GRANDMA MAX'S LAYERED JELLO SALAD



Grandma Max's Layered Jello Salad image

This is one of my favourite memories from going to my Grandma's house. She would make this every Thanksgiving and Christmas holiday and there were hardly any leftovers. My Grandma passed away in 2003 and now her recipe has become a staple in my house during those occasions. I hope you enjoy it has much as my family does!

1 (3 ounce) package cherry gelatin (or other colour)
1 (3 ounce) package lemon gelatin
1 (398 ml) can crushed pineapple
1 (3 ounce) package Dream Whip
1 (250 g) package Philadelphia Cream Cheese

Steps:

  • Prepare the cherry jello powder according to the directions on the package in a glass mixing bowl. Put it in the fridge and let it set.
  • Once set, prepare the dream whip according to the package and cut the cream cheese into small chunks, (if you're not a fan of chunks, you could whip it all together). Mix the cream cheese into the dream whip and layer it on top of the cherry jello. Let it set in the fridge.
  • *You could save yourself time if you do step 1 and step 2 together and let both set in the fridge at the same time.*.
  • Drain the crushed pineapple and rinse with cold water approximately 3-4 times to remove most of the acidic juice. Make sure to squeeze out the excess water with your hands.
  • Make the lemon jello powder according to directions and let it partially set.
  • Mix the pineapple into the lemon jello and layer over top of the dream whip mixture.
  • Let set in the fridge and serve. (For the best results, put saran wrap over the salad and let it set overnight).
  • Note: The dream whip should be one of the small envelopes.

This is a variation on the traditional cranberry/pineapple salad; red and green layers with a cream cheese layer in between. My mom makes this at Christmas and/or Thanksgiving and I can't stop eating it. Would be good for potlucks, too. Yum!

1 (6 ounce) package cranberry Jell-O gelatin or 1 (6 ounce) package cherry gelatin
1 (16 ounce) can whole berry cranberry sauce
1 (6 ounce) package lime Jell-O gelatin
1 (20 ounce) can crushed pineapple, undrained, divided
1 cup sour cream (8oz container)
1 (8 ounce) package cream cheese
2 cups boiling water, divided

Steps:

  • Dissolve red jello in 1 cup boiling water and stir in half the can of pineapple and all of the can of whole berry cranberry sauce.
  • Spread in bottom of 9x13 glass dish and chill until partially set.
  • Combine sour cream and cream cheese and spread over red jello layer.
  • In a separate bowl, dissolve green jello in 1 cup boiling water and stir in the remaining half can of pineapple; chill until partially set.
  • Spread over the top of the cream cheese layer.
  • Cover with plastic wrap and refrigerate overnight or several hours until completely set.

LAYERED MANDARIN JELLO SALAD (ALMOST SUGAR FREE)



Layered Mandarin Jello Salad (Almost Sugar Free) image

This is a new recipe I created for a guilt free dessert/salad that you'd never guess is virtually sugar free. It has alternating layers of cool, refreshing mandarin oranges in orange jello, and coconut flavored cream cheese. For a pretty presentation, be sure to assemble it in a clear glass bowl/dish, sprinkle with coconut and garnish with a few orange segments. Hubby said it was too pretty to eat, but he did and loved it! He said it reminded him of a Dreamsicle. If you're not concerned about sugar, you could use regular jello and real sugar in the same proportions.

Number Of Ingredients 9

1 box(es) (sm.) sugar free orange jello
1 cup(s) boiling water
1 cup(s) cold water
1 can(s) (sm.) mandarin orange segments in natural juice, drained
8 ounce(s) cream cheese, softened
1/3 cup(s) granulated artificial sweetener
1/3 cup(s) heavy whipping cream
1/2 teaspoon(s) coconut extract
1/4 cup(s) shredded coconut

Steps:

  • Pour gelatin into a medium mixing bowl.
  • Pour one cup boiling water over gelatin, stirring until completely dissolved.
  • Add one cup very cold water, stirring well.
  • Pour 1/2 of the jello mixture into medium (1 qt.) clear glass serving bowl or 8"x8" pyrex dish.
  • Add 1/2 can of drained mandarin orange segments; stir to distribute evenly.
  • Reserve 5 orange segments for decoration; refrigerate all remaining oranges.
  • Place bowl in refrigerator until jello is set (about 1 1/2 hrs.)
  • Cover remaining jello with foil or plastic wrap; set aside on counter until needed later for the second jello layer.
  • After jello has set for 1 1/2 hours, make the cream cheese layer by beating cream cheese with hand mixer until creamy.
  • Slowly add 1/3 cup granulated artificial sweetener, beating until combined.
  • Add cream and 1/2 teaspoon coconut extract , beating until smooth and creamy.
  • Top the set jello with 1/2 of the cream cheese mixture by dropping dollops with a spoon, then carefully smoothing to the edges to completely cover jello.
  • Place remaining oranges on cream cheese layer.
  • Carefully pour remaining room temperature jello over oranges and cream cheese layer.
  • Cover remaining 1/2 of cream cheese mixture with foil or plastic; set aside on counter until needed for last layer.
  • Refrigerate jello dish until jello is set (about 1-1 1/2 hrs.)
  • When final layer of jello is set, top the set jello with remaining 1/2 of the cream cheese mixture by dropping dollops with a spoon, then carefully smoothing to the edges to completely cover jello.
  • Sprinkle shredded coconut over top; add remining orange segments for decoration.
  • Cover and refrigerate until served. May be doubled, just use a 9"x13" dish.

This comes from my 'Nanny's' (grandma) kitchen. I make it every Holiday season and it brings back memories as this dish was my absolute favorite sweet side dish. I think it still is. My mouth waters when thinking about it. It seems simple but it packs a great flavor.

1 large mixed fruit jello
1 can(s) pineapple pieces - drained
1 small sour cream
2 bananas
1 c whole pecan halves

Steps:

  • 1. Prepare jello per box directions. When dissolved in the pot, add can of drained pineapple and pecans. Let stand for a couple of minutes.
  • 2. Add half of the mixture to an 8X8 pan. Put in refrigerator or freezer (if you want it to set faster-but watch it close you don't want to freeze it) until set, leaving remaining jello mixture on the stovetop with heat off.
  • 3. Once set, layer sliced bananas over this to make one layer. Add entire thing of sour cream over bananas. Then pour the rest of the remaining liquid jello over this. Set in fridge.
