Grog came about when Admiral Sir Edward Vernon, while trying to cut costs and conserve supplies on the open sea, diluted the crew's rum with water. Eventually, the crew realized the drink tasted better served hot. For a more flavorful drink try this recipe using apple juice!

2 ounces dark rum
3 ounces apple juice
1 lime, juice of
1 teaspoon honey or 1 teaspoon brown sugar
2 whole cloves
1 slice fresh ginger, thin slice
1 small cinnamon stick

Steps:

  • Add all of the ingredients to a small saucepan and heat gently to dissolve the honey.
  • When hot, strain into a heatproof mug.

GRINGAS (TRADITIONAL RECIPE)



Gringas (Traditional Recipe) image

Gringas are a variety of taco with a quesadilla base. It consist of a flour tortilla filled with cheese, "al pastor" meat (marinated pork), and pineapple slices. It is then grilled in the same manner as a quesadilla.

3 1/2 ounces achiote paste (find it at mexican grocery stores it is called bija or bijol in Spanish)
3 canned chipotle chiles in adobo, plus 4 tablespoons of the canning sauce
1/4 cup olive oil, and a little more for the fruit
1 1/2 lbs thin-sliced pork shoulder (1/4-inch-thick slices are ideal)
1 medium white onion, finely chopped
1/2 of a medium pineapple, sliced
20 warm flour tortillas
3 cups of shredded oaxaca cheese or 3 cups monterey jack cheese
salsa verde or salsa, roja

Steps:

  • To marinate the meat: In a blender, combine the achiote paste, chiles, canning sauce, oil and 3/4 cup water. Blend until smooth. Use 1/3 of the marinade to smear over both sides of each piece of meat (refrigerate the rest of the marinade to use on other meat or fish). Cover and refrigerate for at least an hour.
  • To cook the meat, you can grill it an high heat or use a grilling pan on the stove. Over high heat, sear the meat for about one minute per side (until you can see brown grill marks) and set aside. Cut into 1/4- to ½ inch pieces or slices and reserve.
  • On the same grill, sear the pineapple slices until you see the grill marks. Set aside.
  • To build the "gringas": Put some sliced meat on a flour tortilla and pour a handful of shredded cheese over it. Cover with another flour tortilla and warm them on the grill or a pan, over medium heat, for about a minute per side or until the cheese is melted and the tortilla is golden brown. Set aside.
  • To serve, cut each piece into half or quarters. Garnish with a few slices of pineapple, chopped cilantro and sour cream. You can always add green or red salsa, and avocado.

  • Decorate with a cherry. Serve with straw.
  • Note: Trader Vics served this in a ten pin pilsener glass.

A rich, spicy, sweet coffee delight. You can sub 1 1/2 teaspoons of rum flavored extract for the dark rum for a non-alcoholic version.

2 tablespoons butter
1/2-1 cup brown sugar (depending on how sweet you like it)
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 1/2 cups dark rum (I like Meyer's)
12 slices orange rind
12 slices lemon peel
1 1/2 cups heavy cream or 1 1/2 cups half-and-half
9 cups coffee

Steps:

  • In a saucepan, melt the butter over low heat.
  • Blend in the sugar, spices, and rum.
  • Allow mixture to cool.
  • Store in a sealed container in the refrigerator until ready to use.
  • Place one piece of orange peel and one piece of lemon peel into each mug.
  • Mix 3/4 cup coffee and 2 tablespoons cream together with 2 tablespoons of the spiced rum mixture in each mug (only 1 teaspoon of the spice mixture if you subbed extract for the rum).
  • Top with whipped cream, if desired.
