MOROCCAN PRESERVED LEMONS image

Yield 5 lemons

Number Of Ingredients 2

10 lemons, scrubbed and dried
1/2 cup Kosher salt

Steps:

  • * Juice 5 of the lemons * Quarter the other 5 lemons lengthwise, stopping 1/4 inch from bottom * Pack salt on exposed flesh then re-form the lemons into their original shape * Stuff lemons into a clean, dry jar, adding salt between layers * Fill jar with lemon juice, ensuring all lemons are submerged * Seal the jar and store in a dark, warm space (pantry) * Let sit for 30 days, turning jar upside down every couple of days to disperse the juice and salt * To use, rinse a preserved lemon and remove the pulp unless called for in the recipe * Preserved lemons will keep up to one year in the refrigerator.
