1 1/2 lbs racks of lamb
3 sprigs thyme
1 sprig rosemary
3 sage leaves
1 teaspoon oregano
2 tablespoons parsley
2 garlic cloves
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 cup port wine
1 cup veal broth

Steps:

  • 1. To prepare the rub, chop the thyme, rosemary, sage leaves, oregano, parsley, and garlic cloves and put in a mortar and pestle. Add dijon mustard and olive oil and mash until paste-like.
  • 2. Sprinkle the rack of lamb with salt and pepper. Then rub all over with the herb paste. Cover and let marinate in refrigerator overnight, up to a day.
  • 3. Pre-heat oven to 400-degrees.
  • 4. In a hot pan, add olive oil and sear both sides of the rack of lamb for 10 minutes, or until golden.
  • 5. Put the pan with the rack of lamb inside the oven for 15 minutes for medium-rare meat. (Leave in longer for medium).
  • 6. Reduce port wine and veal broth for about 20 minutes, until thicker consistency.
  • 7. Let the rack of lamb rest for at least 5 minutes before slicing. Add port reduction sauce on top and serve.

1/2 cup olive oil
1/2 cup fresh basil leaves, plus more for the basil butter
1 teaspoon dried oregano
1 teaspoon dried thyme
2 cloves garlic
Kosher salt and freshly ground black pepper
One 1 1/2-pound rack of lamb, frenched
1/2 cup port wine
1/4 cup demi-glace
Vegetable oil, for searing and frying
1 stick butter
Wonton wrappers
Purple kale, for garnish

Steps:

  • Place the olive oil, basil, oregano, thyme, garlic and a pinch each of salt and pepper in a blender. Blend until the garlic and herbs are well minced.
  • Rub the lamb with the herb paste and let sit while you make the port wine sauce.
  • Combine the port wine and demi-glace in a small saucepan and simmer until thickened.
  • Slick a large frying pan with oil and heat over medium-high heat. Place the lamb in the pan and cook for 3 to 4 minutes on each side. Transfer to a carving board and let rest.
  • Pour the oil from the frying pan into the blender along with some basil and butter; blend to a puree. Set the basil butter aside.
  • Cut the lamb into small cubes.
  • Make the wontons: To each wonton wrapper, add some port wine sauce followed by 2 or 3 pieces of lamb and some basil butter. Moisten the edges of the wrapper with water. Gather the wrapper to enclose the filling; pinch to seal.
  • Deep-fry the wontons until golden brown.
  • Serve the wontons, three to a plate, on a bed of chopped purple kale. Drizzle with additional port wine sauce and basil butter.

DH and I had these chops for dinner a few nights ago. They were really tasty! From Williams-Sonoma "Steak and Chop" cookbook.

8 double-cut lamb loin chops, trimmed of excess fat (can also use rib chops)
salt, to taste
fresh ground pepper, to taste
1 tablespoon olive oil
2 shallots, minced
2 garlic cloves, minced
2 cups ruby port
1 cup beef stock (or prepared broth)
1 teaspoon Dijon mustard
1 tablespoon chilled unsalted butter (cut into pieces)
salt, to taste
fresh ground pepper, to taste

Steps:

  • Preheat the oven to 400 degrees farenheit.
  • Slash the edges of the chops in 2 or 3 places to prevent curling. Sprinkle generously with salt and pepper.
  • Coat the bottom of a large, ovenproof frying pan with the olive oil and heat over medium-high heat. When the oil starts to smoke, add the lamb chops and sear them to a golden brown on both sides, about 2 minutes on each side. (Do not crowd the pan; use 2 frying pans if necessary).
  • Transfer the pan(s) to the oven and roast until an instant-read thermometer inserted away from the bone registers 130-135 degrees Farenheit or the chops are a deep pink when cut into near the bone for medium rare, 6-8 minutes.
  • Transfer to a platter and let rest, tented loosely with aluminum foil, while you make the sauce.
  • To make the sauce, drain off all but 1 Tb of drippings from the pan. Add the shallots and garlic and saute, stirring often, until softened, 3-4 minutes. Add the Port and stock and bring to a boil over high heat. Cook until reduced by half, about 5 minutes.
  • Reduce heat to medium. Whisk in the mustard and then the butter pieces. When the butter has melted and combined and the sauce is smooth, season to taste with salt and pepper.
  • Transfer the chops to individual plates, spoon sauce on top, and serve.

Creole Lamb Chops with Port Wine Demi image

3 tablespoons fresh minced garlic
8 tablespoons butter
4 cups ruby port
6 cups veal stock
1 tablespoon 3-pepper blend (equal parts cayenne, black pepper, and white pepper)
1 rack Australian lamb, fat cap on
Salt and freshly ground black pepper
1/4 cup jerk seasoning
2 cups balsamic vinegar
Potato puree, for serving, if desired
Seasonal vegetables, for serving, if desired

Steps:

  • Preparation for Creole Lamb Chops with port Wine Demi:
  • In a saucepan, over medium heat, sweat the garlic with the butter, and then add the port wine. Reduce by 1/4. Once the wine has reduced, stir in 4 cups of the veal stock and the 3-pepper blend. Reduce again by 1/4. Once the reduction is finished, strain through a fine mesh strainer and season with salt and pepper.
  • In a large container, combine the jerk seasoning with the balsamic vinegar and immerse the lamb. Let marinate for 30 minutes.
  • Remove the lamb from the marinade, and blacken in a dry, white, hot cast iron skillet. Once the lamb has blackened on all sides, rest and allow to cool completely.
  • With a sharp chef's knife remove the fat cap from he blackened lamb and cut the rack into 4 equal portions.
  • Place the lamb portions into a saute pan with the remaining veal stock and roast in the oven for 8 to 12 minutes depending on desired doneness. Reheat port wine demi and serve with potato puree and seasonal vegetables, if desired.

2 ounces crustless brioche or egg bread, cut into 1-inch pieces (about 2 cups packed)
1 cup (packed) coarsely chopped fresh parsley
2 teaspoons chopped fresh rosemary
1 teaspoon chopped fresh thyme
2 1 1/4-pound racks of lamb, fat trimmed
2 tablespoons vegetable oil
6 tablespoons Dijon mustard
For sauce
1 1/2 cups dry red wine
3/4 cup tawny Port
9 tablespoons butter, cut into pieces
Mashed Yams and Apples
Fried Onion Rings

Steps:

  • Make lamb:
  • Preheat oven to 350°F. Place bread on baking sheet. Bake until slightly dry, about 5 minutes. Cool. Combine bread and herbs in processor. Blend until bread forms crumbs. Transfer crumbs to bowl. (can be made 1 day ahead. Chill.)
  • Preheat oven to 425°F. Sprinkle lamb with salt and pepper. Heat oil in heavy large skillet over high heat. Add lamb and brown well, turning occasionally, about 10 minutes. transfer lamb to baking pan. Roast until meat thermometer inserted into center of lamb registers 130°F for medium-rare, about 20 minutes. Let lamb cool 10 minutes. brush mustard all over lamb. Dredge in breadcrumbs, coating completely, Return lamb to baking pan, meant side up. Roast until crumb feel dry but are not colored, about 3 minutes. Let lamb rest 5 minutes at room temperature.
  • Meanwhile, make sauce:
  • Boil wine and Port in large saucepan until reduced to 1/3 cup, about 25 minutes. Remove from heat. Add butter; whisk just until melted. Season with salt and pepper.
  • Spoon yams and apples into center of 4 plates. Cut lamb between bones into chops. Stand 3 to 4 chops (bones facing up)in yams. Arrange onion rings atop bones. Spoon sauce around yam; serve.
