Mediterranean lamb meat loaf. Serve with tomato cucumber salad with mint dressing. Leftovers make a great sandwich.

½ teaspoon vegetable oil
2 slices dry bread, diced
½ teaspoon vegetable oil, or as needed
¼ cup milk
1 pound ground lamb
1 egg
4 cloves minced garlic
2 tablespoons chopped fresh thyme
1 tablespoon Worcestershire sauce
1 tablespoon lemon zest
1 teaspoon ground coriander
1 teaspoon dried basil
1 teaspoon dried rosemary, crushed
¾ teaspoon salt
¼ teaspoon ground black pepper
¼ cup tomato sauce
5 leaves fresh mint, finely chopped
2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x5-inch loaf pan with oil.
  • Place bread and milk in a small bowl. Press bread with a fork to soak up the milk.
  • Combine lamb, egg, garlic, thyme, Worcestershire sauce, lemon zest, coriander, basil, rosemary, salt, and pepper in a medium bowl. Add soaked bread; discard the leftover milk. Mix with hands until well combined. Transfer meatloaf to the prepared pan.
  • Combine tomato sauce and mint; spread evenly over the meatloaf. Drizzle with balsamic vinegar.
  • Bake in the preheated oven until no longer pink in the center, about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove and let cool for 5 minutes before serving.

2 pounds ground lean meat, preferably lamb
1 tablespoon corn, peanut or vegetable oil
1 cup finely chopped onion
1 cup finely diced celery
1 cup finely chopped green pepper
1 teaspoon finely minced garlic
Salt to taste if desired
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
1 teaspoon ground cumin
2 teaspoons Worcestershire sauce
1/8 teaspoon Tabasco sauce
1 tablespoon Dijon-style mustard
1/2 cup fine, fresh bread crumbs
1 egg, lightly beaten

Steps:

  • Preheat oven to 400 degrees.
  • Put meat in mixing bowl and set aside.
  • Heat oil in saucepan and add onion, celery, green pepper and garlic. Cook, stirring, until vegetables are wilted. Set aside to cool briefly.
  • Add cooked vegetables to meat. Add salt, pepper, nutmeg, cumin, Worcestershire sauce, Tabasco sauce, mustard, bread crumbs and egg. Blend well with the fingers.
  • Pack mixture into 6-cup loaf pan. Smooth over the top.
  • Place pan in oven and bake 50 minutes. Remove from oven and let stand 10 minutes. Slice and serve.

2 slices white sandwich bread, torn into small pieces
1 lb. ground lamb
1 large egg
4 cloves garlic, chopped
2 tablespoons fresh thyme leaves
kosher salt and black pepper
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1 small red bell pepper, thinly sliced
1/2 red onion, thinly sliced
2 15.5-ounce cans cannellini beans, rinsed
1 tablespoon fresh lemon juice

Steps:

  • 1. Heat oven to 400° F. In a large bowl, combine the bread and 3 tablespoons water. Add the lamb, egg, half the garlic, half the thyme, ¾ teaspoon salt, and ¼ teaspoon pepper. 2. Place the mixture on a foil-lined baking sheet and shape into a 6-inch loaf (about 3 inches thick). Bake, brushing with the balsamic vinegar several times during cooking, until a thermometer inserted in the center registers 150° F, 30 to 35 minutes. Let rest at least 5 minutes before slicing. 3. Meanwhile, heat the oil in a large skillet over medium heat. Add the bell pepper, onion, and the remaining garlic and thyme and cook, tossing occasionally, until the vegetables begin to soften, 4 to 5 minutes. Add the beans, ½ teaspoon salt, and ¼ teaspoon pepper and cook until heated through, 2 to 3 minutes; stir in the lemon juice. Serve with the meat loaf.

CURRIED LAMB LOAF

I love ground lamb and it cries for curry. I thought this would be an interesting twist to a "home style" meal.

2 lbs ground lamb
1/2 medium onion, grated
2 garlic cloves, minced
2 whole eggs or 1/2 cup egg substitute
1 teaspoon cayenne pepper, as desired, divided
2 teaspoons curry powder
1/2 cup plain breadcrumbs, as needed to bind
2 teaspoons soy sauce
1 tablespoon packed brown sugar
1 (14 1/2 ounce) can diced tomatoes
1/2 teaspoon Worcestershire sauce

Steps:

  • Combine lamb with onion, garlic, eggs, curry, 1/2 tsp cayenne, salt and breadcrumbs.
  • Shape into a loaf, and place in a 9x12-inch Pyrex baking dish.
  • Combine tomatoes with Worcestershire, reserved cayenne, soy sauce, and brown sugar.
  • Pour this over the loaf, and bake in a preheated 400ºF oven for 45 minutes to one hour.
  • Serve with chutney and cooked basmati rice.

GROUND LAMB LOAF & TZATZIKI SAUCE

I found this on the internet somewhere and it said you could wrap the loaf tightly in plastic wrap and chill it overnight. Then you could actually cook it in your rotisserie. I tried that and it didn't work lol. So I followed their directions for making a loaf. It was delicious. I will include the directions for rotisserie but don't holler if it doesn't work. Time does not include draining yogurt, or chilling loaf overnight.

1/2 cup medium onion, finely chopped
2 lbs ground lamb
1 tablespoon fresh garlic, finely minced
1 tablespoon dried marjoram
1 tablespoon dried ground rosemary
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
16 ounces plain yogurt
1 medium cucumber, peeled, seeded, finely chopped
1/8 teaspoon kosher salt
4 garlic cloves, finely minced
1 tablespoon olive oil
2 teaspoons red wine vinegar
5 -6 mint leaves, finely minced
1/2 cup chopped onion
1/2 cup chopped tomato
1/2 cup feta cheese

Steps:

  • LAMB:.
  • Process the onion in food processor for 10 to 15 seconds.
  • Put into dish towel and squeeze almost all juice and discard juice.
  • Return onion to food processor and add lamb, garlic, marjoram, rosemary, salt, and pepper.
  • Process about 1 minute until it becomes a fine paste.
  • Scrape sides occasionally.
  • TO COOK IN ROTISSERIE:.
  • Form the meat mixture into a loaf.
  • Roll tightly in plastic wrap removing all air pockets.
  • Twist ends so wrap is tight.
  • Refrigerate at least 2 hours or overnight.
  • Place meat on rotisserie skewer.
  • Place aluminum foil, shaped like a bowl, underneath to catch drippings.
  • Cook on high for 15 minutes.
  • Reduce to medium and cook 30-45 minutes, until inside temp is 175.
  • TO COOK IN OVEN AS LOAF:.
  • Preheat oven to 325.
  • Place mixture in loaf pan.
  • Place loaf pan in water bath and bake for 60-75 minutes.
  • Temp should reach 165-170.
  • Remove from oven and drain off fat.
  • Place loaf pan on cooling rack.
  • Place something heavy (such as a brick wrapped in aluminum foil) directly on top of meat fof 15-20 minutes.
  • TZATZIKI SAUCE:.
  • Place yogurt in a tea towel, suspend over a bowl and drain for 2 hours in refrigerator.
  • Place the chopped cucumber in a tea towel and squeeze to remove the liquid.
  • Discard liquid.
  • Combine drained yogurt with all other sauce ingredients.
  • Store in refrigerator in air tight container up to a week.
  • TO SERVE:.
  • Slice lamb and serve on pita bread with tzatziki sauce, chopped onion, tomatoes, and feta cheese.

1/ 3 cups Pine nuts
2.5 pounds Lean ground lamb
1 green bell pepper, diced
1 onion, diced
2 cloves garlic cloves, minced
2 large eggs
2 teaspoons ground pepper
2 teaspoons dried basil
1 teaspoon dried rosemary
1 teaspoon salt
4 ounces crumbled feta cheese
8 ounces tomato sauce
3 sprigs fresh parsley

Steps:

  • Bake pine nuts in a shallow pan at 350°, stirring occasionally, 5 minutes or until toasted.
  • Combine pine nuts and next 9 ingredients; press half of mixture into a lightly greased 9- x 5-inch loafpan. Sprinkle with cheese, and press remaining lamb mixture over cheese.
  • Bake at 375° for 1 1/2 hours; remove from pan, and place on a rack in a broiler pan. Pour tomato sauce over top; bake 10 more minutes or until done.
  • Garnish with parsley, if desired. Serve with toasted pita bread.
