If I could use only one marinade for the rest of my life, it would be this one. Redolent with garlic, piquant with fresh lemon juice, and fragrant with extra virgin olive oil, it instantly transports you to the Mediterranean.

1/4 cup fresh lemon juice
1/2 teaspoon hot pepper flakes
1/2 teaspoon cracked black pepper
1/2 teaspoon coarse salt (kosher or sea), or to taste
4 strips of lemon zest
3 cloves garlic, crushed with the side of a cleaver or minced
1/4 cup coarsely chopped fresh parsley
1/4 cup coarsely chopped fresh basil, cilantro, dill, oregano, or a mix of all four
1/2 cup extra virgin olive oil

Steps:

  • Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a nonreactive (glass, ceramic, or stainless steel) bowl and whisk until the salt crystals are dissolved. Add the lemon zest, garlic, parsley and basil. Stir or whisk in the olive oil. The virtue of this marinade is its freshness: Use it within 1 to 2 hours of making. Stir again before using.

Roasted Onions with Lemon image

1/2 cup extra-virgin olive oil
2 large sprigs rosemary, leaves stripped
1 bunch thyme
6 red onions, halved through the root end (unpeeled)
3 white onions, quartered through the root end (unpeeled)
Kosher salt and freshly ground pepper
2 lemons
2 tablespoons vegetable oil
2 tablespoons apple cider vinegar
1 tablespoon dijon mustard

Steps:

  • Preheat the oven to 400 degrees F. Drizzle 2 tablespoons olive oil on a rimmed baking sheet. Scatter the rosemary leaves and thyme sprigs on the baking sheet. Season the onions with salt and pepper; arrange on top of the herbs, cut-side down.
  • Remove 4 wide strips zest from the lemons using a vegetable peeler; set aside. Cut each lemon in half and remove any seeds; add to the baking sheet cut-side down. Roast until the onions are tender and the skins are slightly charred, about 1 hour.
  • Meanwhile, make the vinaigrette: Combine the vegetable oil, vinegar, mustard and 1/2 teaspoon salt in a blender. With the motor running, gradually drizzle in the remaining 6 tablespoons olive oil and 2 tablespoons water until emulsified. Transfer to a small bowl; add the lemon zest and season with salt and pepper. Let steep at least 30 minutes; remove the lemon zest.
  • Remove and discard the skins from the onions. Arrange the onions, lemons and herbs on a platter and drizzle with the vinaigrette just before serving. (The roasted onions and vinaigrette can be made up to 4 hours ahead. Serve at room temperature.)

LEMON-MARINATED LONDON BROIL

Impressive dish with an inexpensive meat. Before plating, squeeze a small amount of lemon juice over meat and garnish with sliced lemons if desired.

1 (4 pound) beef London broil steak (about 1 1/2 inches thick)
1 tablespoon lemon zest
½ cup lemon juice
⅓ cup olive oil
4 teaspoons white sugar
2 tablespoons thinly sliced green onions
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 ½ teaspoons salt
⅛ teaspoon ground black pepper

Steps:

  • Prick the London broil on both sides several times with a fork; place into a resealable plastic bag. Whisk together the lemon zest, lemon juice, olive oil, sugar, green onions, Worcestershire sauce, Dijon mustard, salt, and black pepper in a bowl. Pour into the bag with the meat, coat with the marinade, squeeze out excess air, and seal. Marinate in the refrigerator at least 3 to 4 hours, but overnight is best.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the beef from the marinade, and shake off excess. Discard the remaining marinade.
  • Cook the beef until it is beginning to firm, and is hot and slightly pink in the center, about 17 to 20 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing thinly across the grain.

Delicious, tender little chunks of beef to be eaten with Lemon Cucumber Dill Sauce and Crunchy Bottom Butter Rice. Not for the tender palate!

1 lb beef roast (the type of cut is not important)
1 medium onion (again, the type is not important)
1 -2 cup lemon juice (bottled is just fine)

Steps:

  • Preparation: Cut beef into 1 inch cubes. Grate onion inside gallon size zip-lock bag to save onion juice. Place beef chunks into bag with grated onion, pour lemon juice over beef. Seal bag and mix together to ensure even coverage. Place bag inside a large bowl and refrigerate overnight or up to 3 days (the longer the better, in my opinion).
  • Cooking: drain juice from beef and onion and thread beef chunks onto metal or water soaked bamboo skewers. Place under broiler (with oven rack on the second from the top brackets) for 10-20 minutes or until edges are dark brown and crispy, turning every 5 minutes or so. Meat can also be cooked on a hibachi or regular grill. Meat does not need to be cooked to 160 degrees (and should not be!) as the lemon juice "cooks" the meat with enzymes while it marinates.
