CREAMY TURKEY CASSEROLE

Turkey Casserole is creamy, comforting, and quick to make!

3 cups uncooked penne (or medium pasta)
3 tablespoons butter
1 onion ( finely diced)
8 ounces mushrooms (sliced)
2 cloves garlic (minced)
10 ¾ ounces condensed cream of chicken soup
1 ⅓ cups milk
½ teaspoon seasoned salt
½ teaspoon dried basil
1 cup havarti cheese (or swiss cheese, shredded )
3 cups cooked turkey
¼ cup seasoned bread crumbs
2 tablespoons butter (melted)

Steps:

  • Heat oven to 375°F. Combine topping ingredients and set aside.
  • Cook pasta al dente according to package directions.
  • Cook onion, mushrooms, and garlic in butter until tender, about 5 minutes.
  • In a large bowl combine soup, mushroom mixture, milk, seasonings, and ½ of the cheese. Fold in turkey and pasta.
  • Spread into a 9x13 casserole dish, top with remaining cheese, and sprinkle with topping.
  • Bake 30-35 minutes or until hot and bubbly.

Leftover Turkey Casserole made with leftover turkey, cheesy gravy, and cornbread is fast, easy, and ready in under 45 minutes!

4 tablespoons butter (, unsalted)
1/4 cup flour
1/2 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
1 cup turkey gravy
1 cup whole milk
1 cup mozzarella (, shredded)
3 cups cornbread (, cut into 1 inch chunks)
3 cups chopped turkey meat (, cooked)
1/2 cup frozen peas
1 cup chopped carrots
1 cup chopped frozen green beans

Steps:

  • Preheat the oven to 350 degrees and add the butter to a medium sized saucepan melting it on medium heat.
  • Add the flour to the pan and whisk well together for 1 minute before adding in the gravy, milk and mozzarella, whisking until smooth.
  • Add the cornbread, turkey, peas, carrots and green beans to a 9x13 pan and cover with the gravy before cooking for 20-25 minutes covered, followed by 10 minutes uncovered.

Leftovers .. lots and lots of leftovers. You need to use them up and what better way than to do it in a comfort food style casserole ! It's always been a mish mash of whatever we had but this year I decided to try to make a "recipe" out of it all .. and it turned out great ! Due to health concerns we are now limiting our salt intake as much as possible so my recipes will no longer contain added salt. We will get plenty of that through some of the ingredients but you are always welcome to add salt to taste as you are cooking or at serving time.

2 cup(s) uncooked pasta - egg noodles or bow tie work well
2 cup(s) leftover cooked vegies - whatever you have on hand and enjoy
3 tablespoon(s) flour
3/4 cup(s) milk
1 - 2 cup(s) cooked chopped turkey
1 can(s) cream of mushroom soup - or any cream soup you prefer
1/4 - 1/2 cup(s) plain yogurt or sour cream
1 - 2 teaspoon(s) tamari sauce
1/2 cup(s) leftover stuffing or dressing
1/4 cup(s) canned fried onion rings
- salt and pepper as desired

Steps:

  • Preheat oven to 350ºF. Lightly spray an 8 x 8 baking dish and set aside.
  • Cook pasta as directed on package. Drain, rinse and set aside.
  • Place your cooked vegetables into a large pot and sprinkle with the flour. Stir gently to coat. Turn the heat on to medium and slowly warm the vegies while stirring to avoid burning the flour. Gradually stir in the milk then raise the heat and cook until thickened - stirring often - about 2 minutes or so.
  • Remove from heat. Stir in turkey, soup, yogurt or sour cream and Tamari sauce. Add the cooked pasta and stir to coat.
  • Pour into your prepared baking dish. Take the stuffing and crumble it and lay it over the top of the casserole.
  • Cover and bake for 20 minutes. Uncover and sprinkle the onion rings on top. Return to oven and cook uncovered for an additional 10 minutes. Allow to sit for about 5 minutes before serving.
  • Use salt and pepper as desired either while cooking or at serving time.

This one pot stew uses up all your roast dinner leftovers in one go and has a great honey mustard tang

2 onions, finely chopped
1 eating apple, cored and chopped
2 tbsp olive oil
1 tsp dried sage, or 5 sage leaves, chopped
2 tbsp plain flour
300ml vegetable or chicken stock
2 tbsp wholegrain mustard
2 tbsp runny honey
400g-500g leftover turkey, shredded
about 350g leftover roasted vegetables like roast potatoes, parsnips, celeriacs and carrots, chunkily diced

Steps:

  • Fry the onion and apple in the oil until softened in a casserole or deep pan. Stir in the sage for 1 min, then stir in the flour. Gradually stir in the stock followed by the mustard and honey.
  • Bring up to a simmer and stir in the turkey and roast veg. Cover and gently simmer for 15 mins until turkey is piping hot. Season and eat with mash or jacket potatoes.
