Categories     dinner, main course

Time 1h45m

Yield 4 servings

Number Of Ingredients 13

2 pounds lamb stewing meat, with bones
1 medium onion, sliced
2 cloves garlic, minced
3 pieces lemon peel
1 teaspoon turmeric
1 teaspoon Hungarian paprika
1 teaspoon cumin
1 cup water
1 bunch Swiss chard, stalks removed
1 1/2 pounds fava beans, shelled
6 medium leeks, cut in 1 1/2 inch slices
Coarse salt and freshly ground pepper to taste
Fresh coriander or parsley to garnish, chopped

Steps:

  • Remove excess fat from lamb and cut the meat into one-and-onehalf-inch pieces. Using a large casserole dish about 12 inches across, or an earthenware dish that can be used on top of a flame, brown the pieces of lamb. If there is a lot of fat pour off the excess.
  • Add the onions, lemon peel and garlic. Sprinkle with the turmeric, paprika and cumin. Add one cup water. Cover and simmer over low heat for one hour, stirring occasionally.
  • Meanwhile soak the leeks in cold water and rinse thoroughly, making sure there is no grit in the stalks. Carefully wash the Swiss chard and tear into large pieces.
  • Add the leeks, beans and Swiss chard in that order to the casserole. Season with salt and pepper. Cover and simmer for 20 minutes, stirring occasionally. If necessary, add a little more water (the chard should be provide some more liquid of its own). When the beans and leeks are tender, remove from the stove, sprinkle with parsley or coriander and serve.

LEG OF LAMB WITH SAVORY BEANS

Leg of Lamb With Savory Beans image

In France, gigot d'agneau - leg of lamb - is, well, de rigueur for a proper Easter meal. But it is always appropriate for any special dinner party, or any occasion throughout the year when you want an impressive main course. The technique is simple and requires few ingredients (garlic, thyme and rosemary), but the result is very flavorful. Seasoning the lamb for at least an hour in advance of roasting is essential. Refrigerate it overnight for more intense flavor; it's also less work to do on the day of the feast. Just remove from the refrigerator, bring it to room temperature, and it's ready for the oven.

Time 2h

Yield 8 to 10 servings

Number Of Ingredients 25

1 pound flageolet or white beans, such as cannellini (about 2 cups)
2 whole cloves
1 medium onion, halved
2 bay leaves
1 large carrot, cut into 2-inch chunks
1 whole head garlic, cut in half horizontally
1 small fistful of thyme sprigs
1 teaspoon kosher salt
2 tablespoons chopped flat-leaf parsley
1 tablespoon finely cut chives
1 teaspoon grated lemon zest (from 1 lemon)
3 tablespoons extra-virgin olive oil
Black pepper, to taste
1 (8- to 9-pound) leg of lamb, bone-in, trimmed and tied (a butcher can do this)
6 medium garlic cloves, cut into quarters lengthwise
Kosher salt and black pepper
2 tablespoons extra-virgin olive oil
4 medium onions, halved crosswise
2 celery stalks, cut into 3-inch-long pieces
2 thyme bunches
2 rosemary bunches
2 cups dry white wine
1 1/2 pounds small, young carrots
2 tablespoons unsalted butter
Watercress, for garnish (optional)

Steps:

  • Put the beans in Dutch oven or heavy-bottomed pot. Add 8 cups water and place pot over high heat. Stick 1 whole clove into each onion half. Add onion, bay leaves, carrot, garlic, thyme and salt. Bring to a boil, then turn heat to a bare simmer and cover with lid ajar. (The slow simmer keeps the beans from bursting.) After 30 minutes, taste the bean broth, and add salt as necessary. Cook for about another 30 minutes, but check for tenderness after 15 minutes. Turn off the heat and let beans cool in their cooking liquid. (You may cook the beans several hours, or up to 1 day, in advance.)
  • Meanwhile, prepare the lamb: With a sharp paring knife, make 24 small slits over the surface of the lamb. Using your fingers, push a garlic sliver into each slit.
  • Season the leg generously all over with kosher salt, then sprinkle with about 1 teaspoon black pepper. Drizzle with about 2 tablespoons olive oil, and massage oil and seasonings all over the meat. Leave at room temperature for at least an hour. (Alternatively, wrap and refrigerate the seasoned leg for up to 24 hours. Bring to room temperature before proceeding.)
  • Heat oven to 475 degrees. In a sturdy roasting pan, arrange the onions and celery. Lay down the thyme and rosemary branches and set the lamb leg on top. Roast, uncovered, for 20 minutes, then add wine to the pan and turn heat to 350 degrees. Continue cooking, basting the roast occasionally, until the internal temperature reaches 130 degrees for medium-rare or 140 for medium, which will take up to 1 1/2 hours.
  • Transfer the roast to a cutting board and keep warm, tented with foil, for 15 to 20 minutes. Remove the onions, celery, thyme and rosemary from the roasting pan and discard. Skim fat from surface of pan juices.
  • Set pan over medium-high heat and bring to a simmer, scraping up any browned bits from the bottom of the pan. Taste and adjust with a splash of water if the pan juices are too salty.
  • While lamb is resting, boil carrots in well-salted water until tender, 10 to 12 minutes. Drain, toss with butter and keep warm.
  • Reheat the beans in their broth, then drain reserving bean broth for another use. Remove and discard onion, bay leaves, carrot, garlic and thyme. Put beans in a warm serving dish. Toss beans gently with the parsley, chives, lemon zest, olive oil and pepper. Reheat pan juices, strain and pour into a serving vessel.
  • Carve the lamb and arrange on serving platter along with the carrots. Garnish with watercress, if desired.

RACK OF LAMB WITH FAVA BEANS AND ROASTED GARLIC CUSTARD

Rack of Lamb With Fava Beans And Roasted Garlic Custard image

Provided by Molly O'Neill

Categories     dinner, project, main course

Time 8h20m

Yield Six servings

Number Of Ingredients 22

2 racks of lamb, trimmed and Frenched (ask your butcher to do this), trimmings reserved
2 1/2 pounds meaty lamb bones (like shoulder)
3 tablespoons extra virgin olive oil
1 large onion, peeled and coarsely chopped
1 bottle dry red wine
1 head of garlic, halved
1 teaspoon whole black peppercorns
1 sprig fresh thyme
1 sprig fresh rosemary
1 bay leaf
1/2 teaspoon caraway seeds
2 teaspoons kosher salt
Freshly ground pepper to taste
1 tablespoon canola oil
2 cups cooked fresh fava or white beans
2 medium heads of garlic, halved lengthwise
1 tablespoon extra virgin olive oil
1 1/4 teaspoons kosher salt, plus more to taste
Freshly ground pepper
1 tablespoon water
5 eggs
2 cups heavy cream

Steps:

  • At least 1 day before serving, make the lamb sauce: Preheat the oven to 400 degrees. Place the lamb trimmings and bones in a large roasting pan and roast, turning twice, until lightly browned, about 40 minutes.
  • Meanwhile, heat 2 tablespoons of the olive oil in a large stockpot over medium heat. Add the onion and saute until browned, about 8 minutes. Add the bones, the wine and enough water to cover the bones by 2 inches. Bring to a boil, skim and add the garlic, peppercorns, thyme, rosemary, bay leaf and caraway seeds. Reduce the heat and simmer 4 hours.
  • Strain broth and refrigerate overnight. Scrape off and discard the fat. Place the broth in a medium saucepan over medium-high heat and boil until reduced to 1 cup, about 45 minutes. Season with 1/2 teaspoon of salt and pepper. Reheat before serving.
  • To make the custard, preheat the oven to 325 degrees. Place the garlic in a small baking dish, drizzle with the olive oil and season with a little salt to taste and pepper. Add the water to the pan, cover tightly with aluminum foil and bake until soft, about 1 hour. When the garlic cloves are cool enough to handle, squeeze them from the skin and place in a food processor with the eggs and the cream. Process until smooth, stopping to scrape the sides of the bowl. Season with the 1 1/4 teaspoons of salt and the pepper.
  • Ladle the garlic mixture into 6 6-ounce ramekins and place the ramekins in a roasting pan. Pour in enough hot water to reach halfway up the sides of the ramekins and bake until set, about 50 minutes. Reheat before serving. (Custards can be made a day ahead and refrigerated.)
  • To make the lamb, preheat oven to 400 degrees. Use 1 teaspoon of salt and pepper to season both racks. Heat the canola oil in an ovenproof skillet over medium-high heat, place the racks in the skillet fat side down and sear for 6 minutes. Turn the racks over and roast in the oven until medium-rare, about 30 minutes. Meanwhile, toss the fava beans with 1 tablespoon of olive oil and1/2 teaspoon of salt and pepper.
  • To serve, cut the racks into double chops and divide among 6 plates. Loosen the custards by running the tip of a small knife around the edge of the ramekins and unmold 1 onto each plate. Scatter the beans around the plates and drizzle some of the sauce over each chop. Serve immediately.

LAMB GHOUZI

Lamb Ghouzi image

This Arabian Gulf showstopper is traditionally prepared by stuffing a whole lamb with rice or pasta, nuts, onions, and spices. Martha simplifies the dish by using lamb shoulder instead.

Provided by Martha Stewart

Categories     Lamb Recipes

Number Of Ingredients 25

1 lamb shoulder (3 to 5 pounds), boned, trimmed of excess fat, and butterflied, bones reserved
Kosher salt and freshly ground pepper
3 1/2-inch piece fresh ginger, peeled
5 cloves garlic
2 pinches saffron threads
4 tablespoons extra-virgin olive oil
2 medium yellow onions, chopped
6 cardamom pods
4 whole cloves
3 bay leaves
2 cinnamon sticks
1 tablespoon black peppercorns
1/4 cup melted ghee
2 tablespoons tomato paste
2 cups basmati rice
1 pound fingerling potatoes, halved if large
6 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
Zest of 1 navel orange, plus 2 tablespoons fresh orange juice
1 tablespoon whole-grain Dijon mustard
1 tablespoon white balsamic vinegar
2 cups baby arugula
1/2 cup dried currants
1/2 cup chopped pistachios
Clementines, halved and whole, for garnish

Steps:

  • Make the lamb: Pat lamb dry; generously season all over with salt and pepper. Grate 2 1/2 inches ginger and 2 garlic cloves into a small bowl. Add 1 pinch saffron, then rub mixture evenly over the inside of the lamb. Roll up lamb, with fat on the outside, and secure with kitchen twine. Heat 2 tablespoons oil in a Dutch oven or other large heavy-bottomed pot over medium-high. Add lamb bones and cook until browned, about 20 minutes. Add lamb and cook, turning occasionally, until browned on all sides, 8 to 10 minutes; transfer to plate along with bones. Wipe out any remaining fat with a paper towel.
  • Add onions and remaining 2 tablespoons oil to pot and cook until golden brown and softened, 10 to 12 minutes. Crush remaining 3 garlic cloves, slice remaining 1 inch ginger, and add both to pot along with lamb bones and meat, cardamom, cloves, bay leaves, cinnamon, peppercorns, and remaining 1 pinch saffron. Add just enough water to cover lamb. Bring to a boil; reduce to a simmer, cover, and cook until lamb is almost tender, about 2 hours. Discard bones.
  • Preheat oven to 325 degrees. Transfer lamb to a rimmed baking sheet or roasting pan. Strain cooking liquid and reserve. Combine ghee and tomato paste and season with salt. Brush ghee mixture all over lamb, then roast, brushing occasionally with juices, until fork-tender, 1 1/2 to 2 hours.
  • Make the rice and potatoes: Preheat oven to 450 degrees. Place rice in a bowl and add enough water to cover. Swirl water to rinse rice and drain. Repeat process 3 to 4 more times until water is clear. Cover rice with clean water and soak for 30 minutes, then drain.
  • On a rimmed baking sheet, toss potatoes with 2 tablespoons oil; season with salt and pepper. Arrange in a single layer and roast, tossing halfway through, until potatoes are tender when pierced with a knife, about 30 minutes. Before serving, rewarm potatoes in a 325-degree oven, if necessary.
  • Meanwhile, add rice to a large saucepan along with 3 1/2 cups reserved lamb cooking liquid. Season well with salt. Bring to a boil, cover, and simmer until rice is tender, about 15 minutes. Fluff with a fork.
  • In a small bowl, combine orange zest and juice. Whisk in mustard, vinegar, and remaining 4 tablespoons oil; season with salt and pepper. Drizzle dressing over arugula and toss to combine.
  • To serve, transfer rice to a large platter. Arrange potatoes over rice and top with arugula mixture. Place lamb in the center of the platter and sprinkle currants and pistachios on top. Garnish platter with clementines. Serve with remaining reserved lamb cooking liquid on the side.

Provided by Martha Stewart

Number Of Ingredients 23

1/2 cup canola oil
1/2 teaspoon freshly ground nutmeg
1/2 teaspoon paprika
1/2 teaspoon ground fennel seed
Coarse salt and freshly ground black pepper
1 (5- to 7-pound) bone-in lamb shoulder
3 spring onions, trimmed and sliced crosswise, white and light green parts only or 1 head garlic, halved horizontally, cloves separated
2 sprigs fresh rosemary
3 red onions, sliced
2 ribs celery, cut crosswise into 1-inch pieces
1 large carrot, sliced
6 ounces homemade or store-bought low-sodium beef stock
6 sprigs fresh thyme
1/4 cup sun-dried tomatoes (not oil-packed)
2 tablespoons canola oil
1 pound mixed spring onions, such as bulb, red, golden, or ramps, trimmed and cut uniformly
1 teaspoon honey
1/2 cup homemade or store-bought low-sodium vegetable stock
1 tablespoon champagne vinegar
2 tablespoons olive oil
1 shallot, minced
2 cups fresh shelled fava beans
1 tablespoon thinly sliced fresh mint leaves

Steps:

  • Make the lamb: Preheat oven to 400 degrees.
  • In a small bowl, mix together 1/4 cup oil with nutmeg, paprika, and fennel. Rub lamb all over with spice mixture and season with salt and pepper. Heat remaining 1/4 cup oil in a large Dutch oven or roasting pan over high heat. Add lamb and cook, turning on all sides, until seared.
  • Remove lamb from pan. Make small incisions in lamb, about 2 inches apart; alternate tucking spring onion slices or garlic cloves and rosemary into incisions. Place remaining spring onion slices or garlic cloves, onions, celery, and carrots in roasting pan and set lamb on vegetables. Add beef stock and thyme to pan and bring to a boil over medium-high heat; cover tightly with parchment paper-lined aluminum foil. Transfer to oven and cook 5 to 10 minutes; reduce heat to 300 degrees. Cook until lamb is tender and pulling away from the bone, 3 1/2 to 4 hours. Remove from oven and let stand in pan for 2 hours.
  • Remove lamb from pan and carefully remove bone, leaving as much meat in one piece as possible. Strain cooking liquid and set aside; discard solids.
  • Make the salad: Meanwhile, preheat oven to 350 degrees. Place sun-dried tomatoes in a small bowl and add enough water to cover; let stand until rehydrated, about 10 minutes. Drain, finely chop, and set aside.
  • Heat canola oil in a medium ovenproof skillet over medium high heat. Add onions and cook until charred. Add honey and cook until onions are caramelized, about 2 minutes. Add vegetable stock and vinegar to deglaze. Transfer to oven and cook until just tender, 10 to 20 minutes. Transfer to a medium bowl.
  • Meanwhile, heat olive oil in another medium skillet over medium-high heat. Add shallot and cook, stirring, until soft and translucent. Add fava beans and cook, stirring, until tender, 3 to 4 minutes. Stir in sun-dried tomatoes and remove from heat. Add to bowl with onions; add mint and season with salt and pepper. Serve with lamb and reserved strained cooking liquid.
