I was watching King of the Hill, Peggy mentions making Frito® pie. My husband looks at me and says see if you can find something like that on the internet. Looking at other people's recipes on other sites, I decided to make my own version of Frito Pie. While Hank Hill prefers Wolf Brand Chili, I made my own. :) Hope you enjoy!

1 pound lean ground turkey
2 (8 ounce) cans tomato sauce
1 (10 ounce) can petite diced tomatoes with green chiles
1 (6 fluid ounce) can tomato juice, or more to taste
1 (1.25 ounce) package mild chili seasoning mix
1 (16 ounce) package corn chips (such as Fritos®)
½ cup shredded Cheddar cheese, or to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Stir tomato sauce, diced tomatoes, tomato juice, and chili seasoning mix into turkey; simmer until until chili is hot, about 5 minutes more.
  • Pour corn chips into a large bowl and top with turkey chili. Sprinkle Cheddar cheese over chili.

Frito pie is legendary in the Southwest for being spicy, salty and cheesy fabulous. Here's my easy take on this crunchy classic. -Jan Moon, Alamogordo, New Mexico

Number Of Ingredients 7

1 pound ground beef
1 medium onion, chopped
2 cans (15 ounces each) Ranch Style beans (pinto beans in seasoned tomato sauce)
1 package (9-1/4 ounces) Frito corn chips
2 cans (10 ounces each) enchilada sauce
2 cups shredded cheddar cheese
Thinly sliced green onions, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain. Stir in beans; heat through., Reserve 1 cup corn chips for topping. Place remaining corn chips in a greased 13x9-in. baking dish. Layer with meat mixture, enchilada sauce and cheese; top with reserved chips., Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, sprinkle with green onions.
