Steps:

  • Dip the rim of a martini glass into the caramel sauce; then press the glass into a saucer of graham cracker crumbs to coat.
  • In a shaker filled with ice, combine the vodka, rum, lime juice, and cream of coconut.
  • Shake to blend and chill; strain into the rimmed glasses.

1 tablespoon crushed toasted coconut flakes
1 key lime wedge
ice, for shaking
2 oz dark rum
3 oz vanilla vodka
½ cup coconut cream
2 oz pineapple juice
1 oz key lime juice
1 oz simple syrup
freshly grated nutmeg, for garnish

Steps:

  • In a small, shallow dish wide enough to fit the rim of a martini glass, mix the crushed graham crackers with the toasted coconut flakes. Wet the rim of 2 martini glasses with the Key lime wedge. Dip the rims of the glasses in the graham cracker mixture.
  • Fill a cocktail shaker halfway with ice, then add the rum, vodka, coconut cream, pineapple juice, Key lime juice, and simple syrup. Shake well, then strain the cocktail evenly between the prepared glasses. Garnish with freshly grated nutmeg

5 ounces Lime-Mint Simple Syrup, recipe follows
1/4 cup crushed graham crackers
3 scoops lime sorbet or sherbet
24 ounces seltzer
3/4 cup fresh whipped cream
Zest of 1 lime
1 cup sugar
Zest and juice of 1 lime
10 large fresh mint leaves

Steps:

  • Put a splash of the Lime-Mint Simple Syrup in one saucer and the crushed graham crackers in a second saucer. Dip each highball glass first into the syrup and then into the graham crackers. Add a scoop of the lime sorbet to each glass.
  • Add the remaining Lime-Mint Simple Syrup to a pitcher with the seltzer. Slowly fill each glass with the seltzer mixture to within 1 inch from the top. Top each with 1/4 cup of the whipped cream and some lime zest. Serve with a straw.
  • Combine the sugar and 1 cup water in a small pot and cook over medium heat until the sugar is dissolved, a few minutes. Stir in the lime zest and juice and remove from the heat. Add the mint leaves and let steep for 10 minutes.
  • Strain to remove the mint leaves and refrigerate until ready to use. Keep any remaining syrup covered in the refrigerator for up to 2 weeks.

2 lime wedges
6 tablespoons (3 ounces) vanilla flavored vodka
1/4 cup (2 ounces) key lime liqueur (recommended: KeKe Beach Key Lime Liqueur)
2 tablespoons pineapple juice
2 tablespoons heavy cream
Ice cubes

Steps:

  • Pour the graham cracker crumbs in a shallow dish. Rub a lime wedge around the edge of a martini glass and roll the edge in the graham cracker crumbs. Chill the glass for 30 minutes or until ready to serve.
