HAM & CHEESE OMELETTE
This omelette is easy to make when you are in a hurry. it does not need a lot of ingredients, but still tastes great, and is a great head start to the mornings!

Steps:
- Wash and chop green onion.
- Wash and slice ham.
- In a mixing bowl, combine eggs, ham, milk, onion, salt and pepper. Beat well.
- Heat skillet on medium and melt margarine.
- Pour egg mixture into skillet. As the omelette begins to set, lift up edges with egg flipper so uncooked portion of egg can flow under the cooked portion.
- When eggs are set but the top is still moist, sprinkle ¾ of the cheese over it.
- Fold one edge of the omelette over the cheese, then sprinkle the remaining cheese over the top.
- Slide omelette onto the plate and cut into portions.

KITTENCAL'S GREEK FETA AND OLIVE OMELETTE
yes baking powder you read correctly... this is the secret to the must fluffiest eggs! you may adjust all amounts to taste, since the feta cheese is highly salted I have left the salt as optional, if you really wanted to take this omelette to another level add in some fresh sauteed mushrooms slices :) --- also see my recipe#251220

Steps:
- In a bowl whisk eggs with whipping cream, baking powder, oregano and black pepper until well combined; allow to sit for 5 minutes.
- In a medium skillet melt butter over medium heat until sizzling.
- Whisk/stir the egg mixture one more time then pour into hot skillet; cook without stirring for 3 minutes or until almost set, gently lifting the edge of the eggs with a spatula to allow any uncooked egg to flow underneath.
- On one side of the ometette sprinkle the feta cheese and olives.
- Lift the uncovered half over the cheese and olives and cook for another 2-3 minutes.
- Slide onto a plate.

CARAMELISED ONION & GOATS CHEESE OMELETTE
Adapted from a recipe, from 'Australian Men's Health' magazine that I found online in October 2008. Add your choice of herbs. Lately I've been using grindings of a fabulous rosemary and sage blend in a grinder.

- Melt the butter in a (preferably non-stick) pan and sauté the onion and garlic until they have softened and just lightly browned; add the sugar and continue cooking until the consistency of the contents of the pan is sticky like a jam; remove from the pan. If you want to use the same pan, rinse or wash it as necessary and wipe it clean with kitchen towelling.
- Whisk the eggs lightly and pour into a (preferably non-stick) pan; when the base of the omelette is beginning to set, add the cheese, onions and garlic, your choice of herbs and salt and pepper to taste.
- Cook the top of the omelette under a grill; slide the omelette onto the serving plates and serve immediately with your choice of salad greens drizzled with olive oil and sprinkled with lemon zest.

KITTENCAL'S FLUFFY OMELET
Of course you can double this and make it in a large skillet! You can use any favorite cheese you desire, cheddar is good also, I prefer Monterey Jack for omelets! The trick to a fluffy omelet is the baking powder, so do not omit and don't overcook the eggs! --- also see my recipe#251220

- In a small bowl whisk together eggs, baking powder, cream, green onions, salt and pepper until frothy.
- Heat an 8-inch skillet over medium heat until your hands feel warm when held about 2-inches above the surface; add in butter and swirl to coat the bottom of the pan evenly.
- Pour the whisked eggs into the skillet; let set slightly.
- Using a heat-proof spatula, push eggs from edge towards the center; tilt pan to let egg fill the spaces.
- Repeat until omelet if JUST set (about 1-2 minutes).
- Sprinkle the grated cheese down the center of the omelet.
- Using the same spatula, gently fold the omelet over the cheese.
- Tilt skillet and slide the filled omelet onto a serving plate (don't worry if you tear the eggs slightly!).
