Killer Baja Chili Rellenos Mariscos (Roasted Poblano Chiles Stuffed with Seafood and Rice) image

6 large, fresh poblano chiles (sometimes called "pasilla" chiles)
2 tablespoons vegetable oil
1/2 cup chopped onion
1/2 cup long-grain white rice
1/2 teaspoon whole cumin seeds
1 cup canned chicken broth
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
1/4 pound fresh medium shrimp, shelled and deveined, tails removed
1/4 pound fresh scallops (if using large sea scallops, quarter them)
1 tablespoon fresh squeezed lime juice
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander seed
1 teaspoon dried Mexican oregano, crumbled
2 teaspoons fresh grated lime zest
2 medium sized fresh, red, ripe tomatoes, chopped, with juices
4 ounces cotija cheese (Mexican aged cow's milk cheese), crumbled
1 bunch fresh cilantro, tough stems removed, leaves chopped (reserve a few whole sprigs with leaves intact for garnish)
Grated Monterey Jack cheese, to taste

Steps:

  • Broil or roast the chiles over a flame until skins blister, wrap in a tea towel or put in a paper grocery bag for 10 to 15 minutes to sweat the skins loose. Remove skins and open pepper on 1 side. Remove seeds but do not remove stems. Arrange the prepared chiles in a lightly oiled 9 by 13-inch glass nonstick baking dish.
  • Heat oil in a 10 to 12-inch skillet until hot. Add the onion and saute until translucent (about 2 to 3 minutes). Add the rice and the cumin seeds. Toast the rice and cumin in the oil with the onions for about 2 minutes, stirring constantly. Add the chicken broth, salt and pepper. Stir to combine. Bring the rice to a boil and cover tightly. Turn down the heat and simmer for about 18 minutes, or until rice is cooked, but still a little firm to the bite. Do not overcook the rice. When the rice is cooked, remove from the heat and let it cool slightly.
  • While the rice is cooking, melt the butter in a medium skillet over medium-high heat. When the butter starts to foam, add the shrimp and the scallops and stir or toss to coat them with the butter. Keep the heat at medium-high and saute the seafood for about 3 to 4 minutes, or until just cooked through. Remove the skillet from the heat and add the lime juice. Toss to coat. Set aside to cool.
  • Preheat the oven to 350 degrees F.
  • After the rice has cooled a bit, put it in a large mixing bowl and fluff it with a fork. Add the shrimp and scallops, with the accumulated juices. Add the ground cumin, coriander seed, oregano, lime zest, chopped tomato with their juices, cotija cheese and chopped cilantro. Toss the mixture until thoroughly combined. Gently stuff the peppers with the rice and seafood mixture. Stuff them good and full! If there is any extra, let it spill over into the baking dish. Top the chiles with the Monterey Jack cheese. Bake for about 20 minutes, or until the chiles are heated through and the cheese on top is melted. Garnish with cilantro sprigs.

I created this recipe for an impromptu party a friend was having and needed something for the tortilla chips.

16 ounces Velveeta cheese
2 (10 ounce) cans ro*tel diced tomatoes and green chilies
1 (10 ounce) can hormel chili
2 cups shredded mexican cheese

Steps:

  • Cut Velveeta into 2 inch cubes. Place cubes into crock pot with the Ro*tel, chili and shredded cheese. Mix together. Turn crock pot on Low setting and cover, stirring occasionally. When all cheese is completely melted, it's time to enjoy!
  • (It usually takes an hour and a half or so on Low temp, but if you need it quicker, use High temp, but watch it and stir often to prevent burning).
  • If your crock pot has a "Keep Warm" setting use that after the cheese is melted. Serve warm.

1 (1 pound) package bacon
3 pounds ground beef
4 cloves garlic, minced
2 cups red wine
3 (28 ounce) cans diced tomatoes
2 (14 ounce) cans tomato sauce
2 teaspoons vegetable oil
3 green bell peppers, chopped
4 stalks celery, chopped
2 onions, chopped
2 (19 ounce) cans kidney beans, rinsed and drained
2 (19 ounce) cans white beans, rinsed and drained
1 (19 ounce) can black beans, rinsed and drained
6 tablespoons chili powder
¼ cup brown sugar
¼ cup ground cumin
3 tablespoons paprika
2 tablespoons Italian seasoning
2 tablespoons distilled white vinegar
2 tablespoons dried basil
2 tablespoons dried minced onion
3 tablespoons dried parsley
2 tablespoons crushed red pepper flakes
4 teaspoons dried oregano
12 dashes hot pepper sauce (such as Tabasco®)
1 pinch salt and ground black pepper to taste

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Crumble and set aside.
  • Heat a large stock pot over medium-high heat and cook and stir the ground beef until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the bacon and minced garlic. Reduce heat to medium-low and stir in the red wine, diced tomatoes, and tomato sauce.
  • Heat the vegetable oil in a skillet over medium heat. Stir in the green bell peppers, celery, and chopped onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir onion mixture into the stock pot. Increase the heat to medium-high and bring to a near boil. Mix in the kidney beans, white beans, and black beans. Season with chili powder, brown sugar, cumin, paprika, Italian seasoning, vinegar, basil, dried minced onion, parsley, red pepper flakes, oregano, hot pepper sauce, salt, and pepper. Reduce heat to medium-low and simmer for 1 hour 30 minutes, stirring often.

1 lb navy beans, dry
5 c chicken broth
1/4 c butter
2 Tbsp garlic, minced
1-1/2 c onions, diced
1 c celery, diced
1 c green chilies, diced
2 lb chicken breast, diced
2 Tbsp cumin
1 Tbsp oregano, dried
1 tsp white pepper
1/2 tsp black pepper
1 tsp red pepper flakes
1 can(s) corn (15.25 oz)
8 oz cream cheese

Steps:

  • 1. Wash beans. Cover with water and soak overnight.
  • 2. Place beans in a 5-quart Crock Pot with the chicken stock.
  • 3. In a skillet, melt butter. Sauté chicken and veggies until chicken is done.
  • 4. Transfer all to the Crock Pot, using a bit of chicken stock to deglaze the pan (you really want this as it adds just another depth of flavor to your chili).
  • 5. Cook on low for 6-hours, covered.
  • 6. Just before serving, add cream cheese and let it melt for about 15-minutes.
  • 7. Then stir it through your chili.

1 large onion, minced
1 lb ground beef, extra lean
1 clove garlic
1 Tbsp chili powder
1 tsp allspice, ground
1 tsp cinnamon, ground
1 tsp cumin
1/2 tsp cayenne pepper
1 tsp salt
1 1/2 Tbsp cocoa, unsweetened (or 1-ounce chocolate)
15 oz tomato sauce
1 Tbsp worcestershire sauce
1 Tbsp apple cider vinegar
1/2 c beef broth
2 can(s) kidney beans
1 can(s) corn or hominy

Steps:

  • 1. In a large frying pan over medium-high heat, saute onion, garlic, and chili powder until is onions are cooked.
  • 2. Add the beef and barely cook, more to chop it up.
  • 3. Add allspice, cinnamon, cumin, cayenne pepper, salt, unsweetened cocoa or chocolate, tomato sauce, Worcestershire sauce, cider vinegar, and beef broth.
  • 4. Reduce heat to low and simmer, uncovered, 1-1/2 hours OR put it all in a crock pot and cook on low for 6-hours.
  • 5. Put it in a bowl and top with your favorite chili toppings, if desired!

1 white onion, chopped
2 cloves garlic, minced
1/2 can tomato paste
1 can chopped tomatoes
1/4 tsp thyme
1/4 tsp cumin
1/4 tsp orgeno
1/2 can green chiles
1 Tbsp chili powder
1/2 can beer
1 can chicken broth
1 cup Diablo shrimp sauce or 2 chipotle, minced
1 can black beans

Steps:

  • In 2 Tbsp oil saute garlic and onions for about 5 minutes. Add chicken and spices. Saute for about 3 minutes. Add all other ingredients and reduce for about 30 minutes.
