LASAGNA SPIRALS
This is a good meatless dish that is very easy to make and so good too. I make several at one time and freeze what I don't use for dinner. Then I just take from freezer what I need, thaw, bake, and voila! You could be creative with these too and add other veggies.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain and rinse.
- In a large bowl combine broccoli, ricotta cheese, mozzarella cheese, green onions, basil and nutmeg.
- Spread about 1/2 cup of the broccoli mixture along each noodle. Roll noodles to form spirals. Place in prepared dish. Spoon spaghetti sauce on and around spirals, and top with Parmesan cheese.
- Bake in preheated oven for 30 minutes.

Steps:
- Beat eggs with fork in large bowl.
- Add next 5 ingredients. Stir well.
- Makes about 3 1/2 cups (875 mL) filling.
- Spread 1/3 cup (75 mL) filling on 1 lasagna noodle and roll up, jelly roll-style, from short end.
- Repeat with remaining filling and noodles.
- Spread 1 cup pasta sauce evenly in greased 9 x 13 inch (22 x 33 cm) pan.
- Arrange spirals, seam-side down, in single layer on top of sauce.
- Spoon remaining pasta sauce onto spirals.
- Cover with foil and bake in 350ºF (175ºC) oven for about 40 minutes until heated through.
- Discard foil.
- Sprinkle second amount of mozzarella cheese over top.
- Bake, uncovered, for about 15 minutes until cheese is melted.
- Freezes well.

SPINACH LASAGNA SPIRALS
Steps:
- Combine spinach, onion, ricotta and Parmesan cheeses, egg, thyme and garlic; mix well. Spread spinach mixture evenly on lasagna. Roll up each jelly-roll style. Place 1/2 cup spaghetti sauce in 8 x 8 inch baking dish. Place pasta spirals seam-side-down in dish. Top with remaining spaghetti sauce. Microwave on high 6 minutes. Sprinkle with mozzarella cheese. Microwave 1 minute more. Can be done in oven.
LASAGNA SPIRALS
A fun way to make Lasagna. You may not think the nutmeg would be a good idea but it does add a nice touch. Serve with warm Italian bread sticks or any bread.

- 1. Grease a 13X9 baking dish
- 2. In large bowl, combine spinach, sausage, ricotta and mozzarella cheeses, green onions and seasonings.
- 3. Spread about 1/2 cup of cheese mixture along each noodle. Roll noodles to form spirals.
- 4. Place in 13X9 baking dish. Pour spaghetti sauce over spirals and top with parmesan.
- 5. Bake in 350 degree oven for 30 minutes
