3 c self rising flour (you can skip baking soda & powder)
1 Tbsp cinnamon
3 stick butter, room temperature
1 1/2 c sugar
1 1/2 c light brown sugar, packed
3 eggs
1 Tbsp vanilla extract
3 c semisweet chocolate chips
3 c old-fashioned rolled oats
2 c sweetened flake coconut
2 c chopped pecans (8 ounces)

Steps:

  • 1. Preheat oven to 350 F. Mix flour, cinnamon and salt in bowl
  • 2. In 8-quart bowl, beat butter on medium speed till smooth and creamy, about 1 minute. Gradually beat in sugars and continue beating to combine, about 2 minutes. Add eggs, 1 at a time, beating after each
  • 3. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.
  • 4. For each cookie, drop 1/4 cup of dough onto un-greased cookie sheet, spacing 3 inches apart. Bake 17 to 20 minutes, until edges are lightly browned. Remove to rack to cool. Makes 3 dozen ex-large cookies.

3 cups old fashioned rolled oats
2 cups sweetened coconut flakes
2 cups chopped pecans (8 ounce) (optional - I omit)

Steps:

  • Preheat oven to 350ºF. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside. In a second bowl, beat the butter on medium speed until smooth. Add the sugar and brown sugar and beat for another 2 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla. Stir in the flour mixture, blending until just combined. Add the chips, oats, coconut, and pecans and stir until fully incorporated. Drop by rounded tablespoon onto an un-greased baking sheet, making sure to allow plenty of room between cookies. Bake for 10-12 minutes or until the edges are set and golden brown. Allow the cookies to cool on the pan for 1-2 minutes before placing on a cooling rack. Enjoy!

1-1/2 cups packed light-brown sugar
3 large eggs
1 tablespoon vanilla extract
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans

Steps:

  • Preheat oven to 350 F. Mix flour, baking powder, baking soda, cinnamon and salt in bowl. In 8-quart bowl, beat butter on medium speed until smooth and creamy, 1 minute. Gradually beat in sugars; beat to combine, 2 minutes. Add eggs, one at a time, beating after each. Beat in vanilla extract. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
