Made with Champagne and creme de cassis (a blackcurrant liqueur), the classic French cocktail is fruity and refreshing. For a casual affair, serve your Kir Royales in stemless glasses.

3 ounces (6 tablespoons) creme de cassis
1 bottle Champagne or other sparkling white wine
6 strips tangerine or orange zest, for garnish

Steps:

  • Just before serving, pour 1 tablespoon creme de cassis into each glass. Fill with Champagne, and garnish with zest.

3 tablespoons Cassis
1 bottle good Champagne
6 twists of lemon

Steps:

  • Fill the bottom of 6 Champagne glasses with 1/2 tablespoon Cassis. Pop open a bottle of Champagne and divide among the glasses. The color of the drink should be a sunset pink. Garnish with lemon twists.

ice cube, as needed
1 strip orange rind, pith removed
1 tablespoon creme de cassis
6 ounces sparkling white wine (recommended -- Cava)
mini or champagne grapes, for garnish (or any other fruit)

Steps:

  • Chill 1 champagne flute that has been filled with ice cubes. Discard the ice before filling the glass with the cocktail.
  • Squeeze the orange rind to allow its oils to rise to the surface. Rim the glass with the rind, and then drop it into the glass. Pour in the Creme de Cassis, and fill the rest of the glass 3/4 of the way with the sparkling white wine.
  • Garnish the drink with the grapes. Cheers!

BLUE GINGER KIR ROYALES

Number Of Ingredients 5

2 cups ginger slices, peeled (1/8-inch thick)
1 1/2 cups sugar
2 cups water
1/4 cup blue curacao
1 bottle champagne or sparkling wine

Steps:

  • Mix ginger, sugar, water and curacao all together in a saucepan and bring to a slow simmer. Reduce mix by 50 percent until a syrupy consistency is reached. Keep in mind that the syrup will thicken as it cools. Strain warm syrup and allow to cool completely in the refrigerator. Take ginger slices and completely coat in sugar. Spread on sheet pan and slowly dry out in a preheated 225 degree oven for 3 hours. Ginger slices should be dried but still chewy.
  • Using champagne flutes, add 1 tablespoon of the syrup and fill to the top with champagne. Drop a small sliver of candied ginger in each glass, enjoy.
