This Healthy and Easy Lemon Chicken Stir Fry takes less than 30 minutes to make and tastes just as good as takeout - or better! Make this easy chicken stir fry next time you need a quick and healthy dinner!

¼ cup low sodium soy sauce
¼ cup honey
1 teaspoon lemon zest (one small lemon)
3 tablespoons lemon juice (1-2 lemons)
1 teaspoon toasted sesame oil
1 tablespoon grated ginger root
4 garlic cloves (minced)
1 teaspoon chili garlic sauce
1 ½ pounds chicken breast (Cut into 1 inch pieces)
⅓ cup corn starch
1 teaspoon salt
¼ teaspoon pepper
10 ounces green beans trimmed and cut in half
1-2 tablespoons vegetable oil
1 teaspoon sesame seeds (optional, for garnish)

Steps:

  • Whisk together all ingredients for the sauce, set aside.
  • Toss the chicken with the cornstarch, salt and pepper, until chicken is fully coated. Set aside.
  • Heat a sauté pan over medium high heat. Add one tablespoon of oil. Cook the green beans, stirring often, until starting to blister, 3-4 minutes. Remove from pan and reserve on a plate.
  • Add the second tablespoon of oil to the pan. Add the chicken, but do not overcrowd the pan. Cook in two batches if necessary. Cook chicken 3-4 minutes per side, until cooked through.
  • Add the green beans back to the pan with the chicken. Pour in the sauce. Stir, scraping up and browned bits on the bottom of the pan. Cook for 2-3 minutes, until chicken and green beans are fully coated and sauce has thickened. Garnish with sesame seeds and serve over rice if desired.

500 g chicken breasts, Cut Into Thin Strips
1 large red capsicum, Sliced
1 large green capsicum, Sliced
2 medium onions, sliced
1 1/2 tablespoons cajun seasoning
2 tablespoons peanut oil
3/4 cup water
1/4 cup lemon juice
1/4 cup sugar
2 tablespoons butter (optional)
2 tablespoons cornflour (cornstarch)

Steps:

  • Coat chicken strips with seasoning.
  • Heat 1/2 peanut oil in wok and stir fry chicken in batches till browned and cooked through, remove from wok.
  • Heat remaining oil in wok and stirfry onion, halfway through cooking add capsicum and remove all vegetables from wok.
  • Sauce:Mix ingredients together, add to wok and heat till thickened.
  • Add chicken and vegetables,tossing till coated well with sauce and heated through.

3/4 lb boneless skinless chicken breast, cut into 1-inch cubes
1/2 lb reduced-fat smoked turkey kielbasa, cut into 1/2-inch slices
1 medium onion, chopped
3 garlic cloves, minced
1 tablespoon crisco pure olive oil
1 medium green pepper, coarsely chopped
1 medium sweet red pepper, coarsely chopped
1 medium yellow pepper, coarsely chopped
1 lb fresh mushrooms, sliced
2 medium tomatoes, diced
minced fresh herbs (basil, fresh oregano, and fresh parsley) or dried herbs (basil, oregano and parsley flakes)
1 1/2 teaspoons cajun seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon cornstarch
2 tablespoons cold water
hot cooked spaghetti

Steps:

  • In a large nonstick skillet, stir-fry the chicken, kielbasa, onion and garlic in oil until onion is tender. Add the peppers, mushrooms, tomatoes, herbs, Cajun seasoning, salt and pepper. Cook and stir until chicken juices run clear and vegetables are crisp-tender.
  • Combine cornstarch and cold water until smooth; add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over spaghetti.

I got this out of a magazine called "Clean Eating" This is low in fat and sugar. Both DH and I found it to be outstanding. It may say fry but there is nothing fatty about it. It would also be great on the Weight Watchers program.

1 lb large shrimp, peeled and deveined
1 tablespoon cajun seasoning
2 teaspoons canola oil
2 green peppers, seeded, inner ribs removed and cut into strips
2 red peppers, seeded, inner ribs removed, and cut into strips
2 garlic cloves, minced
1/2 cup white wine (have a glass while cooking if you need to unwhine)
1 tablespoon lemon juice
hot sauce
2 cups cooked brown rice

Steps:

  • Toss shrimp with Cajun spice seasoning and set aside.
  • Heat 1 tsp oil in large skillet and saute' peppers for 6 minutes over medium-high heat.
  • Turn heat down and add minced garlic, stirring constantly so that garlic doesn't burn.
  • Remove peppers and garlic from pan, wipe pan out with paper towel.
  • Return pan to medium-high heat, and heat remaining tsp of oil.
  • Add shrimp and cook approximately 3 minutes, stirring frequently.
  • Add wine (don't forget about yours) and lemon juice, peppers and garlic, and cook for 2 to 3 minutes.
  • Season with hot sauce; serve each portion over 1/2 cup cooked brown rice.

This is a recipe I developed myself. The first stir fry that 2 out of 3 of my kids will eat! I took the basic marinade from Recipe #231870 and made up my own stir fry. The vegetables are what I had on hand, so feel free to adjust the veggies to what you like to use. Time includes only 1 hour of marinading.

1/3 cup lime juice
1/3 cup honey
2 teaspoons light soy sauce
2 tablespoons cajun seasoning
salt and pepper (optional)
1 lb raw shrimp, peeled and deveined
1 sweet potato, peeled and cubed
2 carrots, peeled and cut into rounds
1/2 lb sugar snap pea, ends trimmed and cut in half if large
2 cups shredded cabbage
1 red onion, cut into wedges and layers separated
1 tablespoon cornstarch
1/4 cup cold water
2 cups cooked brown rice

Steps:

  • Mix the marinade ingredients together in a bowl.
  • Place the shrimp in a sealable container and pour half the marinade over them.
  • Refrigerate for 1 hour to overnight.
  • Take the reserved marinade and pour into a wok, heated on high.
  • Add vegetables to wok and cook, stirring occasionally, for 8-10 minutes, until vegetables are tender.
  • Push the vegetables to the side and add the shrimp (after draining out the marinade).
  • Cook, stirring occasionally, until shrimp are pink, about 3 minutes or so.
  • Mix the cornstarch and 1/4 cup of water and add to the wok to thicken the sauce.
  • Cook for about 1 minute.
  • Serve over cooked brown rice. Yum!
