1/2 cup chopped onion
1 tablespoon butter
2 teaspoons vegetable oil
1 pound smoked kielbasa or Polish sausage, cut into 1/8-inch slices
1 can (28 ounces) pork and beans
1 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon steak sauce

Steps:

  • In a large skillet, saute the onion in butter and oil until tender. Add sausage; cook for 2-3 minutes, or until browned, stirring occasionally; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through.

This is especially good to make when apples are in season and at the peak of their flavor, and it features a favorite food pairing: sweet-tart apples with cheddar cheese.

nonstick cooking spray
8 ounces dried rigatoni pasta or 8 ounces penne pasta
2 cups milk (not fat-free)
2 tablespoons all-purpose flour
1 cup shredded cheese (4 ounces)
1/2 teaspoon salt
1/2 teaspoon bottled hot pepper sauce
3 medium fuji or jonathan apples, cored and cut into 1/2-inch cubes (you want a fine-grained apple in order to avoid the apples getting too mushy when cooked)
8 ounces cooked kielbasa, halved lengthwise and sliced 1/4-inch thick
1 medium green onion, thinly sliced

Steps:

  • Preheat oven to 350 degrees F. Coat a 2-quart baking dish or casserole with nonstick cooking spray; set aside.
  • Cook pasta according to package directions in a large saucepan. Drain and return to saucepan; set aside.
  • Meanwhile, in a medium saucepan whisk together milk and flour. Cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Remove from heat. Stir 1/2 cup of cheese, salt and hot pepper sauce into the milk mixture until smooth.
  • In the large saucepan toss together the cooked pasta, apples, kielbasa and cheese sauce. Transfer to prepared baking dish; cover with foil.
  • Bake in preheated oven for 20 minutes. Uncover and carefully stir pasta mixture. Sprinkle with remaining 1/2 cup cheese and the green onion. Bake 10-15 minuted more or until cheese is melted and sauce is bubbly. Remove from oven and let stand for 10 minutes before serving.

1 pound kielbasa sausage
1 tablespoon olive oil
1 medium red bell pepper, cut into chunks
1 medium onion, cut into chunks
2 teaspoons minced garlic
salt and ground black pepper to taste
1 medium apple, cut into chunks
½ cup shredded Cheddar cheese

Steps:

  • Remove skin from the kielbasa and slice into bite-sized pieces.
  • Heat oil in a large frying pan over medium heat. Add kielbasa, bell pepper, onion, and garlic. Fry until veggies have softened, 5 to 7 minutes. Season with salt and pepper.
  • Stir in apple, then cover with Cheddar cheese. Cover the pan and cook until cheese has melted, about 3 minutes.

This is one of my recipes from New Years Day 2006. It was easy to make and the flavor was amazing. I should have made more.

3 lbs kielbasa
2 (16 ounce) cans apple pie filling
1 dozen maraschino cherry

Steps:

  • Slice your Kielbasa into bite size pieces. I prefer Beef Kielbasa, but other flavors will also work. Be sure it is cold when you slice it so the juices do not run.
  • Lightly coat a 9x14 glass baking dish with unflavored cooking spray.
  • Pour one can of your apple pie filling into your baking dish. Spread it around evenly without crushing the apples.
  • Arrange your Kielbasa pieces in your dish, then pour your remaining can of apple pie filling over them.
  • Cover your baking dish with tinfoil. Insert into your oven and bake at 350 degrees for about 20 minutes.
  • After 20 minutes, turn your Kielbasa slices over, arrange your Maraschino cherries among the apples in your baking dish, re-cover with your tinfoil and continue baking another 20 minutes.
  • Remove from your oven and serve your Kielbasa in your baking dish. Your guests will bombard you with compliments as they gobble up every single piece of juicy Kilebasa. They'll eat all the apples and cherries too.

1/2 cup chopped yellow onion
1 (32 oz.) bag sauerkraut, rinsed and drained
1 pound smoked kielbasa, sliced into 1-inch diagonal pieces
1 (12 oz.) jar Orchard's Finest Fall Harvest Cinnamon Apple Preserves

Steps:

  • Heat oil in large skillet over medium-high heat. Saute onion 2 to 3 minutes or until clear. Add sauerkraut. Cook, stirring occasionally, 8 to 10 minutes or until sauerkraut just begins to brown.
  • Add kielbasa. Cover pan. Reduce heat to medium. Cook 10 to 12 minutes or until lightly browned, stirring occasionally. Stir in preserves. Cook until heated through. Serve immediately.

1 ring kielbasa, about 2 pounds
1 medium onions, chopped
1 tart green apple, cored, pealed and chopped into cubes
1 package sauerkraut
1 tablespoon caraway seeds
1 cup chicken stock

Steps:

  • Preheat oven to 425 degrees. In a large oven-proof skillet over medium heat, saute kielbasa until browned, about 4 minutes on each side. Remove kielbasa to a plate and keep warm. In the same pan, saute the onion and the apple for 1 minute. Drain and rinse the sauerkraut and add it to the apples and onion in the skillet. Add the chicken stock and caraway seeds to the pan and stir. Return the kielbasa to the skillet and cover. Put covered skillet in hot oven and cook for 15 to 20 minutes.

2 pound smoked kielbasa (preferably beef and pork), cut crosswise into 3-inch lengths
2 tablespoons olive oil
3 large onions, chopped (6 cups)
1/2 teaspoon salt
1 teaspoon black pepper
1/2 stick (1/4 cup) unsalted butter
1 large Granny Smith apple
1 3/4 cups reduced-sodium chicken broth (14 fluid ounces)
Accompaniment: mashed potatoes

Steps:

  • Lightly score each piece of sausage in several places with a sharp paring knife. Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then brown half of sausage, turning occasionally, until golden, about 4 minutes. Transfer to a bowl and cover to keep warm. Pour off fat from skillet and wipe skillet clean. Add remaining tablespoon oil to skillet and brown remaining sausage in same manner, transferring to bowl as cooked.
  • Wipe skillet clean again, then cook onions with salt and pepper in butter over moderate heat, stirring occasionally, until golden brown, 15 to 20 minutes. Meanwhile, peel, core, and finely chop apple. Stir apple and broth into onion mixture and simmer briskly, uncovered, stirring occasionally, until apple is tender, 6 to 7 minutes. Add sausage and simmer, stirring, until heated through, about 1 minute.
