When I first served this wonderful brunch casserole at a family reunion a few years ago, I think I wrote out at least a dozen copies of the recipe! My husband and I enjoy country living in the beautiful Blue Ridge Mountains.

8 ounces day-old Italian bread or French bread, sliced
1 pound bulk pork sausage, cooked and crumbled
8 large eggs
2 cups milk
1/2 teaspoon pepper
8 ounces sliced Swiss cheese
1/4 cup minced fresh parsley

Steps:

  • Line a greased 13x9-in. baking dish with bread. Sprinkle with sausage. Beat the eggs, milk and pepper; pour over sausage. Press bread down with a spatula to absorb egg mixture. Top with cheese and parsley. , Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before cutting.

This breakfast casserole is prepared ahead and allows you to enjoy family and friends while it bakes. Its wide appeal allows for use during holidays, showers, or just lazy weekends.

nonstick cooking spray
8 slices Texas toast, crusts removed, cubed
2 pounds bulk pork sausage
6 large eggs, beaten
2 cups milk
1 teaspoon dry mustard
1 teaspoon salt
½ teaspoon ground black pepper
2 cups shredded mild Cheddar cheese

Steps:

  • Spray a 9x13-inch pan with cooking spray. Place cubed bread into the bottom of the prepared pan.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Place on top of bread.
  • Mix eggs, milk, dry mustard, salt, and pepper together in a bowl and pour over sausage. Top with Cheddar cheese.
  • Refrigerate for 8 hours, or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until set, about 45 minutes. Place foil over top the last 15 minutes to prevent the cheese from hardening.
