1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
3 medium Yukon Gold or red potatoes, chopped
2 medium onions, chopped
2 tablespoons olive oil
1 bunch kale, trimmed and torn
4 garlic cloves, minced
1/4 teaspoon pepper
1/4 teaspoon salt
2 bay leaves
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 carton (32 ounces) chicken broth

Steps:

  • In a Dutch oven over medium-low heat, cook the sausage, potatoes and onions in oil for 5 minutes or until sausage is heated through, stirring occasionally. Add kale; cover and cook for 2-3 minutes or until kale is wilted. Add garlic; cook 1 minute longer. , Add the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 9-12 minutes or until potatoes are tender. Discard bay leaves.

Creamy Kielbasa Sausage and Kale Soup made on the stovetop. You'll love this thick stew made with pieces of kielbasa, kale and potatoes.

8 cups chicken broth ((or water, but broth is more flavorful))
1 tablespoon butter
4 large potatoes (peeled and cubed)
3 carrots (peeled and sliced)
1 pound kielbasa sausage (chopped into 1 inch pieces)
5 ounces kale (chopped (this is about 5 cups))
1 teaspoon salt
½ teaspoon pepper

Steps:

  • Add chicken broth, butter, potatoes and carrots into a large soup pot, stir and bring to a boil. Continue cooking on a low boil until a fork easily goes through the potatoes, about 20 minutes.
  • Remove half of the potatoes/carrots from the pot and set aside for later. Use an immersion blender and blend the broth with remaining potatoes, carrots that are in the pot until creamy.
  • Add sausage, kale, salt and pepper to pot, stir to combine.
  • Bring to a boil and then simmer for 20 minutes. Add remaining potatoes and carrots back into the pot and stir. Serve and enjoy!

KALE AND BARLEY SOUP

The kale, filling barley, herbs and veggies not only make healthy soup but also a flavorful winter meal.I have used homemade vegetable stock for this recipe. If you do not have time to make stock at home, use only a low sodium stock, preferably organic to avoid any preservatives.

1/2 Cup Barley
1/2 Bunch Kale, small chopped
Salt and Black Pepper, adjust per taste
2 tbsp Lemon, Juice and zest of 1 lemon
2 tbsp Parsley, fresh leaves, small chopped
1 Cup Mix Vegetables, frozen or fresh chopped carrot, beans, celery
1 tbsp Olive Oil
1 inch Ginger, small chopped
1 Garlic, clove, crushed
6 Cup Vegetable Stock, preferable homemade

Steps:

  • Heat oil in a deep heavy bottom pan. Add veggies with garlic and ginger and saute until veggies are soft. (3-4 minutes)
  • Add 5 cups of vegetable stock, herbs, and barley. Bring to boil and simmer for 15-20 minutes or until barley is tender.
  • Now add salt (taste the soup base before adding salt since if using canned stock, it will already have salt in it). Add chopped kale leaves (discard stems), lemon zest and simmer on low heat for about 5 minutes. Finish with fresh chopped parsley leaves and more lemon juice. Serve and enjoy!

1 bunch kale, stems removed and discarded
1 tablespoon olive oil
8 ounces kielbasa sausage, sliced thin
1 bunch green onions, sliced
3 cups chicken broth
1 (15.5 ounce) can white beans, drained and rinsed
½ teaspoon salt
1 pinch ground black pepper to taste
1 pinch grated Parmesan cheese, or to taste

Steps:

  • Roll kale leaves into tight tubes and cut crosswise into 1/4-inch strips.
  • Heat oil in a large, heavy saucepan over medium heat. Cook and stir kielbasa in hot oil until browned, about 5 minutes. Stir green onion with sausage; cook until onions soften, about 3 minutes. Add kale; cook and stir until kale wilts, about 3 minutes.
  • Pour chicken broth over kielbasa mixture; add beans and stir. Bring the mixture to a boil, reduce heat to low, and cook at a simmer until kale is completely tender, about 15 minutes. Season mixture with salt and pepper and top with Parmesan cheese.

1 package (14 ounces) smoked kielbasa or Polish sausage, halved lengthwise and sliced

1 can (28 ounces) crushed tomatoes
1 package (16 ounces) dried brown lentils, rinsed
1 can (15 ounces) black beans, rinsed and drained
3/4 cup medium pearl barley
1/2 cup frozen corn
10 cups reduced-sodium chicken broth

Steps:

  • In a 6-qt. stockpot, heat oil over medium heat. Add kielbasa; cook and stir 6-8 minutes or until browned. This is a nice soup recipe with a lot of texture and flavor. It is a welcome change for those weeks when there doesn't seem to be a lot of variety... and all 3 of my kids even loved it. This can also be cooked in a pan on the stove until the barley and carrot are tender, but I prefer the slow cooker method. The flavors seem to blend better.

1 medium onion, chopped
3 -4 garlic cloves, chopped fine
2 teaspoons dried oregano, crushed

6 1/2 cups fat free chicken broth
1 cup pearl barley
2 bay leaves
3 medium carrots, sliced
2 small zucchini, sliced
1/2 cup fat-free chicken broth
1 lb kielbasa, sliced (the kind you perfer)
1 dash garlic powder (this is optional)
1 dash onion powder (this is optional)
1 dash Old Bay Seasoning (this is optional)

Steps:

  • In a large pot wit cover, heat oil. Add 1/2 mushrooms, onion & garlic. Saute about 3-4 minutes stirring occasionally. 1 cup water
1 large onion, chopped
2 -4 fresh portabella mushrooms, cubed
1 (8 ounce) container sliced button mushrooms (Porcini, package size is a guess, it's just the regular size of pre-sliced you find at the store)
1 (4 ounce) package mushrooms, of choice (Shitaake, Oyster, Morel, etc.)
2 tablespoons olive oil
1 carrot, diced (optional)
1 cup celery, sliced
1 cup barley
1/2 lb kielbasa or 1/2 lb Polish sausage, cut into chunks
1 bay leaves or 1/4 teaspoon dried basil

  • Heat the olive oil in the bottom of a deep pot.
  • Add the onion and sauté until almost transparent.
  • Add the celery [and carrot if used] and sauté until limp and throw in the keilbasa or sausage.
  • Let the flavors blend.
