1 cup wide egg noodles
½ pound ground beef
4 ounces bulk Italian sausage
1 ½ cups marinara sauce
½ cup cottage cheese
⅓ cup grated Parmesan cheese, divided
¼ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon Italian seasoning
½ cup grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.
  • Bake in the preheated oven until cheese is golden brown, about 25 minutes.

3/4 pound ground beef, cooked and drained
3-1/2 cups spaghetti sauce
9 uncooked lasagna noodles
1/4 cup water
Grated Parmesan cheese

Steps:

  • In a large bowl, combine the first seven ingredients; set aside. In another bowl, combine the spaghetti sauce and beef; mix well. , Spoon a fourth of the meat sauce into a greased 13x9-in. baking dish. Top with three noodles and half of the cheese mixture; repeat layers once. Top with a fourth of the meat sauce, remaining noodles and remaining meat sauce. Pour water around edges. Sprinkle with Parmesan cheese. , Cover and bake at 375° for 45 minutes. Uncover and bake 15 minutes longer or until noodles are tender. Let stand 10 minutes before cutting.

1 tablespoon olive oil
1 pound mild Italian sausage, casings removed
2 cups Classic Marinara Sauce, recipe follows
12 ounces mafaldine corte or farfalle pasta
8 ounces mini mozzarella balls
3/4 cup ricotta
1/4 cup grated Parmesan
Torn basil leaves, for topping
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

  • In a large pot of boiling water, cook pasta until tender but firm; drain.

1/2 cup grated Parmesan cheese (about 2 ounces)
1 pound lean ground beef
1/2 cup minced onion, optional
1 garlic clove, minced, optional
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
12 ounces frozen (not thawed) cheese ravioli
1 (14-ounce jar) spaghetti sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the beef with the optional onion, optional garlic, herbs, and salt and pepper in a large, ovenproof skillet (I use one that's made of castiron). When the meat is thoroughly cooked -- it will take 8 to 10 minutes -- drain off any fat and take everything out of the pan. Now put the still-frozen ravioli into the pan, breaking them up if they are clumped. Spread the ground beef mixture evenly over the ravioli, and ladle the spaghetti sauce evenly over the ground beef mixture. Over medium heat, without stirring, cook until the ravioli is heated through and beginning to brown on the bottom -- about 10 minutes.
  • Take the skillet off the heat, lay the provolone slices over the ground beef mixture, and sprinkle the whole thing with the Parmesan. Bake for 10 minutes, or until the cheese is melted. Serve hot.

1 (32 ounce) jar spaghetti sauce
1 (16 ounce) package cottage cheese

½ cup grated Parmesan cheese
1 cup water

Steps:

  • Cook sausage in a large skillet over medium heat. Drain excess fat. Reduce heat to low, stir in the jar of spaghetti sauce, and heat through. Set aside.
  • In a large bowl, combine cottage cheese, sour cream. Stir in dried parsley to taste.
  • Spoon 1/2 of the meat sauce into the bottom of a 9x13 inch baking dish. Because it's too much trouble messing with lasagna noodles and making those careful layers. The quality of the chosen sauce is key. A friend of mine couldn't figure out how she could make the same recipe I did but mine was better until we realized that she was buying a cheap, minimally seasoned spaghetti sauce. Use more or less sauce according to how wet your family prefers lasagna. Lazy Lasagna is easy to halve or double, just adjust the cooking time for the smaller or larger pan.

1 lb pasta shells or 1 lb macaroni
1 lb ground beef or 1 lb bulk Italian sausage, browned and drained
1 lb ricotta cheese
1 lb pre-shredded mozzarella cheese
1/2 cup parmesan cheese
1 -2 quart spaghetti sauce (I prefer Classico)
olive oil

Steps:

  • Cook pasta a bit less than fully done.
  • Grease a 9x13 pan with olive oil.
  • Layer 1/2 the amount each of pasta, ground beef, ricotta, parmesan, spaghetti sauce, and mozzarella in that order.
  • Repeat except for the mozzarella.
  • Draw a wooden spoon through the layers in an S-shaped pattern to mesh the layers without actually stirring them together.

1 teaspoon Italian seasoning

Steps:

  • Heat the oven to 350°. Put the ricotta cheese, Parmesan cheese and Italian seasoning in the bowl. Stir with the spoon until mixed.
  • Spoon 1 cup of the spaghetti sauce evenly over bottom of the baking dish. Top with 4 of the uncooked lasagna noodles.
  • Spread 1 cup of the ricotta cheese mixture over noodles, using the back of the spoon. Sprinkle with 1 cup of the mozzarella cheese.
  • Spread 1 cup of the spaghetti sauce over mozzarella cheese. Make more layers with 4 lasagna noodles, the rest of the ricotta cheese mixture and 1 cup spaghetti sauce. (Be sure the spaghetti sauce completely covers the noodles.) Sprinkle with the rest of the mozzarella cheese.
  • Bake 40 to 45 minutes or until lasagna is hot in center and cheese is melted. Use the pot holders to take pan out of oven it will be very hot and heavy. Let lasagna cool for 15 minutes. Cut into 4 rows by 2 rows, using the knife.

My recipe is getting tattered and worn so I thought I would post it here for safe keeping. Cooking time does not include setting overnight. I've posted the recipe to be gluten free, but you could easily use regular noodles in place of the brown rice lasagna.

1 (28 ounce) jar spaghetti sauce
3 pounds frozen cheese ravioli, thawed

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a skillet over medium heat, brown ground beef with onion; drain grease. Pour in spaghetti sauce and simmer 5 minutes.

6 cups Bolognese sauce, recipe follows
3 cups Bechamel sauce, recipe follows
1 pound freshly grated mozzarella
Freshly grated Parmigiano Reggiano cheese, for sprinkling
2 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
1 large carrot, finely chopped
1 onion, finely chopped
1 large celery stalk, finely chopped
2 dried chili peppers, crushed
Sprig fresh rosemary
1/2 pound ground beef
1/2 pound ground pork
1 cup white wine
3 cups tomato sauce or La Salsa di 5 Minuti, recipe follows
3 basil leaves, torn
Salt
4 tablespoons extra-virgin olive oil
1 medium onion, finely chopped
1 clove garlic, finely chopped
Dried chili peppers, crushed
1 (28-ounce) can peeled plum tomatoes, pureed
Salt
3 fresh basil leaves, torn
5 tablespoons butter
5 tablespoons flour
4 1/2 cups milk

Steps:

  • To assemble:
  • Preheat the oven to 400 degrees F. Cover the bottom of a deep baking dish with a layer of Bolognese sauce. Lay out the uncooked pasta sheets over the sauce until they cover the baking dish entirely. Cover the pasta with another generous layer of Bolognese sauce. The liquid from the sauce will cook the dried pasta so be sure to add enough sauce. Drizzle the bechamel sauce and sprinkle the mozzarella on top, until both are distributed evenly. Add another layer of dried pasta, laying the sheets in the opposite direction. Repeat the process of adding sauces, mozzarella, and pasta for another 2 to 3 layers or until two-thirds of the baking dish's depth is filled. Top off the last layer of sauces and mozzarella with a generous sprinkle of the Parmigiano cheese.
  • Place the pan in oven for approximately 40 minutes and let rest for 20 minutes before serving.
  • In a hot saucepan, melt the unsalted butter with the olive oil, and add the carrots, onion, celery, and chili pepper. Cook the ingredients over medium heat, until they are soft. Add a sprig of rosemary. Add the ground beef and pork, and cook until golden brown. Remove the rosemary sprig, and add the white wine. Let reduce. Add the tomato sauce or La Salsa di 5 Minuti, and let simmer on low heat for 1 hour. Before serving, add basil leaves and salt to season. Serve immediately.
  • Salsa di 5 Minuti:
  • Heat olive oil in a saucepan and add onion, garlic, and chili peppers. Gently fry ingredients together. Add pureed plum tomatoes to saucepan. Simmer on low to medium heat for 10 minutes.
  • Season with salt to taste. Add basil leaves at the very end.
  • Bechamel:
  • In a saucepan, heat up the milk, and bring to a gentle simmer. In another saucepan, melt the butter and immediately add the flour.
  • Lower the heat, and mix until the butter has absorbed all the flour and is the consistency of thick dough. Make sure the butter-flour mixture does not burn or brown.
  • Remove the saucepan from the heat, and whisk in a couple of ladles of heated milk into the butter-flour mixture. Whisk until the flour has absorbed all of the milk. Put the saucepan back on the burner over medium heat, and whisk in the remainder of the milk.
  • Continue whisking until the sauce thickens and becomes a creamy velvety consistency.

  • Brown beef with onion, garlic and salt; drain. Stir in spaghetti sauce, simmer until heated. Remove 1 cup meat sauce & set aside. Stir noodles into remaining sauce. 2 tablespoons extra-virgin olive oil
1 1/2 pounds ground lamb
A couple sprigs rosemary, leaves picked and finely chopped
1 tablespoon fresh oregano or marjoram, finely chopped or 1 teaspoon dried
1/2 teaspoon ground cloves
Salt and freshly ground black pepper
1 onion, finely chopped
1 carrot, peeled and finely chopped or grated
4 large cloves garlic, grated or finely chopped
1/4 cup tomato paste
2 cups chicken stock
1 cup dry white wine
Salt
1 pound wavy edge lasagna noodles, broken into large, irregular pieces
3 tablespoons butter
2 rounded tablespoons all-purpose flour
2 1/2 cups milk
Freshly ground black pepper
Freshly grated nutmeg
2 cups fresh ricotta cheese
A generous handful, freshly chopped mint and/or parsley (about 1/4 to 1/3 cup)
2 (10-ounce) boxes organic, chopped spinach, defrosted and drained
1 cup shredded or freshly grated Parmigiano-Reggiano cheese

Steps:

  • For the ragu: Heat 2 tablespoons extra-virgin olive oil in a Dutch oven over medium-high heat. When the oil smokes, pat the ground lamb dry and add to pan, brown to caramelize the meat, season with rosemary, marjoram, cloves, salt, and pepper. Once the meat has browned, add the onion, carrot, garlic and cook to soften 10 minutes more, stirring frequently. Stir in tomato paste, cook 1 minute or until fragrant. Stir in stock then wine, reduce heat to low and gently simmer.
  • In salted boiling water, undercook the pasta by 2 minutes from package directions. Reserve a cup of starchy pasta liquid.
  • Meanwhile, heat the butter in a saucepot over medium heat, whisk in 2 tablespoons flour, 1 to 2 minutes, whisk in the milk and simmer to thicken. Season the bechamel sauce with salt, pepper, and nutmeg, to taste.
  • Drain the pasta and add back to the pasta pot. Toss the pasta with the lamb ragu and some of the reserved starchy cooking water to loosen. Pour the pasta into a large casserole. Scatter the spinach around on top of pasta.
  • Combine the ricotta with mint and/or parsley, dot the pasta with ricotta evenly around the casserole. Pour the bechamel sauce in even layer around the casserole and top with grated cheese. Cool and store for make-ahead meal. Reheat in 350 degree F oven, covered, for 30 minutes then raise the heat to 425 degrees F and bake uncovered, until brown and bubbly, 15 to 20 minutes.
  • To serve immediately, transfer the casserole to a preheated 425 degree F oven and bake about 15 to 20 minutes, to brown.

1 lb ground beef or 1 lb ground pork
1 (28 ounce) can of your favorite spaghetti sauce
8 -10 dry lasagna noodles
1 (8 ounce) container cottage cheese
2 cups mozzarella cheese, shredded
1/2 cup water
parmesan cheese

Steps:

  • Brown meat in skillet, add spaghetti sauce and heat through.
  • In 3 quart oblong pan spread 1/3 of meat mixture to cover bottom, top with 4-5 uncooked noodles, half the cottage cheese and one cup of the mozzarella.
  • Spread on 1/3 of meat mixture, remaining noodles, remaining cottage cheese, remaining cup of mozzarella, then top with the final 1/3 of the meat mixture.
  • Right before baking pour 1/2 cup of water around inside edges of the pan, cover and bake 45 minutes at 375 degrees.
  • Remove cover, sprinkle with desired amount of Parmesan, and bake 10 more minutes.
  • Let stand 10 minutes before cutting and serving.

1 (16 ounce) package uncooked mafalda pasta (mini lasagne noodles)
2 tablespoons extra-virgin olive oil
¼ cup chopped onion
3 cloves garlic, chopped
2 (6 ounce) boneless, skinless chicken breasts, thinly sliced
1 (10 ounce) bag chopped fresh spinach
1 (8 ounce) can sliced black olives
1 ½ tablespoons fresh lemon juice
2 cups crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water, and bring to a rolling boil over high heat. Once the water is boiling, stir in the malfada pasta, and return to a boil. Cook the pasta, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 10 minutes. Drain well, and return pasta to the pot.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine olive oil, onion, and garlic in a large skillet. Cook and stir over medium heat until soft, about 3 minutes. Add the sliced chicken; cook, stirring, until chicken is lightly browned and no longer pink in the center, about 5 minutes. Mix in the spinach, black olives, and lemon juice. Cook until heated through, an additional 1 to 2 minutes. Stir the chicken mixture into the pasta, add the feta cheese, and mix well. Spoon into the prepared baking dish, and cover with aluminum foil.
  • Bake in preheated oven until the pasta is hot and the cheese is melted, about 30 minutes.

  • Assembly Directions:.
  • In a large bowl, mix cottage cheese, mozzarella cheese , eggs, parsley, onion powder, basil and pepper until well blended; set aside.
  • In a medium bowl, mix together spaghetti sauce and cooked ground beef. In a 9x13-inch glass baking dish or (2- 8x8-inch pans) spread 3/4 cup meat sauce on the bottom. Layer 3 uncooked noodles on top of the meat sauce. Next spread 1/2 of the cheese mixture and 1-1/2 cups meat sauce. Layer 3 more uncooked noodles on top of the meat sauce. Spread with remaining cheese mixture. Top with remaining 3 noodles and remaining meat sauce. Pour water around the outside edges.
  • Freezing Directions:.
  • Place dish in a 2-gallon freezer bag. Or, if you want to wrap it in foil, cover the top of the lasagna with wax paper or plastic wrap and then the foil, because the acid in the tomato sauce will leave small holes in the foil. Label, seal and freeze.
  • Serving Directions: Remove pan from freezer and thaw at least overnight in the refrigerator. Bake covered at 375°F for 45 minutes. Uncover and bake an additional 15 minutes. Let stand 10 minutes. Serve with grated Parmesan cheese, if desired. To bake from the frozen stage, add 30 minutes to the total baking time.

  • Preheat oven to 450 degrees.
  • Brown and strain beef.
  • Cover the bottom of a 9 x 13 pan with sauce.
  • Layer 1/2 of the frozen ravioli, 1/2 of the beef and 1/3 of the cheese in the pan.
  • Pour another layer of spaghetti sauce and repeat layers. Save some cheese for the top, if you wish.
