1.5 cups cracker crumbs
6 units eggs
8 ounces pimentos
2 cups cheddar cheese
1.5 cups milk

Steps:

  • Butter bottom and sides of casserole dish. Divide all ingredients in half.
  • Layer first cracker crumbs, eggs, pimentos, cheese, repeat. Top with milk until it rises to the top of ingredients, making sure all is moistened. Use more milk if necessary.
  • Bake, uncovered in 350 degree oven until cheese is melted and top is browned, about 30 to 40 minutes.

8 Tbsp. butter
6 Tbsp. all purpose flour
3 cups half & half
1/2 tsp. salt
1/4 tsp. black pepper
1-1/2 cups crumbled soda crackers
6 hard boiled eggs
3 cups grated sharp Cheddar cheese
1 cup chopped pimentos, drained

Steps:

  • Melt 6 Tbsp. butter, add flour and whisk in half & half, salt and pepper and cook until thickened. Spoon 1/2 cup sauce into a greased 1-1/2 quart casserole. Sprinkle a few cracker crumbs over sauce. Arrange layers of sliced eggs, cheese and pimentos repeating until all ingredients have been layered ending with crackers and dot with remaining butter. Bake about 30 minutes at 350 degrees until golden. Serve hot.
