This is my Uncle Paul's recipe. We had these for a family get together as a passed horsdevour and everyone loved them so much, they never really ever made past the kitchen.

Number Of Ingredients 4

2 (6 inch) French rolls
1 cup cooked shrimp, finely chopped
1/2 cup shredded monterey jack cheese
1/3 cup mayonnaise

Steps:

  • Cut rolls into 24 slices, about 3/8 inch thick. Toast slices lightly.
  • Mix shrimp, cheese and mayonnaise. Spread on bread slices and broil until cheese is melted and bubbly.

1/2 lb fresh or frozen raw shrimp
1/2 c chopped green onions with tops
1/4 c flour
1/4 c water
1 egg
1 Tbsp cornstarch
1 tsp salt
1/4 tsp sugar
1/4 tsp sesame oil
1 dash(es) white pepper
5 slice white bread
vegetable oil for frying

Steps:

  • 1. Peel shrimp. If shrimp is frozen, don't thaw; peel under running cold water. Make a shallow cut lenghtwise, down back of each shrimp; wash out sand vein. Cut shrimp lengthwise into halves. You may buy shrimp that is already deveined to save time.
  • 2. Mix shrimp, onions, flour, water, egg, cornstarch, salt, sugar, sesame oil and pepper.
  • 3. Heat vegetable oil (about 1 1/2 inches) in wok at 350 degrees or heavy bottom pan that is deep enough to hold the oil.
  • 4. Remove crusts from bread; cut each slice into 4 squares. Place 1 or 2 shrimp with sauce on each bread square.
  • 5. Fry 5 squares at a time until golden brown, turning frequently (about every 2 minutes). Drain on paper towel and serve.

These are so easy and so good! I don't need to get them at Leanne Chins anymore. The original came from the Ultimate Chinese cookbook. Edited to add warning about frying time.

4 slices white bread
8 ounces cooked peeled shrimp
1 tablespoon soy sauce
2 garlic cloves, crushed
1 teaspoon sesame oil
1 large egg
1 tablespoon sesame seeds, toasted
oil, for frying

Steps:

  • Remove crusts from the bread.
  • Using a food processor, blend shrimp, soy sauce, garlic, sesame oil and egg until a smooth paste has formed.
  • Spread paste evenly on top of bread.
  • Sprinkle bread with sesame seeds and press them into spread.
  • Cut bread from corner to corner twice, to form small triangles.
  • Heat oil in wok and fry toasts, sesame side up, for 4 to 5 min, until golden. WARNING: WATCH THEM CAREFULLY. THEY MAY TAKE CONSIDERABLY LESS THAN 4 MIN TO BECOME GOLDEN.
  • Drain toasts thoroughly.
  • Serve with sweet and sour sauce.
  • Enjoy!

I love the shrimp toast I get at my local oriental restaurant, and wanted to make it at home. I asked the server if she knew how to make it and she sent the chef out to tell me. I tried it today, and it tasted just like at the restaurant. Hope you enjoy this one too!!

1/2 lb shrimp, shelled and deveined
4 water chestnuts, chopped
1 teaspoon salt
1 egg
6 slices white bread, thinly sliced
oil (for frying)
2 tablespoons cornstarch
1 egg white
1/2 teaspoon sugar

Steps:

  • Mince shrimp.
  • Add water chestnuts, salt, sugar, 1 Tbls.
  • cornstarch and 1 egg.
  • Beat egg white and blend in 1 Tbls.
  • cornstarch.
  • Remove crusts from bread and cut into 4 triangles.
  • Brush one side of bread with egg white mixture and then shrimp past.
  • Fry shrimp side down in 375degree F.
  • oil until golden.
  • Carefully turn and brown bread side.
  • Drain.
  • Serve hot.

SESAME PRAWN / SHRIMP TOAST

Especially handy at drinks parties, these crunchy-topped toasts are great served with a sweet chilli sauce.

300 g raw prawns, shells removed, deveined and finey chopped
1 piece fresh gingerroot, grated (2cm)
1 large spring onion, finely chopped
1 egg white, lightly beaten
1 tablespoon cornflour
1 dash sesame oil
1 dash dark soy sauce
1/4 teaspoon salt
6 slices brown bread, toasted
5 tablespoons white sesame seeds
500 ml peanut oil (for deep frying)

Steps:

  • Mix the prawns with the ginger, spring onion, egg white, cornflour, sesame oil, soy sauce and salt.
  • Spread one side of each slice of bread with the prawn mixture, and dip the filling side into sesame seeds.
  • Deep fry the toast in hot oil, over a moderate heat - filling side up until golden brown - about 3-5 minutes.
  • Drain on absorbent paper and serve straight away.
