1 cup water

1 teaspoon sugar
1/4 teaspoon salt
1 cup flour
4 eggs
1/2 cup golden raisin (soaked 5 minutes in hot water, then drained well)
1 tablespoon butter, melted
1 1/2 tablespoons cream or 1 1/2 tablespoons canned milk
1 cup sifted icing sugar
1 teaspoon lemon juice
1/2 teaspoon vanilla

Steps:

  • Heat oven to 375f degrees.
  • Bring water, butter, sugar and salt to boil.
  • Add flour and beat until mixture leaves sides of pan.
  • Remove from heat and beat 2 minutes to cool.
  • Add eggs one at a time, beating until smooth and satiny after each addition.
  • Add raisins and mix well.
  • Drop by measuring tablespoons full onto greased cookie sheet.
  • Bake 30 to 35 minutes.
  • Ice while warm.
  • Frosting: Combine ingredients in order given.

These buns are the quintessential hot yeast bun -- but with an unexpected and refreshing jolt of lemon. The lemon elevates them beyond ordinary dinner rolls to something special. Tender and buttery, with a crisp, golden crust, they're distinctly and assertively lemon, but not sweet. This recipe was found on the King Aurthur Flour website. Posted for a request; I have not tried it.

1/2 cup lukewarm water
3/4 cup lukewarm milk
1/2 stick cup unsalted butter, melted

Steps:

  • Combine all of the dough ingredients in a large mixing bowl and stir to form a cohesive dough.
  • Knead the dough, by hand (on a lightly oiled work surface) or machine, for 5 to 8 minutes, until it's smooth, soft and supple; avoid adding too much flour, as this will make the buns tough and dry.
  • Place the dough in a lightly greased bowl, cover the bowl with plastic wrap, and allow the dough to rise for about 1 1/2 hours, or until it's puffy, though it may not have doubled in bulk.
  • ---BreadMachine Method---.
  • Place all of the dough ingredients into the pan of your machine, program the machine for Manual or Dough, and press Start.
  • When the machine has completed its cycle, set a timer for 30 minutes, and allow the dough to continue to rise; it may crest the top of the bucket, but shouldn't overflow.
  • Transfer the dough to a lightly oiled work surface, and divide it into 20 pieces.
  • Allow the pieces to rest, covered, for 10 minutes.
  • Round the dough into balls, and place them in two lightly greased 9-inch round cake pans.
  • Cover the pans, and allow the buns to rise for about 1 hour, or until they're nice and puffy and have filled the pan.
  • While the buns are rising, combine the glaze ingredients, and set aside.
  • Brush the buns lightly with half of the glaze.
  • Bake them in a preheated 375°F oven for 30 to 35 minutes, or until they're golden brown.
  • Remove the buns from the oven, and brush them with the remaining glaze.
  • Transfer them to a wire rack to cool.

1 package (2 1/4 teaspoons) active dry yeast
1/4 cup warm water (100-110 degrees F)
2 tablespoons white vinegar
2 cups milk minus 2 tablespoons, room temperature
2/3 cup cold shortening

1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
5 cups flour
2 tablespoons butter, melted, for after baking
Filling Ingredients:
2 (8-ounce) packages cream cheese, softened
zest of 1 lemon (reserve a little for topping)
1/2 cup sugar
2 tablespoons lemon juice
1 egg, room temperature
1 stick salted butter (or 1 stick unsalted butter and 1/4 teaspoon salt), melted
Glaze Ingredients:
2 cups powdered sugar
1 table lemon juice
1/2 teaspoon vanilla extract
1/4 about 1/4 cup milk
extra lemon zest

Steps:

  • Directions: Note on proofing: This yeast dough proofs for a couple of hours after you mix it up, and then the assembled rolls proof in the fridge overnight, so allow for this when planning to make this recipe. With most cinnamon rolls recipes you could switch this and proof in the fridge overnight and then assemble and proof on the countertop, but I opted to switch that method with these because I didn't want the cream cheese filling sitting out too long. Note on yield: I don't recommend halving yeast recipes; instead, if you don't want 24 rolls at once, consider freezing some for later. Note on freezing: To freeze some of the unbaked rolls, just wrap them well before the second rise and freeze them. Once frozen, pop them out of the pan all together and store in the freezer, wrapped in plastic wrap and in a zip top bag or wrapped in foil. When you want to bake them, stick them back in a greased pan, thaw them in the fridge overnight, proof for the instructed amount of time, and bake like usual. Mix the warm water and yeast in a medium bowl and let the yeast foam for about 10 minutes. Put 2 tablespoons white vinegar in a measuring cup and then add milk up to the 2 cup line. Set this aside. In a separate large bowl (or the bowl of a mixer fitted with a dough hook), whisk together flour, sugar, salt, baking soda, and baking powder and cut the shortening into the mixture with two knives or a pastry cutter until the shortening looks like small peas. Stir yeast mixture and milk mixture into the dry ingredients and mix well, kneading just a few turns. Transfer the dough to a bowl lightly sprayed with cooking spray, cover tightly with plastic wrap, and proof in a warm, draft-free place (such as a closed, turned-off oven), for around 2 hours or until doubled in size. After proofing the dough, lightly spray two 9 x 13-inch baking dishes with cooking spray. Cream the softened cream cheese in a medium bowl until fluffy before adding lemon zest, sugar, lemon juice, and the egg. Mix together until well combined. Turn the dough out onto a floured surface and roll it into a large rectangle about 1/8-inch thick (I carefully cut the dough in half and worked with half at a time to make it more manageable; if you do this, just spread on half of the filling ingredients for each half you roll). Spread the melted butter over the surface of the rolled dough and then dollop the cream cheese mixture all across the surface, spreading gently to create an even layer. Gently roll the dough up into a spiral (I find using a bench scraper to encourage the dough to roll up during this process incredibly helpful) and cut it into 2-inch rolls, placing them close together in your prepared baking dishes (at this point, you could wrap and freeze the rolls for later if you wanted). Cover the rolls let them rise in the fridge overnight (they will have nearly doubled.) When you're ready to bake, preheat the oven to 400 degrees F, letting the rolls rise on top of the preheating oven covered by a clean dish towel. Bake them for about 25-30 minutes or until lightly browned on top (don't underbake or they'll still be doughy in the center). Brush with 2 tablespoons melted butter and return to the oven for 1 more minute. Whisk together the glaze ingredients and drizzle the glaze over the warm rolls. Sprinkle with reserved zest and serve immediately.

1/2 cup granulated sugar
1 tablespoon fast-acting dry yeast
2 teaspoons grated lemon peel
1 teaspoon vanilla
4 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon ground cinnamon
1/2 cup finely chopped crystallized ginger
1/2 cup granulated sugar
2 tablespoons fresh lemon juice
1 tablespoon water
1 tablespoon finely chopped crystallized ginger
3/4 cup powdered sugar
1 tablespoon fresh lemon juice

Steps:

  • In large bowl, stir together milk, 1/2 cup granulated sugar, the yeast, lemon peel and vanilla. Let stand 5 minutes for yeast to dissolve.
  • Add flour, salt, nutmeg, cinnamon and 1/2 cup ginger. With dough hook attachment, knead until dough no longer sticks to side of bowl and is elastic, about 5 minutes. Grease another large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover loosely with plastic wrap; let rise in warm place about 1 hour 30 minutes or until dough has doubled in size.
  • Grease bottom and sides of 13x9-inch pan with shortening or cooking spray. Gently push fist into dough to deflate. Divide dough into 15 equal pieces. Shape each piece into a ball; place in pan. Cover loosely with plastic wrap; let rise in warm place about 45 minutes or until dough has doubled in size.
  • Heat oven to 350°F. Uncover pan. Bake 40 to 45 minutes or until buns are golden brown and sound hollow when tapped.
  • In small saucepan, mix glaze ingredients. Cook over medium heat about 5 minutes, stirring occasionally, until sugar is dissolved and glaze is thick. Brush glaze over warm buns. Cool about 30 minutes.
  • In small bowl, beat powdered sugar and 1 tablespoon lemon juice with whisk. Using spoon or decorating bag, pipe icing in cross shape on top of each bun.

  • Unroll 1 can crescent dough onto work surface; firmly press perforations and seams together to form 12x4-inch rectangle. Brush with half the butter, then sprinkle with half the gelatin mixture. Roll up, starting at one short end; cut into 6 slices. Arrange, cut-sides up, in half of 13x9-inch baking dish sprayed with cooking spray. Repeat with remaining dough, butter and gelatin mixture.

These sweet lemony rolls are always a hit no matter where I take them. I enjoy baking- especially with yeast- and this is one of my favorite recipes.

Number Of Ingredients 13

1 package (2.9 ounces) cook-and-serve lemon pudding/pie filling mix
2 packages (1/4 ounce each) active dry yeast
2 teaspoons plus 3/4 cup sugar, divided
1 cup warm water (110° to 115°)
4 eggs, separated
1 cup warm milk (110° to 115°)
1/2 cup butter, softened
1/2 teaspoon salt
8-1/2 to 9 cups all-purpose flour
GLAZE:
1-1/2 cups confectioners' sugar
2 teaspoons lemon juice
2 to 3 tablespoons milk

Steps:

  • Prepare pudding mix according to package directions; cover and refrigerate. In a small bowl, dissolve yeast and 2 teaspoons sugar in warm water; let stand for 5 minutes. In a bowl, beat egg yolks and remaining sugar until thickened. Add the yeast mixture, milk, butter, salt, egg whites and 4 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Turn onto a lightly floured surface; divide into 36 pieces. Roll each piece into a ball. Place 2 in. apart on greased baking sheet. With thumb, make a large indentation in center of each ball; stretch to 3-1/2 in. in diameter. Place about 2 teaspoons of pudding in each indentation. Cover and let rise until doubled, about 30 minutes. Bake at 350° for 15-20 minutes or until golden brown. Remove from pans to wire racks. For glaze, combine the confectioners' sugar, lemon juice and enough milk to achieve desired consistency. Drizzle over warm buns.

250ml full-fat milk
zest 2 lemons
50g butter ,cubed
500g strong white flour , plus 140g/5oz for the crosses and extra for dusting
½ tsp ground cinnamon
85g golden caster sugar
7g sachet fast-action dried yeast
1 large egg , beaten, plus 1 egg to glaze
vegetable oil or sunflower oil, for greasing
200g marzipan , chilled
100g mixed dried fruit
50g candied lemon peel (or use mixed peel)
1 tbsp lemon curd , to glaze, plus extra to serve
salted butter , to serve

Steps:

  • Warm the milk and lemon zest in a small saucepan until steaming. Remove from the heat and add the butter, swirling the pan until it has melted and the milk has cooled slightly.
  • Mix the flour, cinnamon, sugar, yeast and 1 tsp salt in a large bowl. Pour in the milk mixture and the beaten egg, and combine with a wooden spoon until the mixture clumps together. Tip out onto your work surface and knead until smooth and elastic, about 10 mins - the dough should bounce back when pressed with your finger. Transfer to a clean oiled bowl, cover with cling film or a tea towel and leave to rise for 2 hrs or until doubled in size.
  • Dust your largest baking tray with flour. Tip the dough onto the work surface and knead again to knock out any air bubbles. Roll the dough to a rectangle roughly 30 x 40cm. Grate the marzipan on the coarse side of a cheese grater, straight onto the dough, covering the whole surface. Scatter over the dried fruit and candied peel too. From one of the longer edges, roll up the dough into a tight sausage shape. Use a sharp knife to cut the dough into 12 equal pieces, then lightly roll each piece into a smooth ball, closing the cut edges. Try not to overwork the dough or you'll lose the layers of marzipan. Instead, pinch the sides together in a purse shape, concentrating on creating a smooth surface on the bottom (which will become the top). Arrange the balls on the tray, smooth-side up, leaving a small gap between each one. Cover loosely with a piece of oiled cling film and leave somewhere warm to prove for 1 hr or until almost doubled in size - the buns should be just touching.
  • Heat oven to 180C/160C fan/gas 4. Brush the buns with a little beaten egg. Mix the 140g flour with enough water to make a thick, smooth paste, then transfer to a piping bag fitted with a small round nozzle (or use a sandwich bag and snip off one corner). Use the paste to pipe crosses over the buns. Bake for 25 mins until deep golden brown and cooked through.
  • Mix the lemon curd with 1-2 tsp water to loosen it a little, then brush over the top of the buns. Leave to cool for 10 mins on the baking tray. Serve warm from the oven or toasted, with butter and lemon curd. Will keep for up to 3 days in a tin, or freeze for up to 2 months.

500g strong white bread flour , plus extra for dusting
7g sachet fast-action dried yeast
50g golden caster sugar
1 ½ tsp cinnamon
3 tbsp olive oil
1 lemon , zested
100g frozen blueberries
milk , for brushing
50g plain flour
1 tbsp maple syrup

Steps:

  • Mix the bread flour, yeast, sugar, cinnamon, oil, 2 tsp sea salt and 350ml warm water in a bowl with a spoon first, and then with your hands. Add the zest and continue to knead (or use a mixer fitted with a dough hook) for around 10 mins until it feels less sticky. Shape into a ball, return to the bowl and cover. Leave to rise for about 1 hr or until doubled in size (or leave in the fridge overnight).
  • Knock the air out of the dough. Gently knead in the frozen blueberries. On a floured surface, shape into eight buns. Put the buns on a baking tray lined with baking parchment (no more than 2cm apart) and prove somewhere warm for 1 hr or until well risen.
  • Heat oven to 220C/200C fan/gas 7. Brush the bun tops with milk. Mix the plain flour with water to make a paste, transfer to a piping bag and pipe crosses on top. Bake for 25-30 mins or until golden and risen. Brush with the maple syrup while still warm.
