This recipe has been in my family for over 75 years. It's a wonderful Lebanese dish that everyone will love. Even if you have never tried it before, I'm sure you will enjoy!

1 cup cracked wheat
1 pound ground beef
1 small onion, chopped
1 tablespoon lemon juice
2 teaspoons ground cinnamon
salt and ground black pepper to taste
1 tablespoon butter, cut into small pieces
½ cup pine nuts

Steps:

  • Soak wheat in a bowl of warm water until water is slightly absorbed, about 25 minutes. Drain and squeeze out excess moisture.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x14-inch baking dish.
  • Mix soaked wheat, ground beef, onion, lemon juice, cinnamon, salt, and black pepper together in a bowl. Spread mixture in the prepared baking dish; top with butter and pine nuts.
  • Bake in the preheated oven until ground beef is no longer pink, about 25 minutes. Turn on oven's broiler; broil until top is browned, 5 minutes.

Can use beef, turkey, lamb, or a combination of all. Quinoa is used to replace ground wheat.

3 pound(s) ground beef
3 tablespoon(s) olive oil
3 medium sweet onions
1 teaspoon(s) pepper
1 1/2 teaspoon(s) salt
1 cup(s) pine nuts, toasted
1 cup(s) quinoa
1 teaspoon(s) cumin
1/2 teaspoon(s) cinnamon

Steps:

  • Prepare the red quinoa; rinse well in metal strainer then dry and toast in a dry skillet. Follow package directions. Cook in chicken broth to add flavor.
  • Saute 1/3 of the ground meat with 1/3 of the onions. Use olive oil to saute. Season with salt and pepper and 1/3 of cumin and add the cinnamon. Add 1/2 of pine nuts and set aside. Ensure all the juice is absorbed and remove fat. Set aside.
  • Mix quinoa with the remaining ingredients by hand. Oil a 12 x 8 x 2 inch baking dish. Spread 1/2 of the mixture in the bottom of pan. Press with hands. Add the cooked set aside mixture spread. Add the remaining mixture to the top of the dish and press with hands. Add the remaining pine nuts to the top.
  • Use a knife to cut diamond shapes on top.
  • Cook at 400 degrees for 45 minutes. Broil in the end to crisp the top.
