Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Add ground beef to a skillet and season with salt and pepper. Cook and stir beef over medium-high heat until browned and crumbled, about 10 minutes. Remove to a strainer and set aside. Pour oil into the same skillet and heat over medium heat. Add onion and cook until soft and translucent, 4 to 5 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Return beef to the skillet. Pour in marinara sauce, mix to combine, and turn off the heat.
- Mix ricotta cheese, Parmesan cheese, 1/2 cup mozzarella cheese, and egg together in a bowl. Place the meat mixture in an 8x8-inch oven-safe casserole dish. Spread the cheese mixture over the meat and sprinkle with remaining 1 cup mozzarella cheese.
- Bake until casserole is golden brown and cheese is melted, 20 to 25 minutes. Let rest 10 minutes before serving

- Preheat the oven to 350 degrees F (175 degrees C).
- Use a vegetable peeler to create long, thin slices of zucchini, avoiding the seedy center. Lay slices on paper towels and sprinkle lightly with salt. Let sit at least 15 minutes.
- Place ground beef in a skillet over medium heat; add olive oil, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Add tomato sauce, vinegar, 1 teaspoon parsley, garlic paste, basil paste, onion powder, and red pepper flakes. Cover skillet, reduce heat, and simmer sauce 15 minutes.
- Mix ricotta cheese, 1 tablespoon parsley, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl.
- Layer 1/3 of the sauce into a 9x13-inch glass baking dish. Add 1/2 the sliced zucchini and 1/2 the ricotta cheese mixture. Repeat layering another 1/3 of the sauce, remaining zucchini, remaining ricotta mixture, and remaining sauce. Top with mozzarella cheese. Coat a sheet of aluminum foil with cooking spray and cover lasagna with it, oiled-side down.
- Bake in the preheated oven for 45 minutes. Remove aluminum foil and continue baking until bubbly and browned, 5 to 10 minutes more.

Steps:
- Place 2 pieces of spaghetti squash on a microwave-safe place with cut sides facing down. Microwave on high until tender, about 15 minutes. Repeat with remaining 2 pieces of spaghetti squash. Scoop squash out of shells into a large bowl and reserve shells.
- Transfer 1/2 the cooked squash to a food processor and finely chop. Return squash to the bowl and set aside.
- Preheat the oven to 500 degrees F (260 degrees C).
- Place kale in the food processor and chop finely. Transfer to a bowl and set aside.
- Puree 1/2 the tomatoes in the food processor. Transfer to a bowl and set aside.
- Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes. Add basil, oregano, salt, red pepper flakes, and black pepper. Let simmer for 5 minutes.
- Add spaghetti squash, kale, tomatoes, tomato puree, 1/2 of the mozzarella cheese, 1/2 of the cottage cheese, Parmesan cheese, and cream cheese to the skillet with the ground beef. Reduce heat to low and simmer until cheeses are melted, about 5 minutes. Remove lasagna sauce from heat.
- Spread 2 tablespoons of cottage cheese into each spaghetti squash shell. Scoop lasagna sauce into the shells up to the top. Freeze or refrigerate leftover sauce. Top filled shells with remaining mozzarella cheese.
- Place filled shells on the middle rack of the preheated oven and bake for 10 minutes. Turn the oven to broil and cook lasagnas until cheese is browned, about 5 minutes more.

- Heat the olive oil in a large pan over medium heat. Add the carrot and onion, and cook until the vegetables have softened slightly, 8-10 minutes.
- Add the beef and season with the oregano, red pepper flakes, and pepper. Use a wooden spoon to break the beef into smaller pieces, and cook until browned, about 10 minutes.
- Add the garlic and cook until fragrant, 2-3 minutes.
- Deglaze the pan with red wine, scraping up any browned bits from the bottom of pan.
- Once the wine has reduced by half, stir in the crushed tomatoes. Cook until sauce has thickened, stirring frequently, about 10 minutes.

- Preheat the oven to 400F.
- Heat a large skillet over medium heat. Add the beef and sprinkle with 3/4 tsp of the salt and the pepper. Cook until no longer pink, about 10 minutes, breaking up any clumps with the back of a wooden spoon. Add the garlic and red pepper flakes and cook another minute.
- Squeeze the spinach to remove the excess moisture. In a large bowl, combine the ricotta, spinach, and parmesan. Add the cooked beef and stir to combine.

- Slice the zucchini lengthwise into 1/8-inch thick strips. Place in a bowl and salt generously, tossing once or twice to coat well. Lay strips on paper towels on your work surface. Set aside 1 hour.
- Meanwhile, spray a large saucepan with nonstick spray and set over medium heat. Add the onion; cook, stirring often, until softened, about 2 minutes. Add garlic; cook 20 seconds.
- Add the mushrooms; cook, stirring often, until they give off their liquid and it reduces to a glaze, about 7 minutes.

- Preheat oven to 350 degrees F and spray a 9x13 inch baking dish with nonstick spray.
- Use a mandolin to cut the zucchini into strips, about 1 cm thick. Add the strips to a colander and toss with 1 teaspoon of salt. Let drain for 10 minutes. Layer the zucchini strips between layered sheets of paper towels on a baking sheet. Let dry while you make the filling.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add onions, garlic and Italian seasoning and cook until translucent, about 7-10 minutes.
- Add ground beef and and cook until browned, breaking up with a wooden spoon. Drain any fat and season with salt and pepper. Stir in 2 cups of the marinara sauce and remove from heat.
- Add cottage cheese, 2 cups mozzarella, eggs, garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon pepper to a bowl and stir to combine.
