2 large onions, coarsely chopped
1-1/2 cups packed fresh parsley sprigs
1-1/2 pounds ground beef
1 large egg, lightly beaten
1 teaspoon salt
6 whole pita breads
2 tablespoons olive oil
1/3 cup tahini
2 garlic cloves, minced
1/4 cup lemon juice
2 tablespoons water
1/8 teaspoon salt

Steps:

  • Place onions in a food processor; pulse until finely chopped. Remove and pat dry; transfer to a large bowl. Add parsley to processor; pulse until minced. Stir into onions. Add beef, egg and salt; mix lightly but thoroughly., Slice pitas horizontally in half. Spread bottoms with meat mixture to edge. Replace pita tops; press lightly to adhere. Brush outsides of sandwiches with oil. Grill sandwiches, uncovered, over medium heat until a thermometer inserted into meat mixture reads 160°, 10-12 minutes, turning every 2 minutes. Cool slightly before cutting into quarters., Combine sauce ingredients; serve with sandwiches.

1/2 lb thinly sliced New York strip steaks or 1/2 lb london broil beef
1 baguette
4 tomatoes, of your choice
1 (6 ounce) package garlic and herb goat cheese
1/2 cup regular mayonnaise
cumin
extra virgin olive oil
garlic salt
paprika

Steps:

  • Marinade beef for 5 hours or more in a ziplock bag.
  • Cut baguette into 4 pieces.
  • Put Baguettes in toaster or oven just to get a little crispy.
  • Sautee your beef for 2 minutes on each side.
  • Take baguettes out of the toaster and spread mayo on one side and sliced tomatoes.
  • Thinly slice your meat and place on top of tomatoes.
  • On the dry side of baguette spread your goats cheese.
  • Sprinkle some salt and pepper on the meat and there you have it!

3 ¼ pounds boneless top round steak, sliced very thin
½ cup red wine vinegar
½ cup olive oil
¼ cup fresh lemon juice
1 teaspoon allspice
½ teaspoon ground cinnamon
¼ teaspoon cardamom
½ teaspoon ground black pepper
salt, to taste
2 large tomatoes, coarsely chopped
1 clove garlic, minced
1 bunch finely chopped fresh parsley
1 large sweet onion, finely chopped
⅓ cup olive oil
3 tablespoons fresh lemon juice
3 large tomatoes, coarsely chopped
2 cloves garlic, minced
1 cup tahini (sesame-seed paste)
½ cup fresh lemon juice
½ cup water
salt, to taste
7 (6 inch) pita bread rounds

Steps:

  • Place the sliced beef into a flat, ovenproof dish. Stir the red wine vinegar, 1/2 cup olive oil, lemon juice, allspice, cinnamon, cardamom, black pepper, salt, tomatoes and garlic together in a bowl until well blended. Pour over the beef, turning slices to coat evenly. Cover, and refrigerate 4 hours.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Remove the cover from the dish with the beef, and cook in preheated oven until the meat is no longer pink, about 50 minutes. Cool slightly.
  • Meanwhile, make the parsley sauce by mixing the parsley, sweet onion, and 1/2 cup olive oil together in a bowl. Place the tomatoes in a bowl, and set aside until needed.
  • Make the tahini sauce by mixing the garlic, tahini, lemon juice, and water together in a bowl. Season to taste with salt.
  • To serve, place the pita bread rounds on serving plates. Spoon some of the meat mixture down the center of each pita round. Top with the parsley mix, tomatoes, and tahini sauce. Roll up the sides of the pita bread around the filling, and serve.

Easy beef shawarma recipe with homemade shawarma seasoning! Serve it up in pita pockets with my tomato and cucumber salad and a good drizzle of tahini sauce.

1 tsp ground coriander
1 tsp Sweet Spanish paprika
3/4 tsp ground turmeric
1/2 tsp ground cloves
1/2 tsp cayenne pepper
1/2 tsp ground cinnamon
1/4 cup extra virgin olive oil
1/4 cup white wine vinegar
1 lemon
1 1/2 lb beef flap steak or flank steak, (cut very thinly against the grain into bite size pieces )
Kosher salt and black pepper
4 garlic cloves, (minced )
1 medium yellow onion, (halved and sliced )
4 Pita bread loaves, (halved (8 pita pockets) )
3-Ingredient Mediterranean salad, ((or sliced tomatoes and cucumbers, and chopped parsley) )
1 Homemade Tahini Sauce,
Pickled Cucumbers, (optional. )

Steps:

  • In the bottom of large mixing bowl, add the shawarma spices. Add the olive oil, vinegar, and zest and juice of one lemon. Using a spoon, mix to combine.
  • Using a chef's knife, cut the flap steak against the grain into thin bite-size slices (no more than ¼-inch in thickness).
  • Add the sliced meat to the bowl. Season with kosher salt and black pepper. Add the garlic and onions. Using a pair of tongs, toss very well to make sure the meat is well-coated with the marinade. Set aside to marinate at room temperature for a few minutes (or, if you have the time, cover and refrigerate for a couple of hours).
  • Heat a large cast iron grill pan or skillet over high heat. Using a pair of tongs, add the meat pieces, spreading them as much as you are able. Cook over high heat for anywhere between 8 and 15 minutes, until the meat is fully cooked. (If you like less liquid in your pan and extra char on the meat, you'll likely cook it for about 15 minutes. And if your pan is not large enough, cook the meat in batches).
  • While the meat is cooking, prepare the pita pockets and fixings. Make my 3-ingredient Mediterranean salad with tomatoes, cucumbers, and parsley. Make the tahini sauce. And prepare your pickled cucumbers, if using.
  • Assemble the shawarma sandwiches. Open up your pita pockets and load them up with the beef shawarma, salad, and finish with a generous drizzle of tahini sauce. Serve immediately!

1/2 large white onion, roughly chopped
2 cloves garlic, smashed
1/2 small bunch fresh parsley
1 pound ground beef
1 small tomato, diced finely
1/4 teaspoon garam masala
1/4 cup toasted pine nuts
2 tablespoons lemon juice
Kosher salt
4 pieces pita (whole wheat or regular), cut into quarters
Extra-virgin olive oil, for brushing

Steps:

  • Preheat the oven to 400 degrees F.
  • In a food processor, combine the onions, garlic, and parsley until finely minced. Remove to a large bowl and add in the beef, tomato, garam masala, pine nuts, and lemon juice. Season with salt. Mix with your hands until well combined.
  • Arrange the pita quarters on a parchment-lined baking sheet. Fill each quarter with about 2 tablespoons of the meat mixture, flattening it out so the filling is even. Brush each quarter on both sides with a little olive oil. Sprinkle salt on top.
  • Bake for 20 minutes, turning once halfway through. Pitas should be browned and crispy.

1 (12-ounce) 1-inch thick New York strip boneless beef top loin steak
Kosher salt
Freshly ground black pepper
Olive oil
2 yellow onions, sliced in rings
1/2 teaspoon fresh thyme leaves
1 recipe Mustard Mayo, recipe follows
2 mini focaccia buns, sliced in 1/2
1/2 cup baby arugula
3/4 cup good mayonnaise
1 tablespoon Dijon mustard
1 tablespoon whole-grain mustard
2 tablespoons sour cream
1/8 teaspoon kosher salt

Steps:

  • Season the steak liberally with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a medium saute pan over high heat until it's almost smoking, then sear the steak on each side for 1 minute. Reduce the heat to low and cook the steak for about 7 to 10 minutes, turning once, until very rare in the middle. Remove to a plate, cover tightly with aluminum foil, and allow to sit for 10 minutes. Slice the steak into strips.
  • Using the same saute pan, heat 1 1/2 tablespoons of olive oil over medium heat. Add the onion and thyme and saute for 10 minutes, until the onions are brown and caramelized, stirring occasionally.
  • To assemble the sandwiches, spread a tablespoon of Mustard Mayo on the bottom half of each bun. Place a layer the steak strips on top of the mayo, sprinkle with salt and pepper, and top with the caramelized onion rings. Place the baby arugula on top of the onion rings, and cover the sandwiches with the top half of the buns.
  • Mustard Mayo:
  • Whisk the ingredients together in a small bowl. Serve at room temperature.
  • Yield: 1 cup

LAMB STEAK WITH LEBANESE SPICES



Lamb Steak With Lebanese Spices image

The Lebanese seven-spice mixture baharat (the Arabic word for spices) usually has a base of black pepper and allspice, along with coriander, cumin, clove, cinnamon, nutmeg, but that's not set in stone. Sometimes powdered ginger, cardamom and hot paprika are part of the mix. There are often more than seven spices, and sometimes fewer. It is an all-purpose spice blend, good for adding depth to stews, and as a rub for meat. London broil is what butchers call a boneless piece of meat from nearly any cut that is broiled or grilled and then sliced before serving, almost like a little roast. A butterflied leg of lamb has four such pieces, and grilling each separately is easier than cooking the whole boneless leg. You can buy chops instead, but they usually cost more.

1 butterflied lamb leg, about 1 1/2 pounds, or 4 lamb steaks or chops, 6 ounces each
Salt
2 teaspoons Lebanese baharat (seven-spice powder), see note
4 thinly sliced garlic cloves, plus 1/2 teaspoon grated garlic
Extra-virgin olive oil
1 1/2 cups plain yogurt, preferably whole-milk yogurt
4 Persian cucumbers, diced, about 1 cup
3 tablespoons chopped mint
Pinch of crushed red pepper
1 large bunch rainbow chard, about 1 1/2 pounds, cut in 2-inch-wide ribbons
Dill sprigs, for garnish (optional)

Steps:

  • Lay butterflied lamb leg on a cutting board and cut into 4 equal pieces, approximately 6 ounces each. Trim extraneous fat or gristle.
  • Place lamb on a baking sheet and season on both sides with salt and the seven-spice powder. Sprinkle meat with sliced garlic and drizzle with 1 tablespoon olive oil. Rub with your hands to coat, massaging the spices into the lamb. Cover bowl with plastic wrap and let stand at room temperature for at least 1 hour, or wrap and refrigerate overnight.
  • Put yogurt in a mixing bowl and season with salt. Stir in cucumbers, mint, grated garlic and crushed red pepper. Taste and adjust seasoning. Set aside.
  • Put a large cast-iron skillet or stovetop grill pan over medium-high heat. When the pan is hot, add lamb steaks in one layer and cook for about 5 minutes, until nicely browned. Turn pieces and cook for 3 to 4 minutes more, until juices appear on surface, for medium-rare. Transfer lamb to a cutting board and let rest for about 10 minutes before slicing. (Alternatively, broil lamb or grill over coals.)
  • While lamb is resting, put 2 tablespoons olive oil in a wide skillet over medium-high heat. When oil is hot, add chard and 1/4 cup water. Season lightly with salt. Cook for 1 to 2 minutes, until chard is just wilted. Remove chard from pan with a slotted spoon and transfer to a serving platter or individual plates.
  • Carve lamb on the bias in 1/8-inch-thick slices, against the grain, and place next to the chard. Garnish with dill sprigs, if desired, and serve with a spoonful of cucumber-yogurt sauce. Pass the rest of the sauce separately.
