoons lemon juice
1/8 teaspoon pepper
1 can (10 3/4 ounces) condensed reduced-fat cream of chicken soup

Steps:

  • Heat oven to 350°. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Cook and drain pasta as directed on package.
  • While pasta is cooking, mix crushed crackers and lemon peel in small bowl; set aside. Spray 10-inch nonstick skillet with cooking spray; heat over medium-high heat. Cook chicken and garlic in skillet 2 to 3 minutes, stirring frequently, until chicken is brown. Remove skillet from heat; stir in pasta and remaining ingredients. Spoon chicken mixture into baking dish. Sprinkle with crumb mixture.
  • Cover and bake 25 minutes. Uncover and bake 10 to 15 minutes longer or until hot and bubbly.

1 large lemon
2 tablespoons olive oil
3 pounds chicken parts
1 medium onion, diced
1 clove garlic, minced
2 packets Swanson® Flavor Boost™ Concentrated Chicken Broth
3 cups fresh broccoli florets

Steps:

  • Grate 1 tablespoon zest and squeeze 1/4 cup juice from the lemon.
  • Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until well browned on all sides. Remove the chicken from the skillet. Pour off any fat.
  • Reduce the heat to medium. Heat the remaining oil in the skillet. Add the onion and garlic and cook and stir for 2 minutes. Stir in the concentrated broth and lemon juice. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 20 minutes or until the chicken is cooked through.
  • Stir the broccoli and lemon zest in the skillet. Cover and cook until the broccoli is tender-crisp.

4 2/3-4 2/3 cups uncooked bow tie pasta
12 ounces boneless skinless chicken breasts, cut into 1 in strips
1/2 teaspoon lemon pepper seasoning
2 cloves garlic, minced
1 tablespoon canola oil
1 cup chicken broth
1 cup frozen peas, thawed
2/3-2/3 cup shredded carrot
1/4 cup cream cheese, cubed
1/2 teaspoon salt
2 teaspoons lemon juice

Steps:

  • Cook pasta according to directions.
  • Meanwhile, sprinkle chicken with lemon pepper.
  • In a large non-stick skillet, stir fry chicken with garlic in oil until chicken juices run clear.
  • Remove and keep warm.
  • Add broth, peas, carrots, cream cheese and lemon juice to the skillet. Cook and stir until cheese melts.
  • Drain pasta.
  • Add pasta, chicken, salt to vegetable mixture. Heat through.

I found this recipe in the BJs Wholesale Club magazine, and tweaked it slightly. They tout that it's $1.91 per serving if you buy the ingredients there. There are lots of veggies you could add that would be delicious - snap peas, asparagus, mushrooms, artichokes, etc. This can also be frozen easily for an OAMC. Anyway, it's quite delicious - enjoy!!

8 ounces bow tie pasta
3 boneless skinless chicken breast halves
2 tablespoons canola oil
6 green onions, sliced
1 garlic clove, minced
4 tablespoons butter
4 tablespoons flour
1/8 teaspoon cayenne pepper
1 1/2 cups chicken broth
1/2 cup nonfat milk
2 teaspoons Dijon mustard
1/4 cup lemon juice
salt and pepper

Steps:

  • Cook pasta, drain and set aside.
  • Cut chicken into 3/4" pieces, set aside.
  • Heat oil in large skillet over medium-high heat. Add green onions and garlic, saute 3 minutes.
  • Add chicken, salt and pepper. Saute for 9-12 minutes, stirring occasionally.
  • Add pasta, set aside.
  • Melt butter in saucepan, add flour and cayenne pepper. Add broth and milk all at once. Stir over medium heat until thick and bubbly.
  • Add mustard and lemon juice to white sauce while still hot. Immediately toss with pasta and chicken to mix. If it's not quite thick enough, turn the heat up for 3-4 minutes, then let it stand for a few.

1 pound boneless skinless chicken breasts, cut into 1-inch strips
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup all-purpose flour

1 large egg
3 tablespoons lemon juice, divided
1/4 cup butter, cubed
1 cup chicken broth
1/2 teaspoon grated lemon zest
4 cups fresh broccoli florets
Lemon wedges
Hot cooked rice, optional

Steps:

  • Sprinkle chicken with salt and pepper. In a shallow bowl, mix flour, garlic powder and paprika. In another shallow bowl, whisk egg and 1 tablespoon lemon juice. Dip chicken in egg mixture, then in flour mixture; shake off excess., In a large skillet, heat butter over medium heat. Add chicken; cook 4-6 minutes on each side or until no longer pink. 2 teaspoons honey
1/4 teaspoon salt
6 cups broccoli florets, cut into bite-size pieces
1 teaspoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 lb uncooked chicken breast tenders (not breaded)
2 cloves garlic, finely chopped
1/4 cup reduced-sodium chicken broth
2 tablespoons lemon juice
1 tablespoon fresh thyme leaves

Steps:

  • Arrange oven racks in upper and lower thirds of oven. Heat oven to 375° F.
  • In large bowl, mix 1 teaspoon olive oil, 2 teaspoons honey and 1/4 teaspoon salt. Add broccoli; toss until evenly coated. Place on ungreased 15 x 10 x 1-inch pan; place in oven. Immediately reduce heat to 325° F. Bake 20 to 25 minutes or until tender when pierced with knife.
  • Meanwhile, in medium bowl, mix 1 teaspoon olive oil, 1/4 teaspoon salt and the pepper. Add chicken; toss to coat.
  • Heat 12-inch ovenproof skillet over medium-high heat. Sear tenders in skillet 4 to 5 minutes or until browned on bottom. Turn over tenders, top with garlic and chicken broth; transfer to oven. Roast 10 to 15 minutes or until instant-read thermometer inserted into thickest part of chicken reads 165° F. Carefully remove pan from oven, being mindful of hot handle.
  • Divide broccoli and chicken among 4 plates. Spoon pan juices and garlic over chicken and broccoli; drizzle lemon juice on top. Sprinkle with fresh thyme.

One of my quick standbys after a busy day at work. By cooking everything at the same time in their separate pots, I can get it on the table in 30 minutes. The chicken broth and lemon give it a lighter and brighter taste that is a welcome change to heavy white sauce. Garnish with your choice of tomatoes, parsley, cooked asparagus or broccoli, or sliced lemon.

½ (16 ounce) package farfalle (bow tie) pasta
2 tablespoons olive oil
5 stalks green onions, sliced
1 clove garlic, minced
1 ¼ pounds skinless, boneless chicken breast, cut into bite-sized pieces
¼ cup salted butter
¼ cup all-purpose flour
⅛ teaspoon ground black pepper
1 ½ cups chicken broth
½ cup milk
¼ cup lemon juice
2 teaspoons Dijon mustard

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While the pasta is cooking, heat oil in a large skillet over medium-high heat. Add green onions and garlic; cook for 1 minute. Add chicken and cook, stirring frequently until no longer pink and juices run clear, about 12 minutes; time will vary depending on the size of your chicken pieces.
  • Drain pasta and mix with chicken in a large serving bowl. Stir and set aside.
  • Melt butter in a large saucepan. When melted remove from the heat.
  • Mix flour and pepper together in a small bowl. Stir flour mixture into the melted butter, then add chicken broth and milk. Place over medium heat; cook, stirring constantly, until mixture thickens, 3 to 5 minutes. Remove from the heat.
  • Whisk lemon juice and mustard into the sauce and pour over chicken and pasta; stir to combine.
