You can cook these under the broiler. For variation, try marinating shrimp, (which will take 2-4 minutes to grill or broil in all!) Serve with fresh salad, steamed veggies, baked potato or any of your favorite sides.

4 chicken breasts, boneless skinless, cut into bite size pieces
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon vegetable oil
1 lime, juiced
1 teaspoon garlic, minded

Steps:

  • In a small bowl combine soy sauce, honey, vegetable oil, lime juice, and garlic.
  • Place cut up chicken in a 1 gallon zip lock bag.
  • Pour marinate into the bag with chicken.
  • Place in the refrigerator at least 30 minutes.
  • Soak bamboo skewers in water for 5 minutes or longer.
  • Grill for 6 to 8 minutes on each side, until juices run clear.

This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce, and lime juice. If you have time, try marinating overnight for the fullest flavor.

3 tablespoons soy sauce
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon lime juice
1 teaspoon chopped garlic
4 skinless, boneless chicken breast halves

Steps:

  • In a shallow container, blend soy sauce, honey, vegetable oil, lime juice, and garlic. Place chicken breast halves into the mixture, and turn to coat. Cover, and marinate in the refrigerator at least 30 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil the grill grate. Discard marinade, and grill chicken 6 to 8 minutes on each side, until juices run clear.

1 cup mayonnaise
½ cup lime juice
3 tablespoons Dijon mustard
1 teaspoon white sugar
2 dashes hot pepper sauce (such as Tabasco®), or to taste

1 lemon, juiced
2 tablespoons seafood seasoning (such as Old Bay®)
12 dashes hot pepper sauce (such as Tabasco®), or to taste

½ teaspoon ground black pepper
3 pounds raw shrimp, or to taste

Steps:

  • Cover bowl with plastic wrap and refrigerate mustard sauce for at least 2 hours.

This backyard grilling staple is nothing short of delicious. But the pre-made kebabs from the grocery store leave us underwhelmed--with tough pieces of meat and chunks of vegetables that always seem to end up either burnt or undercooked. For our beef, we chose tenderloin, which chars beautifully and stays tender during cooking. The vegetables are cut small enough to cook through without burning or falling apart and the tangy marinade brings everything together.

Nonstick cooking spray
1/2 cup red wine vinegar
4 scallions, finely chopped
2 tablespoons Dijon
2 large cloves garlic, finely grated
2 teaspoons granulated sugar
2 teaspoons Italian seasoning
1/2 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper
1/2 cup olive oil
1 pound beef tenderloin, cut into 1- to 1 1/2-inch pieces (about 20 pieces)
1 medium red bell pepper, cut into 1-inch pieces (about 16 pieces)
1 medium yellow bell pepper, cut into 1-inch pieces (about 16 pieces)
2 medium red onions, root left intact, cut into 16 wedges
1 large zucchini, cut into 1/2-inch thick rounds (about 16 pieces)

Steps:

  • Soak the skewers in water for at least 15 minutes and up to overnight. Pat them dry and spray lightly with nonstick cooking spray.
  • Whisk the vinegar, scallions, Dijon, garlic, sugar, Italian seasoning, red pepper flakes, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl or large liquid measuring cup. Whisking constantly, slowly drizzle in the olive oil until emulsified.
  • Put the beef pieces, bell peppers, onions and zucchini in a large resealable plastic bag. Reserve 1/4 cup marinade and pour the rest into the bag and seal. Toss the bag so the meat and vegetables are well coated. Marinate in the refrigerator for 2 hours and up to overnight.
  • Prepare a grill for medium-high heat.
  • Thread the meat and vegetables onto a skewer in the following order: beef, zucchini, red pepper, yellow pepper and onion. Repeat the threading three more times, ending with a piece of beef (there should be 5 pieces of beef and 4 pieces of each vegetable on the skewer). Repeat with the remaining skewers and ingredients.
  • Sprinkle the kebabs with 1/2 teaspoon salt and a few grinds of pepper. Grill at an angle, uncovered, until deep char marks form and the vegetables start to soften, 5 to 6 minutes. Flip the skewers and continue cooking until the beef has reached an internal temperature of 125 degrees F when measured with an instant-read thermometer, about 5 minutes.
  • Remove from the grill and brush the kebabs with the reserved 1/4 cup marinade. Let rest for 5 minutes before serving.

1 lb haddock, cod or turbot fillets, cubed
2 small zucchini, sliced
2 medium sweet onion, quartered
12 cherry tomatoes
1/2 tsp fresh basil leaves
2 Tbsp dry red wine
1/4 c barbecue sauce (link in comment below)
2 Tbsp olive oil

Steps:

  • 1. place zucchini and onion in microwave safe glass bowl with 1 teaspoon water. Nuke at full power for 2 minutes, then drain liquid from bowl
  • 2. Tear basil leaves into wine, oil and barbecue sauce and set aside
  • 3. Thread vegetables and fish on skewers until all ingredients have been used Note: If you use bamboo skewers, soak in water for 30 minutes before using Brush with barbecue sauce Place on cookie sheet or broiler pan which is covered with parchment paper
  • 4. Broil approximately 6" from heat for approximately 5 minutes per side until fish is cooked through
  • 5. Good sesrved with Jamaican me crazy rice and a crisp green salad. Um, um, good.
