1 onion, finely minced
1 clove garlic, minced
10 Roma tomatoes, blanched and peeled, roughly chopped
2 tablespoons sugar
1 tablespoon sherry vinegar
Salt and pepper
2 tablespoons roughly chopped basil leaves
1 fresh bay leaf
2 tablespoons extra-virgin olive oil
3 pounds lamb breast
1 pound lamb top round
20 grams kosher salt
1/2 cup white bread cubes, crusts discarded, soaked in milk
1/2 cup finely minced onion
1 clove garlic, finely minced
1 teaspoon ground coriander
1 teaspoon ground cumin
4 teaspoons freshly chopped oregano leaves
4 teaspoons freshly chopped sage leaves
4 teaspoons freshly chopped parsley leaves
1 egg, beaten
All-purpose flour, for dusting
Vegetable oil, for frying
1 cup fresh sheep's milk ricotta
1 English cucumber, finely chopped

Steps:

  • For the sauce: In a large pot, over medium heat, sweat onion, then add garlic and tomato. Cook for 5 minutes. Add sugar, vinegar and remaining ingredients and cook down for 45 minutes. Remove the bay leaf and run through a food mill. Set aside.
  • Meatballs: Dice the meat and mix with salt. Grind twice with 1/4-inch dice. Add all other ingredients except egg and paddle in standing mixer for 1 minute. Add the egg and mix to combine.
  • Form into 1-inch round balls, dust with all-purpose flour. Add a coating of oil to a large skillet, and shallow-fry the meatballs until golden. Cover with tomato sauce and simmer for 10 minutes over low heat. Sprinkle with ricotta and chopped cucumber and serve.

3 tablespoons extra virgin olive oil
2 garlic cloves, crushed with 1/4 tsp salt
4 large tomatoes, skinned, deseeded and roughly chopped
1 lb ground lamb
1 ounce of fresh mint, leaves picked and chopped, plus extra leaves to serve
1 ounce flat leaf parsley, leaves picked and chopped
1 egg
7 ounces feta
2 ounces pine nuts, lightly toasted
salt and pepper

Steps:

  • Heat 1 tablespoon of the olive oil in a saucepan over a medium heat and add the garlic. When the garlic sizzles, quickly add the tomatoes and a generous grinding of pepper. Cook over a high heat for about 4 minutes, until the tomatoes collapse.
  • In a bowl, mix the lamb and herbs together. Add the egg, season, and use your hands to mix together until it forms a paste. Crumble the feta into medium-sized pieces and add half to the mixture. Form into 20 even-sized balls.
  • Heat the remaining olive oil in a large frying pan - large enough to take the meatballs in one layer - until very hot. Add all the balls at once (or cook in 2 batches) and sear on 1 side; shake the pan to turn them all at once. Fry for a total of 6 minutes on high to brown on all sides. Don't worry if some fall apart. Lower the heat to medium, add the tomato and garlic sauce and stir.
  • To serve, scatter the remaining feta over the meatballs and garnish with the lightly toasted pine nuts and extra mint leaves.

½ cup dry bread crumbs
½ cup milk
1 ¼ pounds ground lamb
1 egg, beaten
3 cloves fresh garlic, minced
2 tablespoons olive oil
1 tablespoon tomato paste
1 tablespoon chopped fresh rosemary
1 tablespoon ground cumin
1 ½ teaspoons salt
1 teaspoon dried oregano
½ teaspoon freshly ground black pepper
¼ teaspoon ground cinnamon
1 pinch cayenne pepper
3 cups tomato sauce
1 cup chicken stock
2 tablespoons chopped fresh mint
1 pinch red pepper flakes, or to taste

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Line a baking sheet with aluminum foil; oil lightly.
  • Combine bread crumbs and milk in a small bowl. Soak bread crumbs until milk is absorbed, about 30 minutes.
  • Combine bread crumb mixture, lamb, egg, garlic, olive oil, tomato paste, rosemary, cumin, salt, oregano, black pepper, cinnamon, and cayenne pepper in a large bowl.
  • Form lamb mixture into 2-inch meatballs and place on the prepared baking sheet.
  • Cook meatballs in the preheated oven until they are slightly browned, about 15 minutes. Remove from the oven and set aside.
  • Combine meatballs, tomato sauce, chicken stock, fresh mint, and red pepper flakes in a large sauce pan over medium heat until meatballs are no longer pink inside, about 45 minutes.

1/2 lb ground lamb
1/4 cup unseasoned breadcrumbs
1 egg
1/2 teaspoon salt
1/2 teaspoon garam masala
1 tablespoon olive oil
1/2 cup diced tomato
1/4 cup chopped onion
1 clove garlic
1/2 teaspoon curry powder
1/4 teaspoon cayenne pepper
2 teaspoons sugar
1 1/4 cups chicken broth
1/2 cup half-and-half
1 tablespoon flour

Steps:

  • For the meatballs, in a large bowl combine the lamb, breadcrumbs, egg, salt and garam masala and mix well-- use your hands, they work the best!
  • Roll the mixture into 1" meatballs.
  • You should gat about 16 or so.
  • In a large skillet, over medium-high heat, heat olive oil.
  • Add meatballs and fry until browned on all sides.
  • While the meatballs are browning, place tomatoes in a food processor and puree until smooth.
  • Remove meatballs from skillet, leaving drippings in the pan.
  • Set aside.
  • Reduce heat a little, and add the onion to the pan drippings and saute until softened.
  • Add more oil if needed.
  • Add the garlic and saute for 30 seconds.
  • Add the pureed tomatoes, curry powder, cayenne pepper and sugar.
  • Cook for 1 minute, stirring constantly to combine.
  • Add 1 cup of the chicken broth to the skillet.
  • Stir well and bring to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Add half and half, and cook for 3 minutes, stirring well to blend.
  • Mix remaining 1/4 cup chicken broth and flour in a small cup until smooth, and add to skillet.
  • Bring to a boil, reduce heat, add meatballs, and simmer for 10 minutes.
  • Serve over rice.
