This recipe is an easy to make, and easy to eat addition to the outdoor fun on National Picnic Week. Tofu is a good source of protein and comes in a range of textures, firm suitable for grilling and stir-fries, soft for desserts and sauces. Good news for all the women out there suffering with menopausal symptoms, hot flushes, for example, may be improved by incorporating tofu in the diet. Tofu contains phytoestrogens called isoflavones which have a similar structure to the female hormone oestrogen, which could slightly boost the oestrogen levels in women. Sesame seeds have numerous benefits, from heart, skin and hair health to reducing inflammation in the joints.

500 g firm tofu, cut into cubes
80 g leeks
10 g toasted sesame seeds
62 1/2 ml soy sauce (gluten-free optional)
62 1/2 ml sesame oil
100 g apples, cored and chopped into quarters
30 ml maple syrup
10 g toasted sesame seeds
25 g chili paste, Korean

Steps:

  • Combine all ingredients for the marinade in a blender and puree until smooth.
  • Marinate tofu overnight.
  • Thread tofu and leek pieces alternately onto skewers.
  • Pre-heat grill pan to 220C/430°F Coat with non-stick cooking spray.
  • Grill for 2-3 minutes on all four sides.
  • Sprinkle with toasted sesame seeds before serving.

1/3 cup soy sauce
1 small pear, peeled and diced
2 tablespoons toasted sesame oil
1 tablespoon rice vinegar
2 teaspoons honey
1 teaspoon ground ginger
1/2 teaspoon onion powder
3 garlic cloves
1 pinch red pepper flakes
1 lb extra firm tofu, drained, pressed and cut into 1/2-inch slabs
1/4 cup sesame seeds

Steps:

  • Combine all the ingredients (except tofu and sesame seeds) in a blender and puree. Pour into a shallow dish.
  • Place tofu in the marinade, turning to coat. Cover and place in the fridge for 24 hours - 5 days.
  • Remove tofu from the marinade (you can use it to make a sauce if you want, since there's no raw meat involved) and roll in the sesame seeds.
  • Preheat a grill pan or skillet over medium high heat (I don't recommend an actual barbecue for this unless the grate is really narrow). Grease well.
  • Place tofu in one layer on the pan and cook 6 minutes, then carefully turn over and cook another 5-6 minutes.
  • Serve as part of a rice or noodle bowl, or with a stir fry. This also tastes great as part of a sandwich or wrap.
