4 medium boneless, skinless chicken breasts
1 large egg
2 tbsp heavy cream
2/3 cup grated parmesan cheese
1/3 cup Almond Flour
1/2 tsp garlic powder
1/2 tsp Onion powder
1/2 tsp Red Pepper Flakes
1/2 tsp Dried Oregano
1/2 tsp Pink Himalayan Salt
3/4 cup marinara sauce
4 slices mozzarella cheese (OR 2 oz shredded cheese)

Steps:

  • Preheat the oven to 400 F. Line a baking pan or rack with parchment paper.
  • In a large bowl, whisk the egg and heavy cream together.
  • In another bowl, mix together the parmesan cheese, almond flour, and seasoning.
  • Working with one chicken breast at a time, dip it in the egg mixture, flip it to cover both sides with the egg mixture, then transfer it to the parmesan mixture.
  • Cover the chicken completely with the parmesan mixture, getting it in the folds.
  • Transfer the coated breast onto the baking pan or rack. Repeat with the remaining 3 chicken breasts.
  • Bake for 20 minutes, then take out of the oven.
  • Spread 3 tbsp of marinara on each piece, and add the cheese on top.
  • Bake for another 10-15 minutes until the cheese has melted and is a bit golden.
  • Enjoy on its own or with a side of steamed vegetables.

Converting a traditional recipe to a Keto-friendly recipe takes a few adjustments and this recipe is a great example of how to do it. Crushed pork rinds are an alternative to bread crumbs for coating chicken. Brandy opted to bake the chicken breasts until they were crisp and golden brown, instead of frying, so this is a very easy chicken parmigiana recipe. There is not a lot of seasoning on the chicken but the cheese and sauce add flavor. Keeping carbs in mind, we opted for a lower sugar spaghetti sauce and served everything over zoodles. Another Keto-friendly option is sliced and steamed zucchini or cauliflower rice.

6 - chicken breasts, boneless and skinless
1 bag(s) pork rinds, original
1 cup(s) Parmesan cheese
1 jar(s) spaghetti sauce, 24 oz
2 - eggs
1 cup(s) mozzarella cheese

Steps:

  • Crush pork rinds into crumbs. Add Parmesan and pour into a wide bowl.
  • Crack eggs into a bowl and whisk until blended.
  • Dip chicken breasts into eggs.
  • Then into the crumb mixture.
  • Lay onto a parchment paper lined baking sheet and continue until all chicken breasts are coated in the "breading".
  • Bake at 350 degrees for 1 hour or until chicken is no longer pink inside.
  • Spoon a little sauce onto the top of chicken breasts. Sprinkle mozzarella cheese over the top of sauce.
  • Put back into oven to melt the cheese about 5 minutes.

1 (8 ounce) skinless, boneless chicken breast
1 egg
1 tablespoon heavy whipping cream
1 ½ ounces pork rinds, crushed
1 ounce grated Parmesan cheese
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon red pepper flakes
½ teaspoon ground black pepper
½ teaspoon Italian seasoning
½ cup jarred tomato sauce (such as Rao's®)
¼ cup shredded mozzarella cheese
1 tablespoon ghee (clarified butter)

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Slice chicken breast through the middle horizontally from one side to within 1/2 inch of the other side. Open the two sides and spread them out like an open book. Pound chicken flat until about 1/2-inch thick.
  • Beat egg and cream together in a bowl.
  • Combine crushed pork rinds, Parmesan cheese, salt, garlic powder, red pepper flakes, ground black pepper, and Italian seasoning in bowl; transfer breading to a plate.
  • Dip chicken into egg mixture; coat completely. Press chicken into breading; thickly coat both sides.
  • Heat a skillet over medium-high heat; add ghee. Place chicken in the pan; cook until no longer pink in the center and the juices run clear, about 3 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Be careful to keep breading in place.
  • Transfer chicken to a baking sheet. Cover with tomato sauce; top with mozzarella cheese.
  • Broil until cheese is bubbling and barely browned, about 2 minutes.

4 -6 boneless skinless chicken breasts
1 (24 ounce) jar spaghetti sauce, any flavor (I love marinara or plain old traditional!)
1 1/2 cups shredded mozzarella cheese (or use fresh if you prefer)
1 teaspoon garlic powder
1 teaspoon italian seasoning
1 teaspoon onion powder
2 tablespoons olive oil, . (or whatever you have on hand(canola always works well)

Steps:

  • Brush thawed chicken breasts with olive oil. *Note: use tenderloins or half the chicken breast if they are too large.
  • Combine all seasonings, and sprinkle chicken breasts on both sides.
  • Brown chicken breasts over the stove, turning once. Cook approximately 10 minutes on med-hi heat on each side. For thinner breasts, reduce time by 5 minutes.
  • Add spaghetti sauce to the pan, covering the chicken.
  • Let sauce simmer on med-low heat for 15-20 minutes or until chicken is thoroughly cooked, if not already.
  • Top chicken pieces with mozzarella cheese and cover. Cook for 5-8 minutes more until cheese is melted.
  • Serve with pasta or caesar salad!
