1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup packed sweetened coconut
3/4 cup unsalted butter, room temperature
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
1/2 cup coconut milk
1/4 cup sour cream
5 ounces good quality white chocolate, chopped into small chunks
1/2 cup unsalted butter, room temperature
3 1/2 cups powdered sugar
pinch salt
1/2 teaspoon pure vanilla extract
1 tablespoon key lime juice
1/4 cup sour cream

Steps:

  • Preheat oven to 350 degrees. Line muffin tins with paper liners.
  • Pulse coconut in a food processor until finely ground.
  • Mix together coconut milk and sour cream, set aside.
  • Whisk together flour, baking powder, ground coconut and salt.
  • Cream butter and sugar until pale and fluffy.
  • Add eggs, one at a time, mixing after each one. Add extracts.
  • With mixer on low, add flour in three batches, alternating with two additions of coconut milk and sour cream. Beat after each addition until combined.
  • Divide batter evenly among lined cups, filling each about 3/4 full.
  • Bake for about 20 minutes, or until a toothpick comes out clean.
  • Allow to cool completely on wire racks before frosting.
  • Frost with Key Lime White Chocolate Frosting and garnish with toasted coconut.
  • Melt the white chocolate by microwaving in a microwave safe bowl on medium power for 90 seconds. Stir, then microwave again, in 30 second intervals, if needed until it is melted and smooth. Set aside.
  • Beat butter until light and fluffy.
  • With the mixer on low, gradually add the powdered sugar until well combined.
  • Add the salt, vanilla, key lime juice and sour cream and mix until very smooth.
  • Add the melted white chocolate and mix just until incorporated.

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.

  • For the cupcakes: Whisk 1 1/3 cups flour, 1 teaspoon baking powder and 1/2 teaspoon salt. In a separate bowl, beat 1 stick softened butter and 1 cup granulated sugar with a mixer on medium-high speed until fluffy, 4 minutes. Beat in 2 eggs, one at a time, then 1/2 teaspoon coconut extract. Beat in the flour mixture on low speed in three batches, alternating with 1/2 cup unsweetened coconut milk. 4 tablespoons unsalted butter, cut into pieces
1 teaspoon grated Key lime zest (from about 2 Key limes)
Pinch of salt
12 chocolate wafer cookies
12 tablespoons unsalted butter, at room temperature
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 teaspoon grated Key lime zest
2 tablespoons fresh Key lime juice (from about 4 Key limes)
1/3 cup buttermilk
1 stick unsalted butter, at room temperature
3 1/4 cups confectioners' sugar
1/4 cup sour cream
1 tablespoon fresh Key lime juice

Steps:

  • Make the lime curd: Combine the granulated sugar, egg and egg yolk, lime juice and cornstarch in a small saucepan. Cook over medium-low heat, whisking, until thick enough to coat a spoon, 8 to 10 minutes. Remove from the heat and whisk in the butter, a little at a time, until smooth. Strain through a fine-mesh sieve into a bowl, then stir in the lime zest and salt. Set in a larger bowl of ice and stir until the curd is completely cool. Press plastic wrap directly onto the surface; refrigerate until ready to use.
  • Make the cupcakes: Preheat the oven to 350 degrees F and line a muffin pan with 12 cupcake liners. Pulse the wafer cookies in a food processor until finely ground. Melt 2 tablespoons butter; add to the processor and pulse until the mixture comes together. Press about 1 tablespoon crumbs into each muffin cup.
  • Sift the flour, baking powder, baking soda and salt into a medium bowl; set aside. Combine the remaining 10 tablespoons butter and the granulated sugar in a large bowl and beat with a mixer on medium-high speed until fluffy, 5 minutes.   • Make the frosting: Beat the butter in a large bowl with a mixer on medium-high speed until fluffy, 5 minutes. Reduce the speed to low and beat in the confectioners' sugar. Increase the speed to medium high; add the sour cream, lime juice and salt and beat until fluffy, 2 more minutes.
  • Place the lime curd in a pastry bag fitted with a 1/4-inch tip. Insert the tip into the center of each cupcake and squeeze to fill. Frost the cupcakes, then pipe more lime curd on top. Top with lime slices and zest.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon fine salt
1 stick (4 ounces) butter, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
2 egg yolks
1/2 cup sour cream
1/2 orange, zested (about 1 teaspoon)
1 1/2 tablespoons orange juice
Assorted toppings such as blueberries, candy-coated chocolate eggs, baby jelly beans, rainbow cereal puffs, licorice string and chocolate-covered graham crackers

Steps:

  • Preheat the oven to 350 degrees F. Line one 12-cup or two 6-cup muffin tins with cupcake liners. For the frosting: Put the chocolate chips and shortening in a medium microwavable bowl. Microwave on high, stirring halfway between cooking time, until the chocolate is melted, 40 to 50 seconds. Stir until smooth. Steps:

  • Preheat oven to 350°F.
  • Line a regular sized muffin tin with cupcake papers.
  • Sift flour, baking powder and salt together in a bowl.
  • In a measuring cup combine egg whites, coconut milk and extracts.
  • Cream together sugar and butter with an electric mixer on medium speed.

2 tablespoons sweetened flaked coconut

  • Add melted white chocolate and mix just until incorporated.
