1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup unsalted butter (melted)
1 cup granulated sugar
1/4 cup lemon juice
2 large eggs
1 teaspoon vanilla
1/2 cup milk
2 tablespoons lemon zest
1 cup blueberries
1 cup powdered sugar
1 1/2 tablespoons lemon juice
1/2 tablespoon milk (or more as needed)

Steps:

  • Combine the ingredients together in a small bowl, set aside.
  • Prep: Preheat oven to 350 degrees. Grease a 9 x 5 pan with cooking spray or butter.Mix dry ingredients: Add flour, baking powder and salt to a medium bowl, set aside.
  • Mix wet ingredients: Combine butter, sugar, lemon juice, eggs and vanilla in a large bowl.
  • Combine wet and dry ingredients: Add the dry ingredients and milk in two additions to the wet ingredients.
  • Add fruit: Fold in lemon zest and blueberries. Make sure not to over mix.
  • Bake: Pour batter into prepared pan and bake for 60 minutes or until a toothpick comes out mostly clean.
  • Cool: Allow the bread to cool in the pan for 30 minutes then remove to a wire rack to cool completely.
  • Enjoy: Once the bread is cool pour on the glaze and serve!

1/3 cup butter, melted
1 cup sugar
3 tablespoons lemon juice
2 large eggs, room temperature
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup 2% milk
1 cup fresh or frozen blueberries
1/2 cup chopped nuts
2 tablespoons grated lemon zest
GLAZE:
2 tablespoons lemon juice
1/4 cup sugar

Steps:

  • In a large bowl, beat the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition. Fold in the blueberries, nuts and lemon zest. , Transfer to a greased 8x4-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. , Combine glaze ingredients; drizzle over warm bread. Cool completely.

2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons lemon zest
1 pinch salt
½ cup butter, chilled and diced
1 egg
1 teaspoon vanilla extract
2 cups fresh blueberries
¼ cup white sugar
⅛ teaspoon ground nutmeg
5 tablespoons butter, softened
½ cup packed brown sugar
¾ cup all-purpose flour
¼ cup confectioners' sugar for dusting

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking pan.
  • Start by making the crust. In a medium bowl, stir together the 2 cups flour, 2 tablespoons white sugar, lemon zest and salt. Cut in the 1/2 cup butter until the mixture resembles coarse crumbs. Beat egg and vanilla together; stir into the crumb mixture until a dough forms. Press into the bottom of the prepared pan.
  • Bake for 12 to 15 minutes in the preheated oven, until golden. Remove from oven and set aside to cool slightly.
  • Sprinkle blueberries over the crust. Combine the 1/4 cup sugar and nutmeg; sprinkle over the blueberries. Make the topping: In a medium bowl, cream together the 5 tablespoons butter and brown sugar until smooth. Mix in the flour, so that the mixture is crumbly like streusel. Sprinkle over the blueberry layer.
  • Bake for 20 to 25 minutes in the preheated oven, until browned. Cool and then dust with confectioners' sugar before cutting into bars.
