3 cups cooked chicken, chopped
1 can condensed cream of chicken soup
16 ounces sour cream
3 teaspoons poppy seeds
Crushed buttery crackers, like Keebler Town House crackers (about 30)
1/4 cup butter, melted

Steps:

  • Mix together cooked chicken, cream of chicken soup, poppy seeds, and sour cream. Lightly grease 11x7-inch baking dish. Spoon mixture into dish.
  • Pour melted butter over cracker crumbs and stir together. Sprinkle over casserole.
  • Bake at 350°F for 35 minutes or until hot and bubbly.

3 pounds chicken breasts* (cut into 1 to 2 inch cubes)
2 sleeves Ritz crackers
1/2 cup butter (melted)
1 tablespoon poppy seeds
10.5 ounces condensed cream of chicken soup
12 ounces sour cream
3 tablespoons Parmesan cheese

Steps:

  • Crush the 2 sleeves of Ritz crackers (about 2 ½ cups).
  • Stir melted butter, 1 ½ cups crushed Ritz crackers and poppy seeds together in a bowl.
  • Fold in chicken, cream of chicken soup, and sour cream until well blended.
  • Pour mixture into a 9x13 inch pan.
  • In a separate bowl, mix remaining 1 cup of Ritz crackers and Parmesan cheese.
  • Spread Ritz cracker topping evenly over casserole.
  • Bake for 40 minutes at 350 degrees.

I love this recipe. I got this from a friend who made it when my mom was sick. She made a double recipe and froze half of it. It was even better after it had been frozen.

6 ounces buttery round crackers, crumbled
1 cup butter, melted
2 tablespoons poppy seeds
8 skinless, boneless chicken breast halves, cooked and cut into bite-sized pieces
2 (10.75 ounce) cans condensed cream of chicken soup
8 ounces sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the cracker crumbs, melted butter, and poppy seeds in a bowl. Layer the bottom of a 9x13-inch glass baking dish with 2/3 of the cracker mix. Mix the chicken breast pieces with cream of chicken soup and sour cream until thoroughly combined, and spoon the mixture on top of the crumb crust. Sprinkle remaining 1/3 of the cracker mix over the top of the chicken mixture.
  • Bake in the preheated oven until the casserole is hot and bubbling, about 1 hour.

4 skinless, boneless chicken breast halves
½ cup butter, melted
1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon poppy seeds, or more if desired
1 (8 ounce) container sour cream
1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese

Steps:

  • Place the chicken breasts into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium, cover, and simmer until the chicken breasts are no longer pink in the center, about 20 minutes. Drain the water, then shred the chicken.
  • Preheat an oven to 350 degrees F (175 degrees C). Combine the butter, crackers, and poppy seeds in a bowl; set aside.
