LAZY COOK'S PORK CHOPS
Fast prep. and into the oven! Do take note that Sweet Thai Chilli Sauces do differ from one brand to the next: I have 3 brands at the moment and they are definitely not similar, and one is markedly hotter than the others. The Maille mustard should be available anywhere. This is a delicious, tangy sauce for pork, and thickens while baking. I find pork loin chops which are simply done in a pan are often hard -- but not when baked with this sauce. I cut most of the fat rind off and leave on only a strip of fat for juiciness.

- Heat oven to 325 deg F/160 deg Celsius.
- In a bowl, mix the chicken broth, honey, mustard, Thai sweet chilli sauce, ground ginger and black pepper. Whisk to mix well well. (You can eyeball the amounts, and when the sauce is mixed, taste it).
- Heat a film of oil in a pan.
- Brown the pork chops lightly on both sides, and remove to an oven dish.
- Sprinkle salt very sparingly over the chops.
- Ladle the sauce over the chops with a spoon.
- Bake open for about 45 minutes, turning chops over halfway through baking time.
- Nice with rice or mashed potatoes, and a fresh green vegetable.

Another great recipe that is WW friendly. Super easy - another 3 ingredient recipe that tastes like you've slaved over the stove all day long. I've made with tenderloin and this works as well. W W Points - 6 per chop with 1/4 cup sauce

- Preheat oven to 350ยบ.
- Spray baking dish lightly with cooking spray.
- Mix in baking dish the Whole Berry Cranberry Sauce & Onion Soup Mix.
- Place pork in baking dish and spoon some of the mixture over the top.
- Cover with foil and bake 30 minutes.
- Remove foil, turn chops and continue to bake uncovered additional 20-30 minutes or until pork is done & tender.
- Serve spooning sauce over pork.
- To freeze: Place chops in a freezer bag and seal. Mix together the soup and cranberry sauce. Place in a second bag and seal. Place both bags into a larger freezer bag. Seal, label and freeze.
- To serve: Thaw overnight in fridge. Proceed with cooking directions.

- 1. Preheat oven to 375 degree F. Spray a deep 9 x 13 casserole, or equivalent in size - such as small roaster, with non stick cooking spray.
- 2. Brown your seasoned chops lightly in oil over medium heat. Set aside.
- 3. Clean & slice veggies - I left the skin on my potatoes.
- 4. In a a medium sized bowl, whisk soups and broth until well combined. Now, starting with potatoes, layer evenly on bottom of dish. Next carrots, celery, turnips and onions. In that order. Salt & pepper.
- 5. Place browned chops on top. Trying not to overlap.
- 6. Pour soup mixture evenly over entire chops and veggies.
- 7. Cover with foil and bake for 1 hour & 15 minutes. Uncover and bake another 20 - 30 minutes, or until veggies test tender. Once vegetables are tender. Sprinkle top with french fried onions.
- 8. Place back in oven for another 10 minutes until onions are browning. Remove from oven, I let set for a few minutes before plating, it will be bubbling hot. Enjoy with some good crusty bread. Delicious!
LAZY DAY PORK CHOPS
Very simple and tasty, yet very lazy way to make pork chops or pork steaks. I make this about once a month or so. As often as my husband will let me get away with before he starts to complain. For pork steaks or more chops you might have to use an extra can of soup. I might be weird but I just love pork chops fixed this way! (Tastes better if the pork chop has some fat on it.)

- 1. Season chops with above spices then brown in oil.
- 2. Transfer chops to a 9X13in. baking dish.Making sure chops are laying flat in pan.
- 3. Arrange potatoes and tomatoes over and around chops.
- 4. Add 2 cups of water to pan used for browning chops.Heat and stir to get all the goodies off bottom of pan.
- 5. Use this liquid to make the stuffing,omit butter. Take the extra liquid and pour over meat and veggies.
- 6. Spread stuffing over all meat and veggies. Cover and bake at 350* for 45 minutes.

- Preheat oven to 350 degrees. Spray 9 x 9 baking dish with cooking spray.
- In mixing bowl combine half of soup, water and stuffing. Stir until moistened and mix in veggies.
- Season chops with seasonings.
- Pour stuffing mixture in bottom of casserole dish and top with pork chops.
- Top each chop with remaining soup.
- Bake uncovered for 30-35 minutes or until cooked through.
