The Juiciest Grilled Chicken Kabobs image

Number Of Ingredients 7

4 boneless skinless chicken breasts, pounded to even thickness and brined in saltwater (*see easy instructions below)
1 Tablespoon melted butter or olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly-cracked black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika (I prefer smoked paprika)
optional: fresh lemon wedges

Steps:

  • To brine the chicken breasts, fill a large bowl with 1 quart of warm water and 1/4 cup kosher salt. Stir to combine until most of the salt is absorbed. Add the whole chicken breasts and let them sit in the mixture to brine for 15 minutes. Or you can also also cover the bowl and refrigerate for up to 6 hours. Remove the chicken breasts from the brine, rinse them with cold water, then pat them dry with some paper towels. (If the chicken breasts you purchased have already been pre-brined in a sodium solution, skip this brining step completely.)
  • Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 15 minutes before using.
  • Cut the chicken breasts into 1-inch pieces. Add them to a large mixing bowl and drizzle evenly with the olive oil. Toss to combine.
  • In a separate small bowl, whisk together the salt, pepper, garlic powder and paprika until combined. Sprinkle the seasoning mixture evenly over the chicken. Then toss for 1 minute, or until the chicken is evenly coated with the seasoning. Thread the chicken evenly onto the skewers.
  • Once the grill is hot, place the chicken kabobs evenly on the grill. Cook for 10-14 minutes, turning once halfway through, until the chicken is golden brown and cooked through (no longer pink on the inside).
  • Transfer the kabobs to a clean plate, and loosely tent with aluminum foil. Let the chicken rest for at least 5-10 minutes.
  • Then serve warm while the chicken is hot and juicy, drizzled with freshly-squeezed lemon juice if desired. Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.

These Steak Kabobs are made with an easy kabob marinade and loaded with tender steak, bell peppers and red onions. Easy to make and easy to prep ahead for summer entertaining!

1.5 lb sirloin steak (trimmed)
2 bell peppers
1 large red onion
1/2 cup oil
1/4 cup Worcestershire sauce
2 tablespoons low sodium soy sauce
2 tablespoons apple cider vinegar
1 tablespoon garlic powder
1 tablespoon honey
1 teaspoon onion powder
1/2 teaspoon chipotle chili powder optional (for a bit of kick)

Steps:

  • Cut steak, peppers and onion into equal sized pieces (about 1-1.5")
  • In a large freezer bag, combine the oil, Worcestershire sauce, soy sauce, vinegar, garlic, honey, onion powder and chipotle powder if using.
  • Add steak and let marinate for at least one hour, and up to 8 hours (see notes above regarding marinade times)
  • If using wooden skewers, soak for 10 minutes before skewering your beef and vegetables.
  • Preheat the grill to medium-high.
  • Skewer your beef cubes and vegetables, alternating as you like. I try to ensure 3-5 cubes of beef per skewer, depending on how long your skewers are.
  • Place kabobs directly over the heat, cooking for 4-5 minutes before flipping and cooking another 4-5 minutes. See notes above for cook times depending on your preference for doneness.

Last Minute Kabobs image

Kabobs are a favorite around our house, and we are always looking for something quick and easy. This is a recipe that you can alter to your own liking, it's quick, simple, and tasty.

Number Of Ingredients 9

1 lb steak, cubed
15 shrimp (any size)
1/2 green bell pepper
5 mushrooms (of your choice)
8 ounces pineapple chunks
1/3 melon, cubed
brown sugar
soy sauce
5 -6 kabob sticks

Steps:

  • Turn the oven on to Broil.
  • Heat Shrimp until they are done, most noteably when they turn red/orange, then peel if they aren't already.
  • Cut up Bell pepper into 1 inch squares while shrimp is cooking.
  • Start layering the Kabob sticks with the ingredients - (For example, I had a pineapple, green pepper, shrimp, melon, steak, mushroom rotation.)
  • Place finished Kabobs on a broiling pan, drizzle with soy sauce on each one, and then add a pinch of brown sugar to each.
  • Broil for 20 + minutes or until the meat is done.
