⅓ cup honey
1 tablespoon vegetable oil
2 eggs
1 tablespoon orange zest
½ teaspoon salt
1 ½ cups rolled oats

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Stir together the honey, oil, and eggs. Add the orange rind and salt. Mix in the oatmeal and stir well.
  • Drop on cookie sheets and bake for 8 to 10 minutes.

From the November 2002 issue of Canadian Living Magazine: In January 2001, in honour of the United Nations International Decade for the Culture of Peace, Monica Mueller of Burnaby BC started a progam that provides cakes for conferences and cultural events that focus on developing kindness. The cakes hark back to many cultures with their traditional ingredients (almonds, from the Jewish mandelbrot; dates, eaten to break the fast during the Muslim holy month of Ramadan; cranberries, from the cuisine of Canada's native peoples). She hopes that on World Kindness Day (Nov. 13) people will make these cakes and--in the spirit of kindness--give one away. Well, Recipezaar members -- are we up for that?! :-)

1 cup butter, softened
1 1/2 cups white sugar
3 large eggs
1 tablespoon freshly grated orange rind
3 cups all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups buttermilk
1 1/4 cups chopped pitted dates
1 cup cranberries (fresh or frozen)
1 cup chopped almonds
2 tablespoons butter, softened
2 cups icing sugar (sift through a sieve after measuring to remove lumps)
2 tablespoons orange juice

Steps:

  • Preheat oven to 350 degrees F; line 2 8x4 loaf pans with parchment paper and set aside.
  • In a mixing bowl, beat butter with sugar until mixture is fluffy.
  • Next, beat in eggs, 1 at a time, then stir in orange rind.
  • In a separate mixing bowl, combine flour, baking soda and powder, and salt.
  • Stir dry mixture into butter mixture alternately with buttermilk (dry, buttermilk, dry, buttermilk, finally dry).
  • Into this batter, stir in dates, cranberries and almonds just until combined.
  • Scrape batter into the two prepared loaf pans and bake in the centre of preheated oven until a tester comes out clean, about 75 minutes.
  • Turn out onto cooling racks and cool completely.
  • You could now wrap cakes in heavyduty foil and freeze for up to one month, if you wish.
  • To make icing, beat butter with just 1/4 cup of the icing sugar, then beat in orange juice.
  • Beat in remaining sugar until icing is smooth.
  • Spread icing over tops of both cakes.

I make this easy-peasy, one-pan pasta dish for new parents or stressed-out friends and it always seems to make the evenings go a little more smoothly. The smoked salmon and green pea combo plays up the salty-sweet flavors loads of people crave, and the lemon zest/breadcrumb topping brightens up what could be an over-the-top rich dish.

1 (16 ounce) package frozen petite peas
1 (16 ounce) package fusilli pasta
1 pint heavy whipping cream
2 (3 ounce) packages smoked wild salmon, pulled into small pieces
salt and freshly ground black pepper to taste
1 cup plain bread crumbs
⅓ cup olive oil
⅓ cup chopped Italian flat-leaf parsley
1 lemon, zested and juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place peas in a large colander in the sink.
  • Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until chewy and still firm to the bite, about 9 minutes. Drain fusilli over peas.
  • Return fusilli and peas to the pot. Add heavy cream and smoked salmon; mix well to combine. Season with salt and black pepper. Pour into a 9x13-inch casserole dish.
  • Combine bread crumbs, olive oil, parsley, lemon zest, and lemon juice in a small bowl; mix lightly with a fork. Scatter topping over casserole.
  • Bake in the preheated oven until golden, about 20 minutes.

I got this recipe from the bulletin board at Kids In Motion. I like how simple and healthy it is. The citrus zest adds the most pleasant flavor too!! There is lots of room for adaptation. Try addidng some cinnamon or flax seed meal or even chocolate chips... the possibilities are endless and so delicious!! :::NOTE::: When I mixed this up the first time the consistancy didn't seem right so I added 1/4 cup of flour and they came out beautiful! Adding flax seed meal may help too. Please let me know how they turn out for you!

  • Mix honey, oil & eggs. Add zest, salt, oatmeal & any optional ingredients. (If the batter seems too runny, add 1/4 cup of flour).
  • Drop spoonfuls on an oiled or lined cookie sheet and bake for 8-10 minutes.
