2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground red pepper
8 boneless skinless chicken thighs
cooking spray
6 tablespoons honey
2 teaspoons cider vinegar

Steps:

  • Preheat broiler.
  • Combine first 6 ingredients in a large bowl.
  • Add chicken; toss to coat.
  • Place chicken on a broiler pan coated with cooking spray.
  • Broil chicken 5 minutes on each side.
  • Combine honey and vinegar in a small bowl.
  • Remove chicken from oven; brush 1/4 cup honey mixture on chicken.
  • Broil 1 minute.
  • Remove chicken from oven and turn over.
  • Brush chicken with remaining honey mixture.
  • Broil 1 additional minute or until chicken is done.

This is a good low fat recipe for chicken thighs. The recipe comes from my New family cookbook for people with diabetes. The marinating time is not included in prep time or cook time.

4 large skinless chicken thighs (1 1/2 pounds I use boneless-skinless.)
1 (8 ounce) container plain low-fat yogurt
1/4 cup hot salsa, of your choice
1 tablespoon curry powder
1 teaspoon ground cumin

Steps:

  • Place the chicken in a glass dish.
  • In a small bowl, combine the yogurt, salsa, curry and cumin.
  • Pour over chicken, turning to coat.
  • Cover and refrigerate at least 6-hours or up to 24 hours.
  • Preheat oven to 375 degrees.
  • Transfer the chicken and sauce to an oven proof dish, sprayed with nonstick pan spray.
  • Bake uncovered, 40 to 45 minutes, or until chicken is tender and cooked through.

This recipe is inspired by Luby's "Recipe #65768" My version is just as Spicy & Delicious as the original, but lower in fat and uses a less expensive cut of chicken. Serve with rice and a nice cucumber salad to cool off the palate.

5 chicken leg quarters, cut in half, skin removed
1/2 teaspoon salt
1 teaspoon cayenne powder (more if you like it really spicy)
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon turmeric
1 teaspoon garlic, minced
1 lb mushroom, sliced
1 (10 3/4 ounce) can fat-free cream of chicken soup
1 (10 3/4 ounce) can water

Steps:

  • Preheat oven to 400 degrees.
  • Spray a light coating of olive oil over bottom of 9x13 baking pan.
  • Skin chicken leg quarters and cut into legs and thighs.
  • Place chicken pieces in 9 x 13 baking pan.
  • In a medium bowl, mix together remaining ingredients.
  • Pour mixture over chicken.
  • Bake uncovered 30 minutes, or until chicken is cooked through.

RIDICULOUSLY EASY JUICY CHICKEN THIGHS

I am almost too embarrassed to post this because of its simplicity, but my family loves it. I always used to marinate chicken in Italian Dressing and one day I realized I was out so I grabbed a bottle of Newman's Own Light Lime Vinaigrette instead because it's all I had on hand (and it's 50% less fat and 52% fewer calories than regular dressing). WOW. The lime adds a wonderful "zing" to the chicken. Two ingredients. Can't get much easier than that. Tastes great served with couscous (use some of the juices atop the couscous) and a green veggie. I plan to try this method on chicken kabobs on the grill in the summer months.

6 ounces newman's own light lime vinaigrette dressing
8 -10 chicken thighs (with bone and skin)

Steps:

  • Wash chicken thighs and pat dry. Place the chicken skin side up in a shallow baking dish and pour the dressing over the chicken. Cover with plastic wrap and marinate in the refrigerator for a minimum of an hour.
  • Preheat oven to 375 degrees. Retaining the marinade, cook the chicken, uncovered, for 45 to 60 minutes (to desired doneness).

These chicken thighs are so yummy and easy to make! Perfect for busy weeknights. Just get the spices together the night before, allow the thighs to marinate over-night, and voila -- no need to worry about tomorrow's dinner. I love the spicy and smoky flavors, and the thighs remain juicy on the inside with a nice crispy crunch outside! I haven't tried this with other meats, but I have a feeling this will go great with pork as well!

1 tablespoon cayenne pepper
1 tablespoon paprika
1 tablespoon garlic powder
1 -2 tablespoon chili powder (depending on how much spice you like)
salt & pepper
4 chicken thighs
1 tablespoon soy sauce

Steps:

  • Combine cayenne pepper, paprika, garlic powder, chili powder, salt and pepper in small bowl.
  • Place chicken thighs on plate. Sprinkle liberally with the spice mixture. Make sure chicken thighs are all well-coated.
  • Place chicken into a bowl, cover, and refrigerate for at least 8-10 hours (I like to let it marinade overnight).
  • When you're ready to cook, preheat oven to 350 degrees.
  • Place chicken thighs in single layer on a baking tray.
  • Spoon a drizzle of soy sauce (about 1 TSP) over each thigh.
  • Bake for about 30-45 minutes, or until chicken is completely cooked.
