GRILLED BRUSCHETTA CHICKEN
This comes from the Kraft Food & Family magazine. Perfect for summer but for that matter, if you have an indoor grill pan, do this one all year around.

Steps:
- Place large sheet of foil over half of grill grate. Pour 2 T of the dressing over chicken in resealable plastic bag and seal. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes to marinate. Remove chicken from marinade and discard marinade bag.
- Grill chicken on uncovered side for 6 minutes. Meanwhile, combine tomatoes, cheese, basil and remaining 2 T of dressing.
- Turn chicken over and place cooked side up on foil on grill. Top evenly with the tomato mixture. Close lid. Grill an additional 8 minutes until chicken is done.

Steps:
- 1. Preheat oven to 400 degrees. Spray 9x13 inch glass baking dish with cooking spray.
- 2. Toss chicken with salt. Place in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic and stuffing mix; let sit to soften.
- 3. Sprinkle the cheese on top of chicken, then Italian seasoning and then stuffing mixture.
- 4. Bake uncovered for about 30 minutes.

- 1. Heat grill to medium heat.
- 2. Place chicken in large resealable plastic bag. Add 2 tbsp. dressing. Refrigerate 10 minutes. Remove chicken from bag; discard bag and dressing.
- 3. Cover half the grill grate with sheet of heavy-duty foil. Place chicken on uncovered side of grill grate; grill 6 minutes. Meanwhile, combine remaining dressing, tomatoes, cheese and basil.
- 4. Turn chicken; place on foil. Top with tomato mixture. Grill 8 minutes or until chicken is done.
- 5. Substitute: If you don't have fresh basil, you can use 1 tsp dried basil leaves instead.
