KRABBY CRAB COLESLAW WITH SPICY NUTS
Cole slaw transformed - with Krab/crab, green onion, tomato and a spicy, crunchy peanut topping. Can be made the day before and served as a main or side dish. Prep time does not include refrigeration.

- Preheat oven to 300°F.
- In a small bowl, whisk together oil, sugar, garam masala, curry and cayenne, add peanuts and mix well.
- Bake on a nonstick cookie sheet 20 minutes, remove and cool on paper towels.
- Combine cole slaw mix, green onion, tomato and Krab in a large bowl.
- In a small bowl, whisk together mayo, vinegar and sugar.
- Pour dressing over cabbage mixture, season with salt and pepper, toss to combine, refrigerate 2 hours or overnight and top with nuts just before serving.

LOW FAT SHRIMP OR CRAB COLESLAW
Using a low fat yogurt in the dressing makes this healthier without losing out on the taste. Fresh or imitation crab can be used in place of the shrimp, or you can mix the two. - Quarter and core the cabbage. Peel the carrots and onion and cut into pieces that will fit through the feed tube of a food processor. Fit the food processor with the grater attachment and push the cabbage, carrots and onion through the feed tube to grate. Toss the grated vegetables in a large bowl.
- Prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, 1 teaspoon black pepper and the cayenne in a medium bowl. Toss the dressing with the cabbage mixture and season with salt and pepper. Cover with plastic wrap and chill at least 2 hours before serving.
MICROWAVE SPICY NUTS
My sister in law brought me these and have become addicted. I found out her recipe very well in the microwave. I use Emerald's Essence. I am sure this would work with pecans.

- Spray a cookie sheet with Pam and heat in microwave 2 minutes.
- Meanwhile, mix together Tamari Sauce and cayenne with almonds.
- Spread on heated cookie sheet.
- Microwave on High for 5 mintes, stopping every minute to stir.
- Spread the roasted almonds on a parchment lined cookie sheet(not the same one you used to cook.).
- Cool a few hours or overnight to make sure they have dried.
- Voila -- a very tasty and healthy snack.

- Cut cabbage in quarters and remove core. Peel carrots and onion and cut into pieces that would fit through the feed tube of a food processor. Fit food processor with the large-holed grater attachment and push cabbage, carrots, and onions through feed tube to grate. In a large bowl, toss vegetables together.
- In another medium bowl, prepare the coleslaw dressing by whisking together the mayonnaise, mustard, cider vinegar, sugar, black pepper, and cayenne. Toss dressing with the cabbage mixture, and season with salt and pepper, to taste. Cover with plastic wrap and chill for at least 2 hours before serving.
SPICY PEANUT COLESLAW LIKE ARMADILLO WILLY'S
Not sure how many restaurants Armadillo Willy's have, but the one I usually go to is their original one and the one I've been going for something like 30 years. It's a BBQ restaurant with what I think of as one of the better tasting BBQ around. They also have this coleslaw that I really like. I've seen other clones but the one near us do not have onion, apple, green onion in their's. Taking it apart, it is chopped green cabbage with some red cabbage for color only, small amount of shredded carrots, cilantro and peanuts. What makes this coleslaw tasty is the spiciness. I've experimented with this dressing and it's not 100% there yet to the original one, but it's getting awfully close. The way most of these smaller places work is they incorporate what's available to them in their side offerings. And the cost is something they must look at. They keep 2-3 types of hot sauces for you to take to the table and I think that's where the spiciness is coming from.
