BUTTERNUT SQUASH SOUP WITH CINNAMON image

Number Of Ingredients 9

1 20oz Trader Joe's cubed Butternut Squash
1 container chicken broth
1 cup skim milk
1 carrot
1 stalk celery
1 small onion
cinnamon(stick)
nutmeg
cloves

Steps:

  • Dice vegetables. Heat some olive oil in a pot. Add vegetables and spices. Saute until slightly browned. Add chicken broth to cover vegetables. Bring to boil. Turn heat to low and cover pot. Simmer 35 minutes. Remove squash with slotted spoon and puree. Return squash and keep warm.
