Pan-fried pork chops are the simplest, most delightful and flavorful little numbers-and they're ready in 10 minutes or less.

7 pieces or 8 pieces breakfast chops (very thin bone-in pork chops)
1 c. all-purpose flour
1 tsp. seasoned salt
1 tsp. black pepper
Cayenne pepper, to taste
1/2 c. canola oil
1 tbsp. butter
Extra salt and pepper, to taste

Steps:

  • Rinse pork chops. (Yes, I rinse my pork chops. Please don't be hatin'.) Salt and pepper both sides of the pork chops.
  • Combine all dry ingredients. Dredge each side of the pork chops in the flour mixture, then set aside on a plate.
  • Heat canola oil over medium to medium-high heat. Add butter. When butter is melted and butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side; 1 to 2 minutes on the other side. (Make sure no pink juices remain.) Remove to a plate and repeat with remaining pork chops. Delicious and simple! Serve with smashed new potatoes.

4 boneless pork loin chops (1/4 to 1/2 inch thick)
1 teaspoon salt
1 teaspoon pepper
2 cups buttermilk
1/4 cup Buffalo Hot Sauce (optional)
1 1/2 cups all-purpose flour
1/2 cup cornstarch
2 teaspoons salt
2 teaspoons paprika
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
2 cups vegetable oil for frying

Steps:

  • Season pork chops with 1 teaspoon salt and 1 teaspoon black pepper.
  • Pour buttermilk and hot sauce into a 9x13 pan and stir to combine. Submerge seasoned pork chops into buttermilk mixture and set aside. Refrigerate up to 6 hours, or use right away.
  • In another shallow bowl, stir together flour, cornstarch, 2 teaspoons salt, paprika, 1 teaspoon black pepper, onion powder, and garlic powder.
  • Working one at a time, remove pork chops from buttermilk mixture. Shake it gently to remove the excess. Place it in the dredging mixture and coat thoroughly. Tap off the excess.
  • Place the breaded chops into the 350 degree oil. Fry 2 to 3 chops at a time. The meat will drop the temperature of the oil so keep it as close to 350 degrees as possible. Fry each piece for 4 to 5 minutes, per side, until golden brown and pork is cooked through to an internal temperature of 145 degrees F.
  • Remove from the oil and place on paper towels. Let them rest for 5 minutes before serving.

Steps:

  • Season Salt and pepper both sides of the pork chops.

1/3 cup all-purpose flour, for dredging
2 large eggs
Kosher salt and freshly ground black pepper
1 1/2 cups fresh breadcrumbs
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
4 bone-in pork chops, about 1/2-inch thick and patted dry (about 11/2 pounds total)
Extra-virgin olive oil, for shallow frying
Cooked spinach, for serving
Lemon wedges, for serving

Steps:

  • Put the flour in a shallow dish. Break the eggs into another shallow bowl and whisk with 1 teaspoon salt and a few grinds of pepper. Mix the breadcrumbs with the oregano and thyme in a third shallow bowl.

6 bone-in pork chops
Kosher salt and freshly ground black pepper
2 sleeves butter crackers
3/4 cup all-purpose flour
1/4 teaspoon cayenne pepper
1 cup buttermilk
1 teaspoon hot sauce
Vegetable oil, for frying

Steps:

  • Place the pork chops between two pieces of plastic wrap and pound with a meat mallet to an even 1/2-inch thickness. Use the tenderizer side for a few whacks at the end. Sprinkle both sides of the pork chop with salt and pepper.
  • Finely crush the butter crackers in a large plastic resealable bag.
  • In a small baking dish, combine the flour and cayenne. In a second dish combine the buttermilk and hot sauce. Add the crushed crackers to a third dish.
  • Dredge a pork chop through the flour mixture, dusting off any excess, then through the buttermilk, letting excess drip off, and then through the crushed crackers, making sure to coat on each side. Set on a sheet tray and continue with the remaining chops. Rest the chops for 10 minutes in the refrigerator. This will help the breading stick to the chops.
  • Fill a large high-sided skillet halfway with vegetable oil and heat until a deep-frying thermometer inserted into the oil reaches 375 degrees F.
  • Using tongs, carefully place the pork chops in batches, into the hot oil. Fry, flipping once halfway through cooking (only if the chops are not submerged), until golden brown and fully cooked, about 8 minutes. Repeat with the remaining pork and serve.
