CASSEROLE ITALIANO
This is a quick and easy casserole with enough flavor to please the adults and bland enough for the children to eat. I always cook half and freeze the other half for later. It makes an easy one dish meal with a bag of salad to bring a new mom or a family in need a dinner in a jiffy. It is also one of those meals that I usually have all the ingredients in the pantry already. If your looking for easy this is it.

Steps:
- Cook noodles al dente, set aside.
- Brown beef and drain.
- In large bowl mix tomato soup, and seasonings with only a single soup can of water.
- Add beef and noodles mix well.
- Place into casserole dish (or two).
- Cover with cheddar cheese.
- At this point you can freeze one casserole for later.
- Bake at 350 degrees until cheese is melted and casserole is heated through.

- Heat oven to 400°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
- Stir 1 1/4 cups pasta sauce into beef. Heat to boiling. Spoon into baking dish; top with mozzarella cheese.
- Meanwhile, in medium bowl, stir Bisquick mix, milk and Parmesan cheese until soft dough forms.
- Drop dough by 12 tablespoonfuls onto beef mixture.
- Bake uncovered 20 to 24 minutes or until topping is golden brown and toothpick inserted in topping comes out clean. Serve topped with additional warm pasta sauce.

- Brown beef and onion; drain off fat.
- Stir in the tomato sauce, parsley, oregano, basil, 1/4 teaspoon salt and pepper.
- Simmer uncovered for 10 minutes, stirring occasionally.
- Meanwhile, combine spinach, ricotta cheese and remaining 1/4 teaspoon salt.
- Spoon spinach mixture around edges of a 13x9x2 inch baking dish; pour beef mixture into center.
- Cut each mozzarella slice into 3 strips and arrange in a lattice pattern over meat.
- Bake at 375 degrees for 20 minutes.

The original recipe actually called for 1 can of tomato soup, 1/2 soup can of water, and 1/2 tsp. oregano instead of the spaghetti sauce. I substituted once when I realized I didn't have soup...

- 1. Brown the ground beef, onion and garlic, stirring frequently. Drain and place in a 1 1/2-qt casserole dish.
- 2. Add the basil and spaghetti sauce, and mix thoroughly. (You can add as much or as little of the sauce as you like to suit your own taste.)
- 3. Place the shredded cheese around edge. Bake at 350 degrees for 30 minutes or until cheese is melted and bubbly.

- In a 1 1/2 quart microwave-safe casserole crumble beef. Add celery, onion, and garlic.
- Micro-cook, covered, on 100% power for 4-6 minutes or till no pink remains and onion is tender, stirring once. Drain off fat.
- Stir in flour, sugar, Italian seasoning, pepper, and salt. Add tomato sauce, sweet pepper, and wine.
- Cook uncovered on high for five to six minutes or until thickened and bubbly, stirring every two minutes. Cook one minute more.
- Serve over fettuccine that has been twisted into nests with a long-tined fork. Garnish with cilantro. Pass parmesan cheese.
