LAVASH CRACKER BREAD



Lavash Cracker Bread image

This is identical to the cracker bread sold at delis in large grocery stores that costs six dollars for three big rounds. You can make it for pennies! I fell it love with it as an appetizer with Harvarti cheese melted on it but with the price of the cheese and lavash we didn't have it much.

1 cup lukewarm water
¼ cup whole wheat flour
1 (.25 ounce) envelope active dry yeast
1 teaspoon salt
3 cups all-purpose flour

Steps:

  • In a large bowl, stir together the water, whole wheat flour, and yeast until moistened. Mix in the salt and 1 cup of all-purpose flour. Gradually mix in the rest of the flour using a mixer with a dough hook attachment or wooden spoon.
  • When the dough comes together, knead in your mixer or on a floured surface for 8 to 10 minutes to make an elastic ball. Add more flour or water if needed to keep dough from getting sticky or too stiff. Pour a little bit of oil in the bowl and turn the dough to coat. Cover and let rise in a warm place until doubled in size, about 1 hour.
  • Punch down the dough and divide into 30 pieces about the size of small walnuts. Rolling the dough into a long log helps to divide it evenly. Roll each piece into a ball and cover with a damp kitchen towel for 30 minutes to rest.
  • Preheat the oven to 500 degrees F (260 degrees C). Place a baking sheet on the center rack of the oven so it can preheat at the same time. Do not grease.
  • Roll each ball into a circle about 8 inches across. The dough should be paper thin, almost translucent. If they are too thick, they will bubble up like pita breads.
  • Pull out the oven shelf and place as many crackers on your baking sheet as you can fit, 2 or 3. Close the oven and bake for about 3 minutes. The crackers should be lightly browned on the top with small bubbles. You may have to adjust your thickness for the next batch.

14 1/2 ounces all-purpose flour, approximately 2 1/2 cups plus extra for rolling
1 teaspoon table salt
1/2 teaspoon granulated sugar
2/3 cup water, plus additional if needed
1 whole egg
5 tablespoons unsalted butter, divided, melted, and cooled slightly

Steps:

  • Place the flour, salt and sugar into a medium bowl and whisk to combine. In a small bowl whisk together the water, egg, and 2 tablespoons of the butter. Add the egg mixture to the dry ingredients and stir until the dough comes together, adding additional water if the dough is dry. Knead the dough in the bowl 5 to 6 times. Turn the dough out onto the counter, divide into thirds, cover with a tea towel and allow to rest for 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Lightly butter the back of a half sheet pan using some of the remaining butter. Place the sheet pan, upside down on a surface that will prevent sliding. Working with one ball at a time, place the dough ball onto the back of the sheet pan and roll the dough out to an even 1/8-inch thickness. Gently stretch the edges of the dough so they fall slightly below the edge of the pan and hold the dough in place. Lightly brush the dough with butter, place on the middle rack of the oven and bake for 10 to 15 minutes or until golden brown. Remove the lavash to a cooling rack. Repeat with the remaining dough, on a cooled pan. Break each sheet into shapes and sizes as desired. Once completely cooled, store in an airtight container for up to 5 days.

LAVASH PIZZA WITH TOMATOES, MOZZARELLA AND GOAT CHEESE

This pizza, made with the Iranian flatbread called lavash, is utterly simple to throw together, and I love the way the flavor of the tomatoes intensifies during their short time in the oven. Assemble the pizza just before baking.

1 9-by-12-inch piece of lavash
1/2 cup, tightly packed, grated or shredded fresh mozzarella (2 ounces)
2 plum tomatoes, sliced
1/4 red onion, sliced (optional)
1/2 cup crumbled goat cheese (2 ounces)
1 to 2 teaspoons fresh thyme
Salt
Freshly ground black pepper
1 tablespoon extra-virgin olive oil

Steps:

  • Heat the oven to 375 degrees, preferably with a pizza stone in it.
  • Place the lavash on a baking sheet. Sprinkle the mozzarella over the lavash, and top with the tomato slices and onion. Arrange the goat cheese over and between the tomato slices. Sprinkle with thyme, salt and pepper. Drizzle on the olive oil.
  • Bake 15 to 20 minutes, until the lavash is crisp and dark brown on the edges. Remove from the heat and serve; or allow to cool slightly, then serve. Cut with a pizza wheel or scissors.

This lavash recipe makes a forgiving dough that can bend to your schedule: You can make the first step and the final product in about 6 hours, or you can spread the work out over the course of a couple days.

Number Of Ingredients 9

Old Dough:
½ cup [70 g] all-purpose flour
¼ cup plus a scant 1 Tbsp [70 ml] lukewarm water
¼ tsp instant yeast
Dough:
1 cup [240 ml] lukewarm water
1 Tbsp sunflower oil or other neutral oil
2 tsp kosher salt
3 cups plus 2 Tbsp [440 g] all-purpose flour, plus more for dusting

Steps:

  • To make the old dough, using your hands or a rubber spatula, squish together the flour, water, and yeast in a bowl until it forms a thick paste. Scrape the paste into a small, lightly oiled container, cover, and let it sit out for 1½ to 2 hours, or refrigerate overnight and bring to room temperature for at least 2 hours before using. When ready, the ball will have doubled in volume.
  • To make the dough in a stand mixer:
  • In the bowl of a stand mixer, combine the old dough, water, oil, and salt. Squish the old dough with your hands to break it up in the water; it doesn't have to be perfectly mixed in.
  • Fit the stand mixer with the paddle attachment and add a third of the flour. Mix on low speed until the dough looks like pancake batter. Add the remaining flour and mix on low speed until incorporated. Remove the paddle attachment, pulling off any dough stuck to it. If there is flour at the base of the bowl, use your hands to press the dough into the flour. Cover the bowl with a kitchen towel and let the dough sit for 20 minutes to allow the flour to hydrate.
  • Remove the towel and attach the dough hook to the stand mixer. Mix the dough on medium speed until the dough releases from the sides of the bowl without sticking and feels smooth to the touch, about 4 minutes. Turn the mixer off and reposition the dough to the center of the bowl if it seems to get stuck on one side of the bowl.
  • To make the dough by hand:
  • Combine the old dough, water, oil, and salt in a large bowl and mix together, squishing the old dough into the water with your hands. Stir in the flour gradually with your fingers until a crumbly dough forms, then knead it a few times in the bowl by folding the dough over itself and pressing it down into the bowl. Cover the bowl with a kitchen towel and let the dough rest for 20 minutes.
  • Dust the counter lightly with flour and place the dough on top. Begin kneading by stretching and folding the dough over itself until it is smooth to the touch, 5 to 7 minutes.
  • To finish and shape the dough:
  • Lightly oil an 8 cup [2 L] glass Pyrex or a large glass bowl and place the dough inside. Cover the bowl with a lid, a plate, or plastic wrap, and let it rest for 3 hours or until doubled in volume. Or refrigerate overnight and let the dough come to room temperature for at least 2 hours before portioning.
  • To portion and shape the dough, dust the counter lightly with flour and place the dough on top. Using a bench scraper or knife, cut the dough into eight pieces about 3.5 oz [100 g] each.
  • To shape the dough, cup the palm of your hand over one portion at a time and move your hand in a circle. The friction from the counter will help form the dough into a ball. If there is too much flour on the surface and the dough is sliding around, give the counter a spritz of water and try again. Lightly oil a rimmed tray and place the dough on the tray, ensuring that the portions are not touching. Cover with a kitchen towel or plastic wrap lightly coated with oil. Leave out for 1 to 1½ hours, or until puffy, or refrigerate for up to 3 days. If you refrigerate the dough, use plastic wrap to cover it and expect it to take an hour or two to return to room temperature before it is ready to be rolled out.
  • Dust the counter lightly with flour. Pat a portion of dough into an oval with your fingertips. Using a rolling pin and moving back and forth, roll the dough as thinly as possible into an oval about 13 by 9 in [33 by 23 cm]. If the dough resists stretching, let it relax and start working on another portion before returning to it. You can also gently stretch the dough with your hands to correct the shape. It doesn't have to look perfect.
  • To griddle lavash on overturned wok:
  • Place a carbon-steel wok upside down over a burner. Have a pair of tongs handy.
  • Heat the wok over high heat for 1 minute or until a sprinkle of water instantly evaporates.
  • Drape the dough over the wok. Cook for 1 minute or until you can lift it easily from the wok with tongs and it has puffed slightly and blistered. Turn the dough over to briefly cook the other side, no more than 30 seconds. For extra browning, flip it over for another 30 seconds.
  • Transfer the lavash to a half-sheet pan and cover with a dry kitchen towel while you cook the rest of the dough. In between batches, turn off the burner. The wok heats up quickly, and it will get too hot if the burner is left on.
  • To griddle lavash on cast-iron griddle:
  • Place a 20 in [50 cm] cast-iron griddle over two burners. Heat the griddle over medium-high heat for a few minutes or until a sprinkle of water instantly evaporates.
  • Drape the dough over the griddle. Cook for 1 minute or until you can lift the dough easily with tongs and it has puffed slightly and blistered. Turn the dough over to briefly cook the other side, no more than 30 seconds. For extra browning, flip it over for 30 more seconds.
  • Transfer the lavash to a half-sheet pan and cover with a dry kitchen towel while you cook the rest of the dough. In between batches, keep the griddle turned on, but monitor its heat so it doesn't get too hot.
  • To grill lavash:
  • Have tongs, a pastry brush, a small bowl of vegetable oil, and 2 half-sheet pans ready. Coat one of the pans lightly with oil.
  • Heat a gas grill over medium-high heat or prepare a charcoal grill for direct-heat cooking. Ensure that the grill grates are clean. The grill should be hot enough that you can only hold your hand over the grates for 3 to 5 seconds. Place a sheet of dough onto the oiled pan and brush oil on top. Drape the oiled dough over the grill. Cover the grill and cook for 25 seconds. Uncover the grill. Using tongs, turn the lavash over and let it cook for another 25 seconds, uncovered, or until evenly blistered and puffed in parts.
  • Transfer to the clean half-sheet pan and cover with a dry kitchen towel while you cook the rest of the dough.
  • Eat the lavash soon after making it or store it in plastic bags to keep the bread pliable. It's okay if it dries out and turns brittle; just rehydrate it by misting the lavash with water and covering it with a towel to let it soften. Soon after, it should be pliable enough to roll up without cracking. If it's still cracking, mist with more water.

Olive oil
2 small Japanese eggplants, halved
Salt and freshly ground black pepper
Spicy Hummus, recipe follows
12 ounces crumbled feta cheese
Red Chile Oil, recipe follows
Chopped fresh mint, for garnish
1 1/2 cups dried chickpeas, cooked until soft
2 cloves garlic, chopped
1/4 cup tahini
1/4 teaspoon cayenne pepper
1/2 teaspoon ground cumin
1/2 lemon, juiced
1/2 cup to 3/4 cup olive oil
Salt and freshly ground pepper
3 tablespoons chopped parsley leaves
2 ancho chiles, stemmed and chopped
1 New Mexican red chili, stemmed and chopped
1 teaspoon chile de arbol powder
1 cup canola oil
Salt

Steps:

  • Preheat the grill to high. Brush the lavash with oil on both sides. Grill until golden brown on both sides. Brush the eggplant with oil and season with salt and pepper. Grill the eggplant, cut-side down, until golden brown. Turn the eggplant over and grill until just cooked through. Remove from grill and cut into 1/4-inch thick slices.
  • Spread the hummus over the bread, top with the eggplant, and then the feta. Grill, with the cover down for 2 to 3 minutes, or until cheese is melted. Remove from the grill, drizzle with the red chile oil and sprinkle with mint.
  • Put the chickpeas, garlic, and tahini in the work bowl a food processor. Pulse until it becomes paste-like, adding a few tablespoons of water, if needed. Add the cayenne, cumin, and lemon juice, and pulse again until combined. With the motor running, slowly add the olive oil until emulsified. Add the parsley and pulse until just combined. Season with salt and pepper, to taste. Transfer to a small bowl.
  • Place all ingredients in a blender and blend for 5 minutes. Strain into a small bowl.

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line 2 baking sheets with aluminum foil.

5 slices center-cut bacon
One 12-ounce bag frozen artichoke hearts, thawed
1 tablespoon canola oil
2 garlic cloves, minced
1/4 teaspoon red chile flakes
One 15-ounce container part-skim ricotta
1 tablespoon lemon zest
1/4 cup grated Parmesan, plus more for sprinkling
1/2 teaspoon kosher salt, plus additional as needed
Freshly ground black pepper
3 tablespoons freshly squeezed lemon juice
1 sheet lavash
1 cup baby arugula
Olive oil, for drizzling

Steps:

  • Preheat the oven to 425 degrees F and line a sheet tray with parchment paper.
  • Cook the bacon in a large saute pan over medium-high heat until it is golden and crispy, about 3 minutes per side. Transfer the bacon to a paper towel-lined plate to drain, then chop into bite-sized pieces. Remove all but 1 tablespoon of the bacon grease and add the artichoke hearts. Cook over medium heat until they are golden brown, 3 to 4 minutes. Add the canola oil, then the garlic and chile flakes. Saute until the garlic is fragrant, another minute. Remove from the heat and set aside.
  • Combine the ricotta, lemon zest, Parmesan, salt, pepper and 2 tablespoons lemon juice in a medium bowl and stir until smooth. Trim the lavash as necessary to fit on a sheet tray and spread the ricotta mixture in an even layer over the top. Top with artichokes and bacon and bake until the cheese is melted and the lavash has crisped at the edges, about 10 minutes.
  • Toss the arugula with olive oil and the remaining tablespoon lemon juice and season with salt and pepper. Drizzle the flatbread with olive oil, then top with arugula and cut into slices.

LAVASH PIZZA WITH ONIONS AND ANCHOVIES

This is inspired by the Provençal onion pizza called pissaladière. Omit the anchovies if you're watching your sodium intake or you're just not a fan.

2 tablespoons extra virgin olive oil
1 pound onions (2 medium onions), cut in half and sliced very thin across the grain
Salt
freshly ground pepper
2 garlic cloves, minced
1/2 bay leaf
1 teaspoon fresh thyme leaves, or 1/2 teaspoon dried thyme
1 1/2 teaspoons capers, drained, rinsed and finely chopped or puréed in a mortar and pestle
1 9-by-12-inch lavash
6 anchovy fillets, soaked in water for five minutes, drained, rinsed and dried on paper towels

Steps:

  • Heat 1 tablespoon of the olive oil in a large, heavy nonstick skillet over medium heat. Add the onions. Cook, stirring, until they begin to sizzle and soften, about three minutes. Add a generous pinch of salt and the garlic, bay leaf, thyme and pepper. Stir everything together, turn the heat to low, cover and cook slowly for 45 minutes to an hour, stirring often. The onions should melt down to a thick, golden brown, almost jammy consistency. Stir in the capers, and taste and adjust seasonings. If there is liquid in the pan, cook over medium heat, uncovered, until it evaporates.
  • Heat the oven to 375 degrees, preferably with a baking stone in it. Place the lavash on a baking sheet. Spread the onions over the lavash in a thin, even layer. Cut the anchovies in half and arrange in X's on top of the onions. Drizzle the remaining olive oil over the onions, and place the pizza in the oven. Bake 15 minutes until the edges of the crust are crisp and brown. Remove from the heat. Serve hot, warm or room temperature.

Two 9-by-12-inch whole wheat lavash breads
2 tablespoons extra-virgin olive oil
1 cup finely grated Parmesan
1 cup tomato-basil sauce, such as Giada De Laurentiis for Target Tomato-Basil Sauce
1/4 cup (2 ounces) creamy gorgonzola, at room temperature
1/4 cup (2 ounces) mascarpone, at room temperature

Steps:

  • Place an oven rack in the center of the oven and preheat to 350 degrees F.
  • For the chips: Brush the breads with the oil using a pastry brush and sprinkle with the Parmesan. Cut each bread into 32 triangles and arrange in a single layer, cheese-side-up, on 2 baking sheets. Bake until light golden, 10 to 12 minutes.
  • For the dip: Bring the tomato-basil sauce to a simmer over medium heat in a medium saucepan. Cook for 5 minutes. Remove the saucepan from the heat and whisk in the gorgonzola and mascarpone until incorporated. Pour the dip into a serving bowl and serve the chips alongside.

6 large thin slices rare roast beef (about 1/4 pound total)
16 fresh basil leaves
8 arugula leaves
Garnish: arugula and fresh basil leaves
Accompaniment: spicy tomato chutney or bottled tomato chutney

Steps:

  • Quarter lavash and spread 1 side of each quarter evenly with 1 tablespoon chutney, leaving a 1/2-inch border all around. On each quarter arrange about 1‚ slices roast beef in one layer over chutney and season with salt and pepper. Spread 1 tablespoon chutney evenly over roast beef and top with basil, arugula, and salt and pepper to taste. Steps:

  • Preheat broiler. Place lavash on large baking sheet; brush with 1 1/2 tablespoons oil. Broil until lavash just begins to crisp, about 1 minute.
  • Reduce oven temperature to 450°F. Turn lavash over on baking sheet, broiled side down. Brush with remaining 1 1/2 tablespoons oil. Spread with olives; sprinkle with Monterey Jack cheese and feta cheese, then mushrooms, onion, bell pepper, and tomatoes. Sprinkle with salt and pepper. Bake until pizza is heated through and cheeses melt, about 10 minutes. Cut into squares.

2 slices lavash bread
2 -4 tablespoons olive oil, for brushing the lavash
kosher salt, to taste
fresh ground black pepper, to taste
1 cup canned chick-peas, rinsed and drained
1/4 cup tahini paste, sesame paste
3 tablespoons extra virgin olive oil
2 garlic cloves
kosher salt, to taste
1 tablespoon ground cumin
1/2 teaspoon red chili pepper flakes
1 to 2 lemon, juice of
1/4 cup kalamata olive, pitted, crushed
1/2 cup feta cheese, crumbled
1/2 cup sun-dried tomato, slivers
1 -2 teaspoon oregano
olive oil, for drizzling

Steps:

  • Preheat oven to 400 degrees F.
  • Brush the lavish bread with the oil and sprinkle with all the spices over it and but in oven for a few minutes but watch so it doesn't burn.
  • Remove the lavash and add the topping.
  • Place back into the oven to just warm through.
  • Meanwhile, place all the hummus ingredients in a food processor and blend until mixed; taste for adjustment.
  • Remove the "pizza" and serve along with the hummus.
  • Enjoy!

2 pieces lavash, each about 9 by 10 inches
2 teaspoons extra-virgin olive oil
Freshly ground pepper

Steps:

  • Preheat oven to 425 degrees. Put lavash on a baking sheet; brush each piece with 1 teaspoon oil, and generously season with pepper. Toast in oven until crisp and golden, about 10 minutes. Let cool completely on sheet before breaking into pieces to serve.

1 sheet whole wheat or regular lavash bread
1 tablespoon olive oil
3 tablespoons freshly grated Parmesan cheese, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush lavash with olive oil. Sprinkle with Parmesan cheese. Using a very sharp knife or a pizza cutter, cut lavash into strips, squares, or triangles. Place lavash pieces on a baking sheet.
  • Bake in the preheated oven until crisp, about 10 minutes. Remove from oven to cool completely; store in an airtight container.

1 1/3 cups water, tepid (barely warm, about 105F)
1/4 cup olive oil
3 tablespoons sugar
1 package quick-rising yeast
2 teaspoons salt
4 cups all-purpose flour
1/2 cup milk (for topping)
to taste sesame (for topping)

Steps:

  • Place the tepid water in your electric mixing bowl and add the olive oil, sugar, and yeast. Using the batter blade let the electric mixer blend these very well.
  • It will take about 5 minutes on low speed.
  • Stir in the salt. Gradually add 2 cups of the flour and beat on low speed until a thick and smooth batter forms.
  • Change the blade to a bread dough hook and knead in the additional 2 cups of flour.
  • If you do not have a heavy mixer such as a KitchenAid, incorporate the flour with a wooden spoon and finish the kneading by hand.
  • Kneading should take about 10 minutes in the machine, 20 minutes by hand.
  • Place the dough on a plastic countertop and cover with a large stainless-steel bowl.
  • Allow the dough to rise until double in bulk, about 1 1/2 hours.
  • Punch the dough down and divide into 8 pieces.
  • Let stand, covered, 15 minutes.
  • Roll out each piece of dough into a 12-inch-diameter circle. Working with 2 pieces of dough at a time, arrange breads on ungreased baking sheets.
  • Brush with milk and sprinkle sesame seeds over tops.
  • Pierce with a fork many times, all over.
  • Bake on the lowest racks in the oven, at 375F, for 8-10 minutes, or until light brown.
  • Rotate the pans in the oven from top to bottom, to insure even browning.
  • Serve dry or wet. (To wet, hold the cracker under running water until lightly moistened all over, and then wrap in a moist towel for 10-15 minutes.) If the cracker is too dry to roll, it will crack.
  • Sprinkle with a little more water and let stand a few minutes.
  • If it is too wet, cover with a dry towel and let it stand.

The following is the baking instructions to make lavash using the dough made with Recipe #309834 or Recipe #387518. Now you can make your own lavash, whenever you need it! The only special equipment needed is a baking stone. Recipe #309834 recipe will make four pounds of dough--the recipe below will use approximately 1/2 pound of the dough. There are a variety of topping that can be put on the Lavash, including caraway seeds, paprika, pretzel salt, fennel. Go ahead and experiment!

4 ounces refrigerated bread dough (see Recicpe #387518 or No-Knead Flatbreads - Master Recipe (Pizza, Naan, Focaccia))
1 tablespoon sesame seeds
1 teaspoon cornstarch
1 tablespoon water

Steps:

  • Refer to Recipe #309834 or Recipe #387518 for instructions to prepare the dough:.
  • To prepare Lavash:.
  • Make a paste with cornstarch and water in a small bowl (adding more water if necessary).
  • Twenty minutes before baking, preheat the oven to 450 degrees with a baking stone. Placing one shelf in the center of the oven and the other shelf below.
  • Place an empty broiler pan (I use my cast iron skillet) on the lower shellf.
  • Just before baking, dust a pizza peel with flour.
  • With wet hands, pull up one end of the refrigerated dough (Recipe #309834 or Recipe #387518 ). Using a serrated knife, cut off a 1/2-pound, or orange-size, piece of dough.
  • (Note: This should be enough to make two lavash, depending on the thickness you roll out the dough. If you prefer your lavash to be very thin then split the dough before proceeding.).
  • Hold the mass of dough in your hands; if it sticks, add a little flour until the dough no longer sticks to your hand.
  • Gently stretch the surface of the dough on all four sides, rotating the ball a quarter-turn as you go. Most of the dusting flour will fall off.
  • The dough ball should be smooth and cohesive and take no more than 30 to 60 seconds to shape.
  • Place the dough on a flour-dusted pizza peel and shape into a flat round, using your hands and a rolling pin.
  • Continue rolling out until you reach a uniform thickness of 1/16 to 1/8 inch.
  • Brush the top surface with the cornstarch wash and sprinkle the sesame seeds.
  • Prick the surface all over with a fork to allow steam to escape, this will help prevent puffing.
  • Immediately slide the lavash directly on the hot stone.
  • Pour 1 cup of hot tap water into the broiler tray and quickly close the oven door.
  • For a slightly chewy version, bake for about 5 minutes or until lighlly browned.
  • For a crisper cracker bread, bake until deep brown and crispy, approximately 7 minutes.
  • Unlike hard-crusted bread, lavash, once cooled, can be stored in a plastic bag or an airtight containeerstorage.

1 English cucumber
1 small red onion
1/2 cup sour cream
1 1/2 tablespoons chopped drained capers
2 teaspoons drained bottled horseradish
a 16- to18-inch round, very thin, pliable lavash* such as Damascus mountain shepherd bread
6 thin slices smoked salmon (about 6 ounces total)
16 fresh chives
1 cup watercress sprigs
Garnish: watercress sprigs and fresh chives
*available at Middle Eastern markets,specialty foods shops, and some supermarkets

Steps:

  • Halve and seed cucumber. Cut cucumber into sixteen 5-by 1/4-inch-thick sticks. Halve onion lengthwise and cut crosswise into thin slices.
  • In a small bowl stir together sour cream, capers, horseradish, and salt and pepper to taste.
  • Quarter lavash and spread 1 side of each quarter evenly with 1 tablespoon sour cream mixture, leaving a 1/2-inch border all around. On each quarter arrange about 1 1/2 slices salmon in one layer over sour cream mixture and spread 1 tablespoon sour cream mixture evenly over salmon. On each quarter arrange 4 cucumber sticks, about 3 onion slices, 4 chives, and one fourth watercress parallel to 1 cut edge and season with salt and pepper. Tightly roll up each lavash around filling into a cone and wrap individually in wax paper and plastic wrap. Sandwiches may be made 6 hours ahead and chilled, wrapped in plastic wrap.
  • Garnish sandwiches with watercress and chives.

These are wonderful sandwiches to make for a special occasion lunch. The fresh watercress just turns it from an ordinary smoked salmon sandwich to something really memorable. These go well with a fruit salad and champagne.

1 large English cucumber, sliced thin
1/2 large red onion, sliced thin
1/2 cup sour cream
1/2 cup cream cheese
2 tablespoons capers, drained and chopped a bit
1 1/2 tablespoons prepared horseradish
2 rounds lavash bread (I use Hye-Roller brand)
1/2-1 lb smoked salmon, thin sliced, depending on how generous you want to be
1 bunch fresh chives, chopped
2 cups watercress leaves, washed and dried
salt & freshly ground black pepper

Steps:

  • Mix sour cream, cream cheese, capers, horseradish and salt and pepper.
  • Arrange all ingredients so that you have two equal amounts (for the two rolls).
  • On each lavosh, spread the sour cream mixture.
  • Then add salmon, cucumber, onion, chives and watercress.
  • Tightly roll up each lavosh and wrap in Saran wrap.
  • Chill for 2-4 hours.
  • Just before serving, unwrap and slice into 1" thick rounds on the diagonal.
  • Arrange on a platter, garnish with more watercress.
  • Serve.

Lavash is an Armenian flat bread that is rollable, kind of like a tortilla, but tastier! My mom makes these sandwiches in a roll, then slices them so they look like the little round sandwiches on sandwich platters.

1/2 cucumber, in thin slices, should be cold
20 -25 mint leaves, should be cold

  • Spread cream cheese evenly over the lavash bread.
  • Sprinkle with desired amount of garlic and onion powders.
  • Layer the cucumber slices over the cream cheese.
  • Layer the mint leaves of the cucumber slices.
  • Roll up into a log.

2 1/4 teaspoons yeast
1 1/4 cups warm water
1/4 cup plain yogurt (if you don't want to add this sub. Water for it)
1 teaspoon salt
2 cups all-purpose flour
2 cups whole wheat flour (can use any combo of flour you want)
toasted sesame seeds or poppy seed

Steps:

  • Sprinkle yeast into warm water in large bowl and stir until dissolved.
  • Add salt and yogurt.
  • Combine all-purpose and whole wheat flours and add enough to mixture to make stiff dough.
  • Turn out on floured surface and knead until smooth and elastic, 8 to 10 minutes.
  • Shape into ball.
  • Place in greased bowl and turn to grease top.
  • Cover and let rise until doubled in bulk, about 1 1/2 hours.
  • Punch down and let rise again until doubled, about 30 minutes.
  • Divide dough into 8 pieces and roll each out on lightly floured surface to very thin circle about 9 inches in diameter. (also can just make one big sheet of lavash).
  • Brush a bit of olive oil over the tops and then sprinkle with any seed.
  • Put on baking sheet .
  • Bake at 400F 5 to 6 minutes, or until bread appears dry, lightly browned and blistered!
  • Its done!
