TURKEY-VEGETABLE STEW WITH EGG NOODLES



Turkey-Vegetable Stew with Egg Noodles image

6 cups reduced-sodium chicken broth
2 reserved turkey burgers, cut into bite-sized pieces
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
2 bay leaves
Salt and ground black pepper
8 ounces egg noodles
2 tablespoons chopped fresh parsley leaves

Steps:

  • In a large stock pot or saucepan, combine broth, turkey burger pieces, onion, celery, carrots, and bay leaves. Season, to taste, with salt and black pepper. Set pan over high heat and bring to a boil. Add egg noodles and partially cover with lid. Cook 6 to 8 minutes, until noodles are just tender. Remove from heat, remove bay leaves and stir in parsley.

1/4 cup beef bouillon granules
10 cups hot water
3 lbs boneless chuck roast, trimmed
8 whole cloves
3 celery ribs, cut into thirds
2 large carrots, peeled,cut into thirds
1 large onion, quartered
1 seeded green bell pepper, quartered
1 bunch parsley sprig, plus
1/2 cup parsley, chopped
2 bay leaves
1/2 teaspoon freshly-ground pepper
1 (16 ounce) package egg noodles
1 teaspoon salt
freshly-ground pepper, to taste

Steps:

  • Preheat oven to 350ºF.
  • Dissolve beef bouillon in water in large Dutch oven.
  • Add chuck roast, cloves, celery, carrots, onion, green pepper and parsley sprigs.
  • Cover; bake until meat is tender, 3 hours.
  • Transfer meat to cutting board.
  • Shred meat into bite-size pieces.
  • Remove vegetables from broth with slotted spoon; chop.
  • Return meat and vegetables to broth.
  • Stir in uncooked noodles, salt and pepper; cover.
  • Bake until noodles are tender, stirring once, about 30 minutes.
  • Add additional water if noodles absorb all of broth.
  • Sprinkle with chopped parsley.

I made Shandobando's Recipe #47193 a couple days ago. We were going to have the soup for dinner tonight but there still would have been soup left and I didn't want to waste any because it was so good. This recipe I put together using Shandobando's soup along with what I had on hand in the cabinet and refrigerator. A mild tasting one dish meal that can be very versatile depending on what vegetables, cheeses, and spices you like. This was very quick to put together and couldn't have been easier.

2 tablespoons olive oil
1 1/2 lbs ground turkey
1 medium onion, chopped
4 garlic cloves, chopped
1 cup carrot, matchstick cut
4 cups potato and leek soup
15 ounces peas, drained
8 ounces egg noodles
1 cup mozzarella cheese, shredded
1 teaspoon black pepper (to taste)
1/2 teaspoon lemon pepper (to taste)
1 cup French-fried onions

Steps:

  • In a large skillet over medium heat add olive oil, chopped onion, garlic, and carrots; cook until tender. Place ground turkey in skillet and chop into small pieces. Lightly brown until meat is no longer pink. Set aside.
  • Add water to large Dutch oven and bring to boil. When water is rapidly boiling add the egg noodles and cook until just tender, approximately 5 minutes.
  • Drain noodles, return to Dutch oven and add ground turkey mixture along with drained peas, potato leek soup, mozzarella cheese, black pepper, lemon pepper, and fried onions. Fold together gently and heat thoroughly. Serve immediately, garnish with more French fried onions.
