LITHUANIAN KUGELIS

This is a Lithuanian dish that my family makes mainly during the holiday season. It goes great with ham or turkey. It is also served in many authentic European restaurants. This recipe is time consuming but well worth the work put into it. This is a 'stick to your ribs' dish and is in no way considered lo-cal or healthy. A dollop of sour cream on top of each piece is a great topping.

1 pound bacon, diced
2 large onions, diced
½ cup butter
5 pounds russet potatoes, peeled and shredded
1 (12 fluid ounce) can evaporated milk
6 eggs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a Dutch oven set over medium heat, cover, and cook until the bacon has softened and begun to release it's grease. Stir in the onion and cook until softened and translucent. Remove the cover, and continue cooking and stirring until the mixture caramelizes and turns a deep, golden brown. Remove from heat and stir in butter to melt.
  • Stir shredded potatoes into the onion mixture, then stir in the evaporated milk and eggs until well combined. Pour into a 9x13-inch glass baking dish.
  • Bake in preheated oven for 1 hour, or until golden on top. Remove and let stand for 10 minutes before slicing into 3x3-inch squares. Serve hot.

1 pound bacon, diced
1 large onion, grated
5 pounds Russet potatoes, finely grated, and soaked in water
½ cup flour
1 (12 ounce) can evaporated milk
6 eggs
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a large skillet over medium heat, fry bacon pieces until crisp; remove to paper towels. Reserve half of bacon drippings, and set aside. Return skillet to stove; stir onions, and cook until soft and translucent.
  • In a large bowl, stir together reserved drippings, bacon, onion, and potatoes. Mix in flour, evaporated milk, and eggs. Season with salt and pepper to taste.
  • Pour into baking dish, and bake in a preheated oven until top is nicely brown, about 1 hour. Cut into squares, and serve with sour cream, if desired.

This creamy, delicious dish is part casserole, part hash brown. With the can't-miss combo of potato, bacon, and onion, this has a wonderful flavor. Enjoy this as a side dish or main course. Serve with a little applesauce or some sour cream. Sprinkling more bacon on top would be tasty too.

5 lb red or yukon gold potatoes, peeled and shredded (use a food processor if you have one.)
6 slice thick cut bacon, cooked until crispy (reserve fat)
1 md onion, shredded
7 eggs, beaten
12 oz can evaporated milk
1 Tbsp salt, or more to taste
pepper, to taste (i use about a teaspoon.)
sour cream, to top

Steps:

  • 1. Cook bacon until crispy. Set aside to cool and let the bacon fat cool as well. When bacon is cool, chop finely in food processor.
  • 2. Pre-heat oven to 400 degrees. Beat eggs, milk, salt and pepper as well as the reserved bacon fat. Add bacon and mix well.
  • 3. Peeled potatoes should be shredded as the last step to keep them from turning color. Shred onion with the potato. Mix potatoes/onion with the egg mixture completely and pour into a greased baking dish. (I used a 10 x 15.)
  • 4. Bake and test for doneness at 1 hour. Like a cake, it will pull from the sides of the pan and a knife should come out clean.
  • 5. Slice and serve with sour cream on top. This can also be sliced thin and fried with butter as a side with eggs for breakfast.

This is a Lithuanian Ethnic dish. The main ingredient is potatoes. The recipe comes from my fathers grandmother and has been a family favorite for more than 75 years. Serve hot as a main dish with either sour cream or applesauce.

¾ pound salt pork, diced
1 onion, coarsely chopped
5 pounds potatoes, peeled and cubed
3 onions, coarsely chopped
6 eggs
1 cup all-purpose flour
2 tablespoons olive oil
ground black pepper to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Oil a 12x15 inch pan with olive oil.
  • Place salt pork in a large, deep skillet over medium heat. Cook until evenly brown, stirring occasionally. Stir in 1 chopped onion, and continue cooking until onion is tender and lightly browned; set aside.
  • Meanwhile, in a large bowl, combine potatoes and remaining chopped onions. Fill the bowl of a food processor with the mixture, and 1 egg. Process until smooth, then transfer to a large bowl. Repeat until all has been processed. Season with pepper. Stir in the salt pork mixture. Blend in flour gradually to absorb some moisture, but err on the side of less flour.
  • Bake in the preheated oven for 25 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking for 1 hour, or until top is evenly browned.
