1 good sized kielbasa

Steps:

  • Combine wine and onions in a heavy skillet.
  • Place sausage in the wine mixture and bring it to a boil.
  • Lower the heat and simmer turning several times for 35- 40 miutes.
  • Slice and serve.

1 onion, peeled and diced
1 head savoy cabbage, shredded
1 (15 ounce) can sliced potatoes
1 ½ pounds kielbasa sausage
3 tablespoons red wine vinegar

  • Saute margarine and onions in a large skillet until the onions are soft.
  • Stir cabbage and potatoes into the skillet and saute until the cabbage becomes wilted. Place the kielbasa, wine vinegar, salt and pepper into the skillet. Cook kielbasa covered over a low heat, stirring occasionally until cooked through. Pour the water into the pan, cover and cook another 10 minutes before serving.

This sheet-pan dinner of roasted kielbasa, caramelized cabbage and white beans marinated in a dill-and-red wine vinaigrette comes together in about a half-hour. There are many different types of kielbasa, but the smoked version typically found at American grocery stores is horseshoe-shaped and, when roasted, tastes a little like pepperoni. Feel free to play around with substitutions: You can use green or red cabbage for the Savoy, though the leaves won't get quite as frizzled and golden. Instead of dill, chives or parsley can bring freshness. Instead of shallot, use scallions, red-pepper flakes or grated garlic for sharp heat. Instead of mustard, you could use horseradish, chopped pickles or sauerkraut for briny acidity.

1 medium Savoy cabbage (2 to 2 1/2 pounds), cut through the root into 1-inch-thick wedges
1/4 cup extra-virgin olive oil, plus more for tossing the cabbage
Kosher salt and black pepper
8 ounces to 1 pound smoked kielbasa, diagonally sliced 1/4-inch-thick
1/4 cup red wine vinegar
1/4 cup finely chopped fresh dill
1 shallot, finely chopped
4 teaspoons Dijon mustard

Steps:

  • Heat the oven to 450 degrees. Add the cabbage to a rimmed baking sheet and toss with olive oil, salt and pepper to coat. Arrange in an even layer, then scatter the kielbasa on top. Roast without flipping until cabbage is tender and charred in spots and the kielbasa is dark golden, 25 to 30 minutes.
  • Meanwhile, in a medium bowl, stir together 1/4 cup olive oil with the vinegar, dill, shallot, mustard, 2 teaspoons salt and a few grinds of pepper. Add the beans and stir to combine.

The house always smells awesome while this very tasty, filling meal is cooking. It makes kielbasa worth stocking up on when it goes on sale and uses basic/cheap ingredients overall. Vary the vegetables depending on what you have on hand. For example add/replace broccoli with a can of corn and/or peas, etc. If you like a little heat, sprinkle a little hot sauce on top after it's cooked. This should make about 4 servings, but it almost always turns out to be split into 2 large servings between the me and the boyfriend. We like to crisp up/brown the kielbasa slightly before adding the vegetables.

This is such a great recipe to use... perfect for weeknights since it comes precooked and in our house there are never any leftovers. Easily adaptable to use the spices you like or add-in's like mushrooms, bell peppers, etc. Enjoy!

16 ounces kielbasa, sliced (your favorite brand and flavor, comes precooked)
1 medium onion, diced
4 garlic cloves, minced
15 ounces diced tomatoes
4 ounces tomato paste
14 1/2 ounces beef broth
2 tablespoons dried basil
1 teaspoon marjoram
1 teaspoon thyme
1 tablespoon oregano
1/4 teaspoon red pepper flakes
salt and pepper
1/2 lb cooked angel hair pasta (or any pasta you like)

Steps:

  • Slice kielbasa into bite sized pieces and saute over medium high heat in a dutch oven or large pot. Stir occasionally until browned on both sides and slightly caramelized. Remove from pot, cover, keep warm.
  • Using the juices from the kielbasa, sauté onions until soft (add a little oil if needed) and just as onions become soft, add garlic and sauté 1 minute.
  • Add diced tomatoes, tomato paste, and beef broth. Stir until combined.
  • Add spices and return kielbasa to pot. Bring to a slight boil then simmer over low heat for 30-60 minutes.
  • Prepare the pasta according to package directions about 10-15 minutes before meat sauce is ready. When ready to serve, combine pasta and meat sauce and serve with garlic bread. If you prefer, you can serve the noodles plain with the meat sauce on top of it.
